Whole Wheat Eggnog Pancakes

We got my father-in-law a griddle for Christmas. It’s huge – a 12-pancake-capacity griddle with great reviews on the Bible of online shopping, Amazon. What would life be like without Amazon? The thought of not having Amazon Prime with free 2-day shipping is a thought that can nearly bring tears to my eyes. And just as we discussed over one of our Christmas celebrations, is there anything better than shoe shopping on Zappos? Free shipping both ways…amen.

How you manage four Christmas celebrations with only 3 days off work – not so effortless. Thank goodness the holiday followed a weekend this year. I’m not sure what we would’ve done otherwise. I recognize the luxury in being able to see both Mr. Prevention’s family and my own, even if it makes for a very rushed Christmas.

This morning, we opened gifts and as soon as all the boxes had been opened and thank yous expressed, it was on to running around like mad people to get our belongings strewn across the in-law’s house into the Nissan with some kind of methodology. Lily had “babies” (toys) in every room of the house and we had to determine which gifts we could pack in this trip. The rest would come up with the in-laws later in the week. This wouldn’t be such an issue if Mr. Prevention didn’t spoil me like he did…after we agreed not to exchange gifts and to enjoy our new LED TV in our bedroom (oh the romance, I know). My favorite gift from him? My new AeroGarden – guaranteed to grow $150 worth of basil. Bring it.

If Christmas with the in-laws hadn’t been so rushed this morning, I may have requested pancakes from father-in-law on his new, fancy griddle…since he’s always offering a fancy breakfast and all. Morning gift opening is deserving of a suitable holiday breakfast mixed in and what better fits the bill than Eggnog Pancakes?

These pancakes are filled with holiday cheer by way of nutmeg and eggnog. I halved the eggnog and subbed in fat-free milk and used low-fat eggnog (though the recipe originally called for Silk Eggnog, I couldn’t find any). The abundance of vanilla makes these quite special and deserving of Christmas morning, the use of leftover nog, or christening your new griddle (whether it be your own or not!).

Whole Wheat Eggnog Pancakes adapted from Skinny Taste

2 cups whole wheat pastry flour or white whole wheat flour 1 1/2 tsp baking powder 1/2 tsp salt 1 1/2 tsp cinnamon 2 tsp sugar 1 tsp nutmeg 2 large eggs 1 cup low-fat eggnog 1 cup fat-free www.actiontakerspace.com/listbuilding/?p=online-slots milk 2 tsp vanilla extract

Directions:

In a large bowl, whisk together the flour, baking powder, salt, cinnamon, sugar, and nutmeg; free set aside.

In a medium dealer bowl, whisk together the eggs, eggnog, milk, and vanilla. Add the wet ingredients to the dry ingredients and mix well with a spoon until just combined.

Heat a large non-stick skillet on medium heat or preheat a griddle. Pour ~1/4 cup of pancake batter onto the hot surface. When the bubbles settle join now and the edges begin to set, flip the pancakes. Repeat with the remainder of the batter. Serve immediately.

Yield: 12 pancakes (6 servings – 2 pancakes each)

Nutrition Information (per serving): 232 calories; 3.2 g. fat; 72 mg. cholesterol; 383 us poker sites mg. sodium; 39.3 g. carbohydrate; 4.3 g. fiber; 5.3 g. protein

Result: The holiday spices in these poker sites flapjacks make them perfect for the holidays. Eggnog-hating Mr. Prevention gobbled these up. A perfect way to end Christmas eats with something a bit figure-friendly, while using up all the leftover and on-sale eggnog! So easy to throw together – enjoy!

    Oh my, what would we do without Amazon?! sports betting online I really don’t know. I’m so glad I have a US address too because the Canadian Amazon sucks! I really need a griddle like the one you described. Although maybe not so big. Then again with 3 growing kids no deposit casino maybe a huge one wouldn’t be a bad investment, haha. Your pancakes look so awesome! I haven’t even thought to put eggnog in pancakes! What is wrong with me! ;)

    Wow! YUM!!! These pancakes were delicious! I’m not even a huge eggnog fan and I loved them- definitely a crowd-pleaser. They have such unique flavor and what a fun idea for Christmas morning!
