Blueberry Banana Tofu Muffins adapted from Heather at Get Healthy with Heather
1 package silken tofu (I used regular, firm tofu)
1/4 cup maple syrup
1/8 cup agave nectar
2 tbsp canola oil
2 tsp vanilla
1 large very ripe banana
1 cup whole wheat flour (I used whole wheat pastry flour)
1 cup old fashioned oats
1/4 cup wheat germ
1/4 tsp sea salt
1 tsp baking powder
1 tsp baking soda
1 cup fresh blueberries
1/4 cup + 2 tbsp slivered almonds
Pre-heat your oven to 350 degrees. In your food processor or blender add the tofu, maple syrup, agave, oil, vanilla and banana. Puree until smooth.
In a large bowl combine the flour, oats, wheat germ, sea salt, baking powder, baking soda and 2 tablespoons slivered almonds. Add the tofu mixture and mix until combined (it will be pretty thick). Gently stir in the blueberries.
Line a muffin pan with 12 muffin cups, or coat with olive oil spray. Fill muffin tins to the top. Top each muffin with the remaining slivered almonds. Bake for 20-25 minutes, or until a toothpick comes out clean.

Best Buffalo Chicken Chili by Biz of Biggest Diabetic Loser
1 tablespoon olive oil
2 pounds boneless, skinless chicken breasts
2 large carrots
3 stalks celery
1 large red pepper
5 cloves of garlic
5 tablespoons of chili powder
2 tablespoons ground cumin
1 tablespoon paprika
1/2 cup Frank’s Hot Moore’s Wing Sauce
2 (15 oz) cans tomato sauce
1 (15 oz) diced tomatoes
1 (15 oz) black beans, drained
1 (15 oz) chili beans in sauce (do not drain)
salt and pepper to taste
Put chicken breasts in food processor to grind up if you can find ground chicken breast, you can use that too. I chopped the chicken as I don’t have a food processor. Heat oil and add chicken and cook about 10 minutes on medium heat until no longer pink. Rinse out processor and add carrots, celery, garlic and red pepper and puree. Again, I chopped the carrots, celery, and red pepper as I do not have a food processor. Add to chicken mixture and cook about 5 minutes until veggies start to soften.
Next add the rest of the ingredients, put stove on simmer and cook for 1 hour.

Heading to the library over my lunch hour to catch up with everyone! Sorry I’ve been MIA — duty calls, what can I say? 🙂
Happy hump day! Be well!
Great muffins! I’ll be trying those. I never would have thought about using tofu in muffins.
Love the recipes! I most definitely rather go without my computer! My BB is almost attached to me! Kinda sad. Ideally, I’d be without BOTH for awhile…being constantly connected is sometimes just too much!
I’ve never tried using tofu in a recipe but it sounds interesting. I’m wondering what it does to the texture.
I would definitely go without my cell phone. Although it’s absurd that I can’t fathom not having my computer for a day!
Those muffins look fantastic and I can’t believe the nutritional stats! I have been meaning to try baking with tofu…this is going to have to be the first recipe I try.
Hmmm…my cell phone or my computer. I’m gonna have to say that I could live without my cell phone but definitely not my computer. How would I read all of my favorite blogs?
Ooh, those muffins look so good and moist! I made a Mardi Gras-themed dinner, so I guess that counts, right? 🙂
I like that those muffins use tofu! I don’t utilize tofu in baking nearly enough…as for your question, I’m going to have to say cell phone, although I’d like to say computer because computer mandates sitting!
I celebrated Mardi Gras with pancakes and chocolate. Does that count?
Also, as I don’t have a cell phone, I suppose I would have to say computer.
I would rather live without my cell phone for a day. I’m a computer addict. We didn’t do anything for Mardi Gras. It’s so funny to me that the basis of that holiday is to go hog wild before having to give something up for Lent. Haha.
I would choose my cell phone over my computer! I went to only one Mardi Gras parade this year which is not a lot considering I live a few blocks away from the major parade route in New Orleans!
I flashed my boobs to people on the street, but I didn’t get any beads. Maybe I should’ve gone to New Orleans though…
I don’t think I could survive without my computer. Law school = lots of computer time.
I’d rather go without the cell as that would mean I could avoid any unexpected work for a day.
Isn’t that chili fab? And so is Biz! I think I could give up my cell phone before my computer…but it’s a tough choice!
I’d much rather go a day without my cell phone! I can’t stand talking on the phone. I couldn’t live without my computer! What ever would I do all day?
i’m going to make those muffins! can’t really beat those nut stats!
Awesome i’m so glad you liked the muffins! I still have some in the freezer I keep eyeing.
I’d probably go without my computer because my phone kinda has both! Writing this on it now hehe.
I’d rather go a day without my computer. My phone is too important to me.
Actually I think a day without my cell phone, I’m not much of a phone person!
Muffins looks so yummy..
Cell phone I could live without, computer not so much!!! I would choose my computer over any other electronic device in my life.
I would have to say my computer because my cell phone can do almost everything my computer can lol.
That chili looks amazing!
Thank you so much for visiting my blog! I’m really glad it led me to yours- I love recipe reviews!! Both of the ones you posted look great- especially the buffalo chicken chili. I’m a sucker for hot sauce! Can’t wait to see more!
those muffins look amazing! tofu in them?! I would havenever thought or guessed that there was tofu as a main ingredient! it looks soooo good, esp with the slivered almonds atop there 🙂 thank you for the recipe! I am printing ittt
That chili sounds awesome!
I would rather go without my computer, my blackberry is like a mini computer anyhow, so should I need the internet I have it there. Plus, if I dont have my phone on me, I feel like Im missing an arm.
Both. This Christmas Holiday while visiting my in-law they had lost power due to Snow storm… so no power therefore no internet, no tv… and to top is all off they don’t get cell service in their house or 10 miles in each direction so no cell phone… it was AWESOME! It forced everyone to do things together.. where as normally my husband and his dad would watch some sort of TV.. the SIL would be on the phone and MIL would be on the itnernet…
I’ve never used tofu in baking before–it is definitely on my list of things to try! Looks like the muffins turned out great 🙂 And who doesn’t love chili…especially with a giant slice of cornbread!
The chili looks good and easy. I don’t have a food processor either, I actually enjoy chopping veggies…
those muffins look AWEEEEEESOME!
your husband is a lucky fella!!
I think I would have to say go a day without my computer. I have left my cell phone at home by accident and I just felt so lost without it.
Everyone seems to be making chili and it making me crave it so badly. Looks great!
I would give up my cell phone before my computer, but its true with most phones today you can pretty much do exactly what you do on the comp…the screens just smaller!!
The food all looks yummy, and last night I celebrated with some friends by going out to a concert, awesome time!
I can go without my cell phone…but you’ll drag my laptop away from my cold, dead fingers!!!
I love the look of that lovely chili…perfect for a chilly night! Not so sure about the TOFU muffins…but I would try it! 🙂
Cell phone – I rarely use it!
Your chili looks amazing, btw!
I would love try that chili because I heard so many good things about it.
I hear you about busy. I am trying to use every spare minute I have to catch up as well!
I cannot imagine going a day w/out my cell or computer….even though I should. I would probably forgo the cell first as there is so much more I can do on my computer!
Love the idea of those tofu muffins. Nice additon of the buffalo sauce to the chili.
loved the healthy muffins, looks delicious and love the healthy recipes u post..
Blueberries, banana & tofu in a muffin form??? That recipe screams my name! 😉 Thanks for sharing it!
I’d rather go one day without the computer, which I actually often do. But one day without my cell phone doesn’t stress me either 😉
Btw: do you know the weight of the tofu? I’m just asking because we might have smaller/bigger tofu packages over here..
Those muffins look great. I love the idea of adding tofu to them. For Mardi Gras we actually were on the island, which celebrates with major festivals of singing and dancing until the wee morning hours, just like in brazil. It is called Carnaval here too just like in Brazil, but not nearly as crazy. Tuesday was a holiday here (can you imagine all things closed in the states for fat tuesday). As for the second question, it’s a trick question for me since I have an iphone, so if I give up the computer for the day, I have my phone which has internet. I love it.
Those muffins look scrumptious! And i know a thing or two about muffins 😉
Mmmm. Chili! My husband just made one for his work’s office Olympics, and he was the only one with carrots… glad to know others are making healthy, veggie-loaded chili…never used wing sauce, good idea!
That chili looks delicious! And so do the muffins!
I need to remember to come to your blog daily, you always have amazing posts and recipes, Im so far behind!!!!!!
I love the muffin recipe and that chili recipe I know my fiance and son would love!!!! Do u know how long I would cook it if I used a slow cooker?? Thanks so much!!!! xoxo
