My massage yesterday was so wonderful! Needless to say, I’ll be going back 😀 I did find it interesting that she offered to massage my belly during the session. I politely passed on that location (Mr. Prevention is hardly allowed to fondle my fluff, much less a complete stranger!). She pleasantly complied and said, “I always offer that to clients because I am a colon therapist, as well as a massage therapist.” ::blink:: Whatever. Keep massaging…anything but my fluff.
After the massage she offered me some coupons for return visits (score!) and started to tell me about their other services, including a colon cleansing machine. Now, I know better than to even inquire as to what that entails. I abstained from the comment I wanted to fire back…something along the lines of, “I believe the colon and all other organs are self-cleansing. Mine cleanses itself at least once a day…sometimes twice!” But I didn’t. I hate to whip out the logic and science (and TMI) to the oblivious and innocent. 😉
But before my massage, I had to take on one of Jess’s recipes that lured me in. Does that woman make anything short of fabulous?? Um, nope!
I originally wanted to make this springy recipe for a taste test at work (I do bi-weekly “healthy” taste tests for employees at my work). I calculated the nutrition facts and decided against it. I mean, I’m all for everything in moderation (shhh!) but the dietitian has a title to live up to in the work place, you know what I mean? 😉
Now that I’ve made these delicious, wonderful, amazing, darling cupcakes, I know that the recipe is a bit deceiving (in a good way)…and thus, the nutrition facts I calculated were, too. The frosting makes a TON! I used only half, and those babies had PLENTY of frosting. So I’ve adjusted the recipe and nutrition facts accordingly…and they aren’t as atrocious. 😀
Strawberry-Lime Stuffed Cupcakes adapted from How Sweet It Is
1 cup granulated sugar
1/2 cup butter 50% less fat butter (made with no hydrogenated or partially hydrogenated oil)
1 teaspoon vanilla
1 1/2 cups flour 1 cup all-purpose flour + 1/2 cup whole wheat pastry flour
1 teaspoon baking powder
1/2 cup fat-free milk
1 teaspoon lime zest
12 small fresh strawberries
Preheat oven to 350º F.
Cream butter, sugar, and eggs together until fluffy. Add vanilla.
Combine dry ingredients in a bowl. Add half of the dry ingredients, mixing until just combined. Add the milk. Once mixed, add remaining dry ingredients. Stir in lime zest.
Pour into cupcake tins and bake for 20-25 mins at 350. Let cool.
Using a sharp knife, cut a cone-shaped hole in the cupcake, leaving about an inch of cake on the bottom. Stuff the strawberry down it, and cover with remaining cake if you can. Frost!
4 Tbsp butter 50% less fat butter (made with no hydrogenated or partially hydrogenated oil), softened
1/2 lb powdered sugar (approx. 2 cups unsifted)
1 tablespoons lime juice
1/2 teaspoon vanilla
lime zest for garnish
Cream butter. Add sugar 1/2 cup at a time. Stir in vanilla. Drizzle in lime juice, add more if needed.
Frost cupcakes and garnish with lime zest.
Yield: 12 frosted cupcakes
Nutrition Information (per cupcake): 268 calories; 5.8 g. fat; 41 mg. cholesterol; 106 mg. sodium; 50 g. carbohydrate; 1.5 g. fiber; 2.8 g. protein
