Sorry for being MIA yesterday — my family is in town from Chicago! 😀 Tulsa finally has some sun and we spent the majority of yesterday basking in the sun with a few cold beers, chips, salsa, and guacamole! Paradise, I’d say!

Lily blocked out a good portion of her afternoon to sun bathe, as well:

I’m so glad you guys enjoyed hearing about my day-to-day (or hour-by-hour!) job. I am really busy, but I like it that way 🙂 Lots of you work in HR — that’s funny. Mr. Prevention does, too!

I did want to share with you all Biz’s recipe for salsa. I’ve been waiting anxiously to make this for a crowd, and yesterday was that day!

Copycat Baja Fresh Salsa slightly adapted from Biggest Diabetic Loser

7 firm medium tomatoes, cold (I used Roma)
1 jalapeno
1 clove garlic
1 tsp salt
1 ½ cups water
juice of 1 small lime or 1/2 large lime
4 tablespoons chopped cilantro (fresh)

Directions:

Toss tomatoes and jalapenos in olive oil. Grill until charred, but not dripping.

Throw everything in the blender or food processor and pulse until smooth. Refrigerate until chilled.

Result: Delicious! Mine was a bit tart with the lime juice, so I would just cut it back a tad from the original recipe. Thumbs up, Biz!

I also made homemade guacamole à la Nicole!

Nicole’s Guacamole

2 large avocados
1-2 cloves garlic, minced
1/2 tsp salt
1/4 tsp black pepper
1 Tbsp low-fat sour cream
2 Tbsp salsa
1/4 lime, juiced

Directions:

Mash together and savor on a whole wheat tortilla chip!

Off to the farmer’s market and Hobby Lobby with the parental unit! 😀

    I have never made homemade salsa before. I wanted to ask if you can do me favor and send some of that sunshine back with your parents to Chicago? I thought it was supposed to be sunny this weekend but so far it is still gross out. Maybe it is still to early in the day but this girl would love to see some sun!

    That’s so fun that your family is in town. Salsa and guac are the easiest snacks, healthy and my favorites. I usually make my own salsa and guac. I use fresh tomatoes, onions, peppers, and it turns into more of a pico at first then a salsa after sitting for a day or two (if there is any left). Guac…avocado, tomatoes, red onion and garlic. That’s it!

    I LOVE chunky salsa! I haven’t ever made my own because I am such a sucker for the Organic Peach Salsa that Central Market sells….haha!

    I’ve made homemade salsa, but never with fresh tomatoes. Looks good. I like chunky salsa but really I’ll eat any kind.

    Love homemade guacamole! Never made smooth texture salsa before, only chunky and fruity kinds. My favorite ๐Ÿ™‚ looks like you have a lot of fun in store this weekend!

    I love homemade salsa and guac! I make it a lot in the summer when my tomatoes come in. That looks like it turned out great!

    I love chunky salsa, but only if its homemade. I dont like chunky salsa if its from a jar – then it has to be smooth.

    That first sentence of this post sounds so relaxing!
    The salsa turned out perfect, from the picture at least. YUM! I do prefer chunky though, and would never blend my salsa. As a young girl I hated chunks, now I love them. I Just made salsa the other day, just simple with tomatoes, cilantro, and lime juice with some garlic. It was really tasted and CHUNKY!

    BTW : I hadn’t thought about the fact that you currently live in a rural area. So our convo the other day, about Delaware…. Perfect.

    If I’m having the salsa plain with chips I like it chunky. If I’m mixing it with cheddar cheese then I like it smooth…Pace Picante was my favorite. Pace mixed with cheese and a bag of salty corn chips and a 2L diet pepsi was one of my fav. meals. IT would all be gone….any wonder how I out weight on ? ๐Ÿ™‚
