Crock Pot Carnitas

Ingredients
Rub
  • 1 Tbsp dried oregano
  • 2 tsp ground cumin
  • 1 Tbsp olive oil
Carnitas:
  • 2 lbs pork loin, trimmed
  • ½ onion chopped
  • 3 cloves garlic, minced
  • 1 jalapeƱo, seeded and chopped
  • 1 tsp salt
  • 1 lime, juiced
  • 1 orange, juiced
Instructions
  1. Combine rub ingredients in a small bowl; mix well to combine. Rub over entire surface of the pork loin and transfer to the crock pot.
  2. Top the pork with the remaining ingredients, cover with the lid, and cook on high for 4-6 hours or on low for 8-10 hours.
  3. Remove meat from crock pot and shred between two forks. Return to crock pot to keep hot before serving.
Notes
If you'd like to make this a bit more authentic (and less healthy), you can heat a bit of oil in a skillet and fry some of the meat to brown before serving.
