Potato Salmon Patties

My friend in Florida sent me this recipe to try, and I can see why 🙂 Seeing as she’s a new mom and a healthy eater, I never questioned her recommendation! Thanks, Kate!

In Midwest news, where the heck did spring run off to? I do believe we had frost last night and I about froze my buns off walking to my car after teaching last night. I’m guessing the leggings and springy dress weren’t the right attire, even with a comfy grannie sweater on over top (it worked, trust me).

I digress.

I believe I am willing warm weather this way in the way of dill (and dresses). I associate dill with warm summer months because I grew up eating tomatoes with dill, salt, and pepper. My dad is a dill fanatic and I’ll bet he would love this recipe. If you can get fresh dill for this recipe, you’ll be thankful that you did.

And canned salmon. Canned WILD salmon.

Until this recipe, I was unaware canned (wild) salmon even existed. I lead a sheltered life, I suppose. I found this salmon at Trader Joe’s for $2.99/6 ounces. While that isn’t a steal, it’s a fair price and it’s nice to have healthy, non-perishables in stock.

Potato Salmon Patties adapted from All Recipes

12 oz canned wild salmon, drained and flaked
1/2 cup egg substitute
1/4 cup dry bread crumbs
1/4 cup dry potato flakes (I used instant mashed potatoes)
1/4 medium onion, minced
1 clove garlic, minced
1/4 tsp dried dill weed or 1 tsp fresh dill, chopped
1/4 tsp celery salt
salt and pepper, to taste
2 Tbsp olive oil

Directions:

In a medium bowl, mix salmon, eggs, garlic and herb seasoned dry bread crumbs, dry potato flakes, onion, garlic, dill weed, celery salt, salt, and pepper. Form the mixture into 2 inch balls, and flatten into patties about 1/2 inch thick.

Heat olive oil in a medium skillet over medium heat. In batches, cook patties about 5 minutes on each side, until lightly browned. Yield: 4 servings, 2 patties each.

Nutrition Information (per serving): 275 calories; 11.5 g. fat; 91 mg. cholesterol; 557 mg. sodium; 11 g. carbohydrate; 0.8 g. fiber; 30.3 g. protein

Results: These were VERY easy & another 15-minute meal from start to finish. For those that aren’t fond of “fishy” fish dishes, this would be an excellent choice. I topped each salmon patty with a dollop of light mayonnaise that had been mixed with a bit of dijon mustard and a few capers. Mmmm! Enjoy!

I am all packed up and ready to head to work and then to Chicago! This weekend is Easter (obviously), but Sunday is also my dad’s birthday 🙂 My mom and I are going to make him a German Chocolate Cake — his favorite 🙂

I’m anxious to see my family and my brother who I haven’t seen in quite some time! And my Grannie who just got out of the hospital. Today can’t go fast enough! 😀

    My grandma has made them for me. I think she used oatmeal, salmon and spinach. She sort of eats like a healthy food blogger!

    I love salmon patties and always have TJ’s wild canned salmon in my pantry. I’ve never added mashed potatoes, but it sounds like a great idea!

    I haven’t made salmon patties in ages (Nick hates salmon, what a baffoon). I can’t believe TJs sells canned wild salmon!! Brilliant.

    I didn’t know that Trader Joe’s carried wild canned salmon…. I will definitely stock up on some this weekend. My husband and I love seafood and have had pretty much every kind of patty we could get our hands on. I am definitely going to make this.

    that looks yummy! I have a recipe for salmon patties…with an asian taste twist, just haven’t made it to my blog yet! I did not know wild canned salmon existed either! On my list of things to pick up next time I go to TJ’s! ( it’s getting to be a pretty long list too…I might add!)

    I know…spring….ugh. I can’t take this anymore. It is so depressing. I have gotten to the point where I am convinced winter is just never going to leave! Grrrrrrrr……

    I always try to keep canned salmon on hand for quick meals like that. The potato flake is unique, but sounds delish!

    This looks good, very similar to the Salmon Croquettes my grandmother makes. So, yes, I’ve eaten salmon patties before!

    I hate to say this, but I am not the biggest fish person. Mostly for the fishy fish taste you were referring to.
    I am trying to work on different recipes to try out because it is nice to have another protein option to throw in the mix. I want to give these a try since you said they aren’t too fishy. From the picture, they look excellent!

    I have salmon patties on the menu tonight! I love them! I always make them in to a burger and use less breadcrumsb! I add, egg white, a little olive oil mayo, turmeric, cayenne, green onion, and a few ww bread crumbs…delish!

    I am 69 and I have been eating salmon patties for almost my entire life. I am pretty sure that ALL canned salmon is wild. Just look at the different cans in the supermarket and you will see the word wild there. If you are truly into the salmon patty you should try the “red” salmon. It is more money but is considered the top of the line in the salmon world. I make them mashed with bread crumbs, chopped onion, garlic powder and lemon juice. Personally I love the left over ones the next day because I think they taste best cold or at room temperature. I love your site!!!!

    I just tried these and they are WONDERFUL! I will admit I was nervous flashing back to the bricks my mom called salmon patties, but these are nothing like them! I topped them with some Cilantro and Chive Yogurt dip from TJ’s – I can’t believe how many uses it has. Definitely going to stock up on salmon – thanks!!

    Also, I found wild salmon at Kroger, a southern grocery chain
