We had the pleasure of trying two new entrees this weekend. Both were very good!

I had moqueca for the first time in St. Louis while visiting my friend Kelly. We entered this quaint Brazilian restaurants and when I saw the coconut and seafood-laden description of moqueca on the menu, I knew I’d picked a winner. This was my second attempt at making homemade moqueca (Brazilian restaurants are a rarity!), and both attempts have yielded fabulous results!

Better yet, I was pleasantly surprised to see that moqueca was relatively low in calories and high in protein. Delicious!

Moqueca de Camarao
Serves 4

Plan ahead, the shrimp needs to marinate for 30 minutes.

Juice of 1 lemon
1 onion, finely chopped
1 clove garlic, minced
1 to 2 tablespoons white vinegar
1/2 teaspoon salt
1 pound fresh shrimp, shelled and deveined
1 teaspoon fresh cilantro, chopped
2 tablespoons tomato paste
Black pepper to taste
1 cup thin coconut milk
1/2 cup thick coconut milk
2 to 3 tablespoons olive oil

Make a marinade with lemon, onion, garlic, vinegar and salt. Marinate the shrimp for 30 minutes. Put mixture into a sauce pan and add cilantro, tomato paste and black pepper to taste. Add thin coconut milk and cook over low heat until the shrimp are cooked. Add the thick coconut milk and oil. Continue cooking for another 5 minutes.

Serve with (brown) rice.

Chili Con Carne
Adapted from Cooking Light, January 2010

8 poblano chilies
3 pounds boneless chuck roast, trimmed and cut into 1/2-inch cubes
1 1/2 tsp salt
1/2 tsp black pepper
3 Tbsp all-purpose flour
2 Tbsp olive oil, divided
3 cups chopped onion
4 garlic cloves, minced
3 cups peeled, seeded, and chopped plum tomatoes (about 10)
1 Tbsp dried oregano
1 Tbsp ground cumin
1 chipotle chile, canned in adobo sauce
3 Tbsp chopped fresh cilantro
6 Tbsp shredded reduced-fat cheddar cheese

Directions:

  1. Preheat broiler.
  2. Place poblanos on a foil-lined baking sheet; broil 8 minutes or until charred, turning after 6 minutes. Place poblanos in a zip-top plastic bag; seal. Let stand 15 minutes. Peel and cut chiles into 1-inch pieces.
  3. Sprinkle beef with salt and pepper; dredge into flour. Heat 1 tablespoon olive oil in a Dutch oven over medium-high heat. Add half of beef to pan; saute for 5 minutes, turning to brown on all sides. Remove from pan. Repeat procedure with remaining oil and beef. Remove all beef and set aside.
  4. Reduce heat to medium. Add onion to pan; cook 12 minutes, stirring occasionally. Add garlic; cook 3 minutes, stirring frequently. Return beef to pan. Stir in tomato, oregano, and cumin; bring to a simmer. Cover and cook 1 hour, stirring occasionally. Stir in poblanos; simmer for 45 minutes or until beef is tender, stirring occasionally. Rinse, seed, and chop chipotle. Stir in chipotle and cilantro. Sprinkle with cheese.

Yield: 10 servings (about 1 cup chili and 2 teaspoons cheese)

Nutrition Information (per serving): 360 calories; 20.9 g. fat (7.6 g. saturated, 9.3 g. monounsaturated, 1.1 g. polyunsaturated); 29.2 g. protein; 13.8 g. carbohydrate; 2.6 g. fiber; 84 mg. cholesterol; 3.6 mg iron; 442 mg. sodium; 83 mg. calcium

This recipe was a meat-lovers delight. While I enjoyed this recipe, I think it would be better with chicken. Just my $0.02! I’m undecided as to whether or not I’ll be making this again, but it was good! I think hubby liked it more than me!

Regarding the beef, however, my husband suggested we go check out a local meat market that sells organic, local meat. Thank you Food, Inc.??? 😉 Look at how lean this beef is…it needed NO trimming!

While we limit our red meat intake for health-related reasons, it’s also not our preference in meat, so take my beef recipes and opinions with a grain of salt!

    I would definitely say fish! I love fish, chicken is okay, and I don’t like steak or most red meat at all.

    By the way…I love those cookies! I need to try them on my husband because he turns his nose up any time I eat chickpeas!

    I eat very, very little meat. I would definitely pick fish.

    My husband is allergic to poultry, so we do eat a lot of red meat. I finally got so sick of eating it all the time that I usually buy chicken for me and make separate meals. That way he gets all the meat he wants and I get all of the chicken for myself!

    I dislike fish and last year I butchered a pork chop recipe. It was so bad that I refuse to eat pork anymore. Bleh.

    I saw the name of your dish before I saw you were at a Brazillian restaurant and (I think because my eye draws to words I have here) and I was like hey that’s Portuguese. Then I saw Brazillian and was like, yeppers that makes sense. Camarao is Portuguese for shrimp. I search for this word on menus here. Glad you enjoyed the dish.

    Seriously you cook way nice meals while I am eating pizza on wheat crust. Tonight is homemade sloppy joes – thank you Martha Stewart. I struggle with your meat question… I am not a huge fan of chicken. I swear my mom made too much chicken when I was a kid. I would probably lean towards beef. Have a good Monday!

    hmmmm If it was ok to eat lots and lots of red meat only… I would say venison! It’s lean and the taste is amazing!!

    Too funny about the chick pea cookies!! I can’t wait to hear what they all said! I’m all about tricking people with healthy things ๐Ÿ™‚ and then telling them and saying “see!!! healthy can be tasty!!” LOL

    I am so jealous of your meat purchase! I tried to find grass fed beef (I really know nothing about meat, but I think that is good?) at my grocery store last week, but they do not carry it. I haven’t even seen “Food Inc.”, but I know enough to be scared of eating “regular” meat now!

    Hmmm – definitely turkey. I love ground turkey….and sliced deli turkey, too. I think I get burnt out on chicken easily!

    I love seafood the most!

    I eat very little red meat – I don’t make it at home, so any time I eat it is out.

    I make a chili that my brother in law loves – it uses regular ground beef. I am trying to find a good vegetarian chili – especially one that uses the crock pot!

    Lovely recipes. I dont eat alot of meat but if I had to pick one group it would be seafood. I could live without anything else. But I love all kinds of shrimp, fish and crab. So good.

    Congrats to the lucky winners! I’ve never had moqueca, but it looks really fantastic — I love coconut milk and shrimp together. Wow, I can’t believe how lean that beef looks (I don’t eat a ton of red meat but I do occasionally eat a bit of it, and I can definitely appreciate the looks of a gorgeous cut of meat!). ๐Ÿ™‚ If I had to choose only 1 type of meat it would be chicken…it’s so versatile!

    For me it would for sure be chicken. Its about all I eat meat wise anyhow. Always has been, Ive just never been a fan of much else.

    No question in my mind it would be fish. I love fish. I can live without all the rest and for the most part I have. Since 1992.

    That shrimp in coconut milk looks so delicious. Crazy.

    I have never heard of moqueca, but it looks great. Looks so balanced and full of flavor. Your answers to the ???’s were very informative. OK, so if I ever write a book, I want you to be my dietitian side kick…….you are so well educated and I love your foodie perspective.
