Preheat the oven to 350 degrees F. Line a muffin tin with liners or spray with nonstick cooking spray; set aside.
In a large bowl, whisk together the flour, cinnamon, baking powder, baking soda, and salt. In a separate bowl, whisk together the coconut oil, egg white, and vanilla. Stir in the Greek yogurt and maple syrup.
Add the wet ingredients to the dry and mix until just combined. Fold in the diced peaches.
Evenly divide the batter between the prepared muffin cups. Bakefor 19-21 minutes, or until just golden. Cool in the pan for 5 minutes before transferring to a wire rack.
