Happy Cinco de Mayo!
Mr. Prevention and I are self-proclaimed Mexican restaurant connoisseurs. Personally, I base the quality of a Mexican restaurant on their salsa. Why so many Mexican restaurants serve salsa that is eerily similar to ketchup I will never understand. G-ross.
I have the salsa basics down: tomatoes, peppers, onion, salt, and cilantro. The rest is negotiable. I’ve always used jalapenos…just because. I have no good reason. Maybe because serranos have the reputation of being hot-as-heck? Which they are, don’t get me wrong. But a little goes a long way. I also believe onion is a must. I know some would argue this, but I really do think it makes any salsa better. And tomatoes. I use plum or Roma tomatoes because they tend to have less juicy insides and less seeds. For chunky salsas and pico de gallos, you want a firmer tomato that can dice really well without too much juice.
I honestly thought I made pretty amazing salsa, but it’s been out-done. I made Garden Fresh Pico de Gallo with home-grown tomatoes last summer…it was really good. But I’m now learning that pico de gallo does not need any oil to be full of flavor. This Tomato-Serrano Salsa is right up there with Biz’s Baja Fresh Salsa – yum! And both…contain (little to) no oil, and thus, are lower in calories. Because really, who exercises perfect portion-control when it comes to salsa? Not this kid.
Tomato-Serrano Salsa from Bon Appetit May 2011
1 lb. plum tomatoes, cored, finely chopped (about 2 cups)
2 serrano chiles, seeded, minced
1 medium white onion, minced (about 1 cup)
3 Tbsp. chopped fresh cilantro
3 Tbsp. fresh lime juice
Tortilla chips (for serving)
Combine tomatoes and chiles in a medium bowl. Place minced onion in a strainer; rinse under cold water for 10 seconds. Drain well and add to bowl with tomatoes. Stir in cilantro and lime juice. Season with salt. Serve with tortilla chips. Yield: about 3 cups (12 servings, 1/4 cup each).
Nutrition Information (per 1/4 cup): 14 calories; 0 mg. cholesterol; 60 mg. sodium; 0.1 g. fat; 3.3 g. carbohydrate; 0.7 g. fiber; 0.6 g. protein
Result: Simple, flavorful, and super healthy salsa! This is certainly my go-to recipe for chunky salsa from now on! Enjoy!

I am Chicago-bound again this weekend! A friend’s shower and Mother’s Day! And yes, workouts with Mama Prevention that will probably have me hobbling around some more next week. Have I whined about still being sore from MONDAY’S Crunch Diesel workout? Well, I am. Very much so.
