APRIL FOOLS!
Lame, I know 🙂 I couldn’t think of anything better!
My kitchen feels complete. I am now the proud owner of 6 ramekins. Aren’t the cuuute? 😉

I was trying to make Jess’s Pizza Pasta, but I ended up making something slightly different…
Prevention Pizza Pasta Bake
4 cups whole wheat pasta, cooked
2 cups low-sodium pasta sauce
2 tsp fresh or dried basil
2 tsp Italian seasoning
3 tsp minced garlic
2 ounces provolone, sliced into small, thin slices
34 slices turkey pepperoni, cut in half
1/2 cup 2% shredded mozzarella
1/4 cup freshly grated Parmesan
Directions:
Preheat oven to 350º F.
Cook pasta according to directions.
Combine pasta sauce, basil, Italian seasoning, and garlic. Stir in pasta and stir to coat. Stir in provolone, mozzarella, and turkey pepperoni. Place into a 9×9 baking dish or 2 quart casserole dish. Bake for 15 minutes or until heated through.
Remove dish and sprinkle with Parmesan cheese.
Turn on broiler to 500º F. Broil the pasta bake for 4 minutes or until the Parmesan cheese turns slightly brown. Serves 4.
Nutrition Information (per serving): 345 calories; 10.5 g. fat; 37.5 mg. cholesterol; 640 mg. sodium; 44.5 g. carbohydrate; 7.5 g. fiber; 21.8 g. protein

Question #1: For those participating in the DO what you DON’T challenge this April, what do you anticipate being your biggest barrier in meeting your goal?
I think mine will be traveling a lot this month and not being on an entirely normal schedule. Yoga and strength training can be done anywhere, though…no excuses!!
Question #2: Have you ever had a steamed artichoke? What did you dip the leaves in (if anything)? Did you like it?

Glad you’re not really giving up blogging. Whew. I think my biggest challenge, as always, is being busy. When things get crazy, convenience seems like a fair trade-off.

Had I not already been warned that it was April Fools Day, my heart would have skipped a beat and I would have been crushed when I read the intro to your post. SO glad it is not true ๐
I just posted in your challenge post and I am taking on the challenge. I think one of the hardest things for me will be making sure I get enough food in during the day so my body does not crave the binge at night. I also know my head plays tricks on me during the day so that in my mind I know I can eat more of my cereal and yogurt in the evenings when I finally get a chance to relax.
I do not like artichokes, I have tried them many times so I have no ideas of what to dip them in.

Steamed artichoke is sooooo good! I love dipping them in hummus or yogurt mixed with garlic and herbs.
I love artichoke and of course I love the standard butter or mayo, but light sour cream, hummus or homemade light ranch all taste good as well. As does the artichoke in all its natural yummyness (no added goo needed).
I am not as big a fan of artichokes as I wish I was!
Love the idea for the pizza bake – I have a similar recipe that we call pizza casserole.

As crazy as it sounds, I’ve never had an artichoke. I know! I’d definitely try one, but our family doesn’t eat them for some reason? I need to be a big girl and learn how to make them!
I’m excited for this challenge! I need something to help hold me accountable, especially for something like stretching because I tend to think it doesn’t matter. And when I do it, I FEEL so much better!

My mom used to make steamed artichokes for us all the time! we dipped the leaves in lemon and butter. not the healthiest but oh so good!

That pasta looks delish! I’m planning on having a big pasta dinner tomorrow night before my half marathon Saturday.
I love artichokes also! I’ve been known to make a meal of artichokes by themselves… ๐ Sometimes I mix up a little dipping sauce with greek yogurt, dill, lemon and diced capers. I also like Trader Joe’s Garlic Aioli Mustard (not high fat like a normal aioli).
Never tried making my own artichokes. It’s on the to-do list.

Oh my gosh Nicole! I just made stemmed artichokes last night. I served them with jalapeno and arugula aioli. They were so tasty. I have only had whole artichokes twice and was surprised how easy they are to make! Will definitely be making this in future! So good!

I think motivating myself to take the time on Sundays when I might want to do something else wil be my biggest barrier. I’ll have to make sure to plan my meals so I know what to prep that day.

OK – first of all I LOVE that picture of Lily!!
My do what you dont goal is to actually do yoga. My body needs it, and I just dont do it. I honestly think that my biggest challenge is going to be keeping up with the yoga once I can run again. Its only been a few days, but Im already feeling SO much better that I think another week and I’ll be good to go. Its going to be hard for me to do yoga when what I really want to do is run. But I know that in order to run, I need the yoga.

YUM, that is the perfect dinner!!! Artichokes are a favorite here. My little ones love them too. We do pasta bake all the time too. We have a variety of things we use to dip…my dad always used a mix of lemon juice and mayonnaise, I love Italian dressing and my boys love melted butter.

I love artichokes! Especially the middle part, after you take out the choke. We usually make a mayo-mustard sauce for dipping (heavy on the mustard for me ๐ ).
