Key Lime Pie Fudge

Like I shared yesterday, I also brought in Key Lime Pie Fudge to our work carry-in on Friday. Can I just say I love carry-ins (or “pot lucks”), especially when there’s a fun theme like Margaritaville!

Is there anything more appropriate for such a theme? Can’t think of one.

Themed parties aside, there need not be a “reason” to make this fudge. However, I would recommend making it for a group. It’s hard to stop at just one piece, and seeing as the recipe makes 64 pieces…it could get dangerous. Fast.

Key Lime Pie Fudge adapted from Technicolor Kitchen, as seen on Dozen Flours

Graham Cracker Crust (Note: The crust is optional.)
1/3 cup unsalted butter
1/4 cup sugar
1 1/4 cups graham cracker crumbs

Fudge:
16 oz high quality white chocolate, finely chopped
14 oz can sweetened condensed milk
1 Tbsp lime zest (zest from 4-5 limes)
3 Tbsp freshly squeezed lime juice

Directions:

Line a square 8 x 8-inch baking pan with foil or parchment paper, extending it up and over pan. Butter sides and bottom of the pan, especially the corners. Set aside.

If you’re making the crust, preheat oven to 375. In a medium sized bowl, melt butter in them microwave. Stir in sugar with a fork, braking up any lumps. Add crushed graham crackers and toss to mix well. Spread evenly into the baking pan and bake for 4 to 5 minutes or until edge is lightly browned. Remove from the oven and let cool on a wire rack.

Stir white chocolate and sweetened condensed milk in a large heavy saucepan over low heat just until chocolate is melted and all the lumps are gone. Remove from heat and stir in zest and juice. Spread mixture evenly into the prepared pan.

Cover and chill for two hours or overnight. Lift the fudge from pan using edges of foil. Peel off foil and use a heavy non-serrated knife to cut the fudge into one-inch pieces. (Tip: Keep a damp kitchen towel handy to clean off the knife after each cut. This will keep give your fudge a cleaner appearance). Yield: 64 1-inch pieces of fudge

Nutrition Information (per piece): 82 calories; 3.7 g. fat; 5 mg. cholesterol; 34 mg. sodium; 11 g. carbohydrate; 0.1 g. fiber; 1.1 g. protein

Result: Key lime pie in fudge form…what more do you need to know? 😉 While I didn’t make any healthy modifications to this recipe (fudge is hard to make healthy, people!), the portion is the damage control. Perfect for summer and entertaining…enjoy!

Mr. Prevention and I went to see Tosh.O last night in Columbus. Hilarious. He is so crude, but I laugh hysterically at 95% of everything he says. Since Daniel Tosh has become “popular” so many people have told Mr. Prevention that he looks like him. And he does. Pretty funny.

Question: Have you been told you look like someone “famous”?

    Next year, by the way, you are going to do this biathlon with me ๐Ÿ™‚ I think you would have liked it! Maybe even the tri next year??

    This fudge is definitely something I will have to make for my dad one day, maybe a b-day. He would LOVE IT!

    haha oh that show sounds SO fun! I love comedy shows and I LOVE Tosh.O! Glad you had a good time! I’m not sure about this fudge…key lime isn’t usually my thing but when you say FUDGE…it makes me change my mind! ha

      I am so sorry I didn’t respond – I got the email, I am just terrible about logging in to actually type out an email. I apologize! Unfortuantely, we are running a 5K that night in Mt. Gilead. Wish we could be there, but it sounds fabulous! I did let our social worker know about the event, however. I hope it is a blast and a huge success – I love what you guys do and support you 110%!     Love that you went to see Tosh! I’ve tried to get tickets before, but they have always sold out too soon.

    I’ve never heard a pot luck called “carry-in” before – cute! Happy Monday Nicole! My game face is on – I was at the gym at 6:30 this morning!

    I had to print this off and I will be making it for a group gathering later this month! It will be the perfect dessert for a friend of mine who can only have white chocolate!

    I have never heard of a pot luck called a “carry-in” but I love it!

    Admittedly, when I looked at my in-box and saw ‘Key Lime Fudge’ sitting there, I was a little put off. That looks seriously good though. I’ll pass this along to my daughter, who bakes sugar free items, and see if she’ll make a batch for daddy. ๐Ÿ™‚

    I have got to make this again, this time with the crust – your fudge looks so delicious! Love the zesty “freckles” on top of the white chocolate mixture. Yum!
