And if you’ve learned anything from faux frying on this blog, it’s the importance of Panko. Can’t find Panko? Figure it out (Whole Foods…Trader Joe’s…Amazon.com…). I’m telling you, there’s a wonderful, healthy, culinary world to be made with Panko…get on the boat.
I paired this entree with pinto beans and a simple salad with raw beets. Of course, the sky is the limit, but the beans were a great, high-fiber touch.
4 – 5 ounce chicken breasts
4 oz reduced-fat cream cheese, softened
1/2 cup part-skim shredded Cheddar or Colby cheese
1 tsp olive oil
4 jalapenos, chopped (ribs and seeds removed)
1/2 cup bread crumbs
3/4 cup Panko
2 tsp taco seasoning
Preheat oven to 350 F and lightly grease a baking dish with nonstick cooking spray.
Heat oil in a small skillet over medium-high heat. Add jalapenos and cook until softened, about 5 minutes. Mix together cream cheese, shredded cheese, and jalapeno peppers. Use a knife to make a pocket in each chicken breast.
Mix together bread crumbs, Panko and taco seasoning on a plate. Whisk egg in a separate bowl. Dip chicken into egg and then into bread crumbs. Repeat with all chicken breasts and place in baking dish.
Bake for 30 minutes. Serve. Yield: 4 servings.

Result: Delicious! We loved this recipe. Don’t worry about cutting the perfect pocket in your chicken breast, or making a mess…you can’t combine the ingredients and go wrong! If you like things really hot, you could even up the peppers…or leave in the seeds and membrane. If you dare 😉 Enjoy!
It’s been good to get back into a workout and cooking routine, though my jet lag seems to be worsening the longer I’m home. Or maybe it’s just the grind of being back to work? Either way, Monday and Tuesday have been tiring. Last night was the second to last weight management support group and I just adore our group of ladies. They’re so inspiring and warm. I didn’t get home until nearly 8pm, so I opted out of a workout. Today there will definitely be a workout, however…I’m thinking the elliptical.
