Pear-Cranberry Cherry Crisp adapted from Healthy Food for Living
1 cup rolled oats
1/3 cup Sucanat (or brown sugar)
1 tsp ground cinnamon
1/2 tsp ground nutmeg
dash of salt
3 heaping Tbsp unsweetened applesauce
3 cups chopped, unpeeled Anjou pear (about 3 medium)
1 1/2 cups fresh cranberries unsweetened frozen cherries
1/3 cup pure maple syrup
3 Tbsp arrowroot powder (or cornstarch)
Preheat oven to 350º F. Coat an 8×8 inch square baking pan with cooking spray.
Combine first 5 ingredients (through salt) in a medium bowl. Stir in applesauce until slightly crumbly. Set aside. Combine remaining ingredients (pear through arrowroot powder) in a large bowl; toss well to combine. Spoon pear mixture into prepared baking pan and sprinkle oat mixture evenly over the top.
Bake at 350º F for about 1 hour, or until the top is golden-brown and crisp. Cool for 10 minutes on a wire rack before serving.
Yield: 4 servings (4 in. x 4 in. a piece)
Nutrition Information (per serving): 344 calories; 2.3 g. fat; 11 g. sodium; 82 g. carbohydrate; 7.1 g. fiber; 3.4 g. protein
Result: This is DELICIOUS and so incredibly easy! It reheated beautifully in the microwave for breakfast! Mmm mmm!
I got home from work to find dirt delivered to our driveway. I worked from 6:15-8:15pm on moving the dirt from the driveway to the garden bed in the backyard. But, it is done! I’m pretty sure my neighbors were wondering why I was throwing around dirt in the dark, but I’m the type of person who likes to finish what I start! 😀
Things I’ve learned about gardening:
Gardening is exercise. There should be a warning for gardening like there is for exercise: “Please consult your physician before beginning a garden.”
A sturdy wheel barrel is important. My wheel barrel wheel fell off and I had to use a wrench to get it back on!
Hills + wheel barrel filled with dirt = HARD!
Gloves protect from blisters. Wear them!
Lift with your legs. It’s easy to strain the lower back when using a shovel — use your legs to lift heavy loads.
Layer of newspaper under the dirt (approx. 6 sheets thick)
All filled in! Approximately 7 inches deep.
SWEATY scrub top after hauling all that dirt!!
Feels good to be done with that! I was going to have a beer to celebrate, but all I wanted was water!!
Today’s NNM Topic: Diverticulitis
Diverticulitis results from small out-pouchings in the intestine which become infected or inflamed. In most individuals these pouches are harmless and only post danger if they become infected or perforate the bowel. The cause of diverticulitis is unknown, but a low-fiber diet is linked to increased risk for diverticulitis; fiber aids as a bulking agent which enables fecal matter to travel more easily though the bowel. When a diet is low in fiber, fecal matter can become more easily lodged in small places and can cause infection over time.
Symptoms of diverticulitis include stomach pain, fever, chills,diarrhea or constipation, gas, nausea, vomiting, and poor appetite. If an individual is diagnosed with diverticulitis foods with small particles should be avoided. These foods include seeds, nuts, popcorn kernels, etc. These items are easily lodged in diverticula and can cause a flare-up. A high-fiber diet and proper hydration should be implemented in diverticulitis suffers.

What a great workout! I can’t even venture a guess on calories burned for you since it has a lot to do with body size and conditioning. I am small and short, and it takes a while to get my heart rate up, so I’m guessing I probably would have burned about only 500 or so in the 2 hours. I imagine anyone taller/bigger would burn considerably more though. It is quite a workout with all that hauling and lifting and bending!

I love fruit crisps, so that sounds great. Gardening is such good exercise! It’s one of my main forms in the summer. Plus, it’s fun and produces tangible, edible food!
Hmmm although it’s a sweaty workout, I don’t think it would keep your heart rate up as consistently as running, so therefore I don’t think the calories burned will be QUITE as high as some are guessing. My guess is 437! 🙂

I just taught about diverticulosis and the -itis too in my class. Looks like the gardening is coming along. I bet it is hard work. Keep it up because it will be totally worth it.

We are using heat mats for starters for the first time, and I swear things are sprouting after TWO days! I would have never believed it. My husband is using cut-in-half rice milk boxes for starters too – glad they’re getting some use since they are not recyclable.
One of my friends who is really fit said her favorite workout is gardening….and I believe her! I just mulched for the first time last spring, and it took about an hour and a half. I was drenched!!

Oh how I wish I had a backyard to really garden in. I’d love to grow my own veggies. But I’ll just have to stick to herbs and small tomatoes on my balcony. My guess is you burned 800 calories doing all that digging and lifting. That’s a good workout!!
