Meatless Monday: Peanut Butter Yogurt Fruit Dip

My friend Mary was in town this weekend. Being the sweet friend that she is, she said that as soon as I had started blogging years ago, she knew it would be a great platform for me to grow my voice as a dietitian. I was so flattered! 🙂 She asked how my cookbook is coming along and the answer to that question is…splendidly! I only have 26 recipes to go! And, my publisher will not be expecting the final product until November 1st versus October 1st. Woop!

While that means this stress and insanity may continue another month, it means I can start to focus a bit more on blog recipes to share with YOU! Mr. Prevention has been thoroughly enjoying the remaking of so many of our favorites, while I have been living on a prayer that I can get home, have dinner made, and have the cookbook recipe photographed all before the natural daylight is gone. Seeing as the days are only getting shorter, this has been…challenging. It has also forced me to move my workouts to post-dinner which is even more challenging. I envy all of you late-evening exercisers. Donna is one of these people and I seriously struggle for the energy at that hour of the day. Of course the simple answer would be to move my workouts to the morning, and I may get there…but not yet. 😉

So while talking to Mary yesterday I was saying how the only recipe I have to share contains meat and what ever will I do for a Meatless Monday post? I was inspired while grocery shopping (honeycrisp apples are  here!) and then perusing Pinterest. I whipped up a meatless masterpiece to share.

I tend to over-look the simple things in life. Yogurt + peanut butter — big whoop. It doesn’t get any easier than that. But fortunately, it also doesn’t get any more delicious that this….and I’m not even a peanut butter fanatic like some!

I didn’t think it was possible for a honeycrisp apple to be anything more. But this dip takes my favorite apple up a whole notch.

I am taking this to work today and I’m going to share with the cook and the kitchen supervisor. Unless they disagree, I think this will even be served in the hospital cafeteria this week. One bite and lives will be changed forever.

No, seriously. Don’t roll your eyes til you try!

Peanut Butter Yogurt Fruit Dip adapted from Real Mom Kitchen

1 cup nonfat vanilla Greek yogurt
1/3 cup natural creamy peanut butter

Directions:

Combine the ingredients using a whisk in a small bowl. Serve immediately or refrigerate.

Yield: 5 servings (1/4 cup each)

Nutrition Information (per serving): 133 calories; 8.6 g. fat; 0 mg. cholesterol; 100 mg. sodium; 7.2 g. carbohydrate; 1.0 g. fiber; 8.4 g. protein

Result: My new favorite snack, without a doubt! Served with a small apple, this snack comes in right at 200-210 calories and is very filling. The portion size of dip is generous because, well, you’ll probably have trouble saying no to more! Enjoy!

    Interesting! I’ve never had yogurt + peanut butter before. I love both (and have an apple a day!) so I’ll have to try this.

    I can’t fathom how busy you are trying to rush home before the natural light is gone. I also can’t exercise late (I find way to many excuses not to or am way to tired) so I wake up at ridiculous hours to get it done first. At least your almost done with the book and things will be submitted just in time for holiday craziness ๐Ÿ™‚

    Seriously? It’s as simple as greek yogurt and peanut butter?! You know I love that! Too bad I still can’t eat apples. It’s the saddest thing ever. They are all coming to our produce section now, and look SO GOOD (especially the honey crisp). I guess I’ll just have to eat this with the strawberries ๐Ÿ™‚ HAve you tried PB2 yet? It’s also REALLY good mixed into Greek yogurt!

    I’m curious, how many recipes does a publisher require for a cookbook. You said 26 left and I about fainted because the thought of coming up with even that many made my brain hurt! :-O

    Why have I never thought of that?? Sounds amazeballs! My favorite apple is still the Fuji apple – perfect balance of sweet and tart – glad you had a great weekend with Mary!

    Yum. Apples and peanut butter are easily my favorite snack, but mixing the peanut butter with yogurt seems so much fancier. I’ll have to try this asap.

    I used to have this all the time years ago! When I told other people about they looked at me like I was a little, well, odd. But I’m so glad other people love this pb and yog combination! I sometimes add vanilla and honey just to satisfy my sweet tooth too…

    Oh geez … I definitely won’t knock this because it sounds too fabulous for words! I love how this is a protein-packed version of the typical apple and PB snack, and at the best time of year, too!

    I hear you on the shorter days – blech. Crossing my fingers that the daylight will last for you, and that you won’t have to do after dinner workouts for long! Those are the worst! ๐Ÿ˜›

    My breakfast every morning is a 6oz container of plain fat free Greek yogurt with a tablespoon of sugar free raspberry preserve and 2 tablespoons of PB2 mixed in. It is heavenly and filling and overall just awesome. I’m thinking I might try the same combo in my steel cut oats when the weather gets cold and I need something warm in the morning to get me started. Dipping apple into the yogurt sounds like a great snack idea. My little boys will love it!

    I immediately recognized those wonderful honeycrisp apples you have there! I have been enjoying mine. I think the only way this dip might be better is to add some chocolate to it! Hmmmmmm…..lol

    I’m new to Greek yogurt and have been searching for ways to yum it up. Can you still taste how tart the yogurt is? I’m not much of a fan of it plain, but I know it’s super high in protein!

    So I realize I’m a little bit late to the party, but this is one GOOD recipe! It was so funny because I was looking for a good peanut butter fruit dip recipe for my kids- you know, to stretch the peanut butter because they eat so much of it! I saw a bunch of recipes which called for sour cream, or cream cheese, and I kept thinking couldn’t you do this with yogurt? The peanut butter is already so high in fat! Then I saw your recipe! I didn’t have any vanilla greek yogurt on hand- all I had was plain yogurt. But that didn’t stop me! LOL I whipped up some all natural jiff with some plain yogurt and threw in a dash of vanilla and healthy squeeze of agave and we were off. ๐Ÿ™‚ My daughter is calling this stuff “love dip” because “it tastes like love.” LOL I am forever sold. This really did change my life! Haha
