My massage yesterday was so wonderful! Needless to say, I’ll be going back 😀 I did find it interesting that she offered to massage my belly during the session. I politely passed on that location (Mr. Prevention is hardly allowed to fondle my fluff, much less a complete stranger!). She pleasantly complied and said, “I always offer that to clients because I am a colon therapist, as well as a massage therapist.” ::blink:: Whatever. Keep massaging…anything but my fluff.
After the massage she offered me some coupons for return visits (score!) and started to tell me about their other services, including a colon cleansing machine. Now, I know better than to even inquire as to what that entails. I abstained from the comment I wanted to fire back…something along the lines of, “I believe the colon and all other organs are self-cleansing. Mine cleanses itself at least once a day…sometimes twice!” But I didn’t. I hate to whip out the logic and science (and TMI) to the oblivious and innocent. 😉
But before my massage, I had to take on one of Jess’s recipes that lured me in. Does that woman make anything short of fabulous?? Um, nope!
I originally wanted to make this springy recipe for a taste test at work (I do bi-weekly “healthy” taste tests for employees at my work). I calculated the nutrition facts and decided against it. I mean, I’m all for everything in moderation (shhh!) but the dietitian has a title to live up to in the work place, you know what I mean? 😉
Now that I’ve made these delicious, wonderful, amazing, darling cupcakes, I know that the recipe is a bit deceiving (in a good way)…and thus, the nutrition facts I calculated were, too. The frosting makes a TON! I used only half, and those babies had PLENTY of frosting. So I’ve adjusted the recipe and nutrition facts accordingly…and they aren’t as atrocious. 😀
9 of the 12 went to work with Mr. Prevention yesterday morning… you know, spreading the calories love…
One was breakfast…
Strawberry-Lime Stuffed Cupcakes adapted from How Sweet It Is
1 cup granulated sugar
1/2 cup butter 50% less fat butter (made with no hydrogenated or partially hydrogenated oil)
1 teaspoon vanilla
1 1/2 cups flour 1 cup all-purpose flour + 1/2 cup whole wheat pastry flour
1 teaspoon baking powder
1/2 cup fat-free milk
1 teaspoon lime zest
12 small fresh strawberries
Preheat oven to 350º F.
Cream butter, sugar, and eggs together until fluffy. Add vanilla.
Combine dry ingredients in a bowl. Add half of the dry ingredients, mixing until just combined. Add the milk. Once mixed, add remaining dry ingredients. Stir in lime zest.
Pour into cupcake tins and bake for 20-25 mins at 350. Let cool.
Using a sharp knife, cut a cone-shaped hole in the cupcake, leaving about an inch of cake on the bottom. Stuff the strawberry down it, and cover with remaining cake if you can. Frost!
4 Tbsp butter 50% less fat butter (made with no hydrogenated or partially hydrogenated oil), softened
1/2 lb powdered sugar (approx. 2 cups unsifted)
1 tablespoons lime juice
1/2 teaspoon vanilla
lime zest for garnish
Cream butter. Add sugar 1/2 cup at a time. Stir in vanilla. Drizzle in lime juice, add more if needed.
Frost cupcakes and garnish with lime zest.

One of my favorite drinks (before I stopped drinking my calories) was always a strawberry lime rickey. It looks like you’ve conquered this in a cupcake! Which is even better!
That massage sound good, except for all the colon emphasis. Which just seems weird.

Oh god, I would never let anyone allow to massage my belly.. no matter how fat or skinny I’d ever be.. that’s just a no-go.
Mmm between the cupcakes and the massage, I think you’ve been living well, my friend! I really believe that massages are so worth the cost because they are so restorative and rejuvenating. So are cupcakes. Truly the best delight around!
I love vita muffins, especially the deep chocolate!
have a happy weekend!
Glad you got to enjoy a massage…aren’t they the best!? Those cupcakes sound so original and amazing!

Love VitaTops but never buy them, so it would be awesome to win some!!
Never tried them but they look good!! Became a facebook fan!
First off, I’ve been dreaming about those cupcakes ever since I saw them the first time! Yours look amazing too! Secondly, I’ve never had anyone ask to massage my belly during a massage. Thirdly, great giveaway!
I’ve never had vita tops! You’ve been on my blogroll for awhile now. =)
I would NOT allow anyone to massage my stomach either. What about that is relaxing like a massage should be?? LOL
And vitatops! Love them!!!!
I became a fan. Why wouldn’t I? Love you and your blog!
And of course you are on my blogroll missy.
I have not tried the Vitatops yet! The cupcake recipe looks quite yummy- love the strawberries inside. And I agree with you on the massage- love them but don’t touch the belly!
I became a fan on Facebook!
I have never tried them.
i’ve only tried the chocolate vitatops before since they’re so expensive at my local grocery store 🙁
i’ve added you to my google reader! does that count?
Absolutely! Thank you!
I’ve tried Vitatops before! I actually prefer the bran ones!
The cupcakes look AMAZING! Jessica is, so obviously her recipe will too. Gotta balance the “sweet” and “indulgent” stuff out! 😉
I’m a fan!

I’ve never had vitatops before, but I see them everywhere!
Ive never tried VitaTops before but they sound AMAZING!!
You’re already on my blogroll.
And btw – those cupcakes look fantastic, and I would totally not allow anyone to massage my belly area. For one I think that would be awkward, and for two I think it would just be really awkward.
Ok Im TRYING to become a fan on Facebook, but its just not working. Im a fan at heart, does that count?
You are on my blogroll girl!
I have not tried Vita’s yet.. and really want to!! I hope I win :o)

Great giveaway!!! I have tried VitaTops, but not the deep dark chocolate kind. haha, dark chocolate, I bet people think they are full of antioxidants!! lol, but they aren’t. Either way, I LOVE dark chocolate and I bet these taste great (nice and warmed up).
Glad you enjoyed your massage. I am jealous, I have never had one! Unless you could Nick massages, which I don’t. And I agree, I don’t need a stomach massage. That’s…..too much.
