White Chocolate Cranberry-Pistachio Fudge

I love playing hostess and entertaining. In a perfect world, Mr. Prevention would clean the whole house and I would take on all meal planning, grocery shopping, meal preparation, and kitchen clean-up. In a perfect world…

Luckily for Mr. Prevention we travel for the holidays…we leave tonight for Illinois, in fact. Lily, too…FAMILY ROAD TRIP!! We will travel to both Chicago and central Illinois to celebrate Thanksgiving with both my family and my in-laws. In order to take a piece of hospitality with me, I made those decadent buckeyes and one more treat: White Chocolate Cranberry-Pistachio Fudge. Green and red, I realized after making the fudge. Blonde moment.

If the fudge goes over well, it will likely be repeated for the Christmas holiday…it was so easy, and it is so good. And talk about show-stopping, it certainly has that wow-factor. And with 15 minutes of minimal effort, you can’t really beat it.

White Chocolate Cranberry-Pistachio Fudge from Elly Says Opa

16 oz. white chocolate, chopped (chips will work, too)
1 can (14 oz.) sweetened condensed milk
1 tsp vanilla
2/3 cup chopped dried cranberries, divided
1/2 cup dry roasted, unsalted pistachio pieces, divided

Directions:

Line an 8″ square baking dish with parchment or wax paper.

Combine the white chocolate and sweetened condensed milk in a double boiler or a glass/stainless bowl over some simmering water.  Heat until the mixture melts together, whisking occasionally.  Stir in the vanilla extract and remove from the heat.

Add all but about 2 Tbsp. each of the cranberries and pistachios to the white chocolate mixture, stirring to combine. Spread the mixture into the baking dish in an even layer. Top with the remaining pistachios and cranberries, pressing them in slightly with a spatula if necessary. Allow fudge to set (I do so in the fridge) and then cut into 1.5″ squares. Yield: 25 pieces

P.S. There are 162 calories in a 1″ diameter buckeye! Eek!!! :( Worth it!! :-D

I have only had 4 buckeyes since Saturday — talk about self-control! ;)

    These are gorgeous!! I love pistachios too, so that makes me love them even more :)
    I would much rather be the host, isn’t that crazy? Speaking of, after Thanksgiving we need to get together again. Maybe we could take day trip to Easton and do some shopping, gossiping, and coffee drinking. Then at the end of the day some beer drinking. Sound fun?!

    Being hosted! I like planning stuff but not the cooking or cleaning. SG is wonderful – we will eat out ;) and I’m planning to get a maid before Christmas when my family comes.

    We can grill at my place – make sandwiches :). Only have the stovetop to work with.

    This is like white chocolate bark… but better :).

    Do you think fat free sweetened condensed milk would yield an inferior fudge texture? Clearly, fudge isn’t a health food, but I try to lighten most things I make!

    I would love to make this fudge for Christmas – it has the perfect color scheme!

    Beautiful. I love pistachios, and really any nuts paired with something sweet. These definitely make a great portable dish.

    And that last questions is a toughie. I lovee cooking and playing hostess, but then again, it does feel nice to be pampered and a lot less stress.

    Wow! That fudge looks amazing! I will definitely try that out…um, sometime when I need to bring a dessert somewhere! I don’t think I could resist the temptation of having it in my house.

    The fudge looks gorgeous!!! And so festive!
    Since we live in a one bedroom, one bathroom, tiny condo, hosting is not much of an option for our huge family. I do look forward to hosting once we buy a bigger house!

    yum, looks very good and festive! We tend to visit family more than host and I always like to bake something and bring it with us… this time though, I brought 2 boxes of clementines and everyone’s loving them :)
