When Mr. Prevention and I visited Greece several years ago, I sustained myself on baklava alone. I assure you, that’s not a far stretch of the truth either. Baklava. Is. Amaaaazzzzing.
When I was working really hard this week (wink wink) and ran across this recipe and it immediately jumped to the top of my must-make list. No more than 36 hours later, here we are.
Baklava Muffins adapted from Cate’s World Kitchen
Filling
1/2 cup chopped walnuts pistachios
1/3 cup sugar
1 1/2 tsp cinnamon
3 tbsp melted butter 50/50 Smart Balance Blend
Muffins
1 1/2 cups whole wheat pastry flour
2 tsp baking powder
1/2 tsp baking soda
1/4 cup sugar
1/4 tsp salt
1 large egg
3 tbsp melted butter 50/50 Smart Balance Blend
1 cup + 2 tbsp low fat buttermilk
Glaze
1/4 cup 2 Tbsp honey
Directions:
Preheat the oven to 375º F.
Mix the filling ingredients together in a medium bowl and set aside.
Mix the flour, baking powder, baking soda, sugar, and salt together in a large bowl. Mix the buttermilk, melted butter, and egg together in a medium bowl. Make a well in the dry ingredients and pour the wet ingredients into it. Mix gently with a fork.
Line a 12-muffin tin with paper liners. Fill each 1/3 of the way with batter, top with a spoonful of filling, then top with more batter. Bake for about 15 minutes, or until a toothpick inserted in the center comes out clean. As soon as the muffins come out of the oven, brush each with about 1/2 tsp of honey, then transfer to a wire rack to cool completely. Yield: 12 muffins with honey glaze
Nutrition Information (per muffin): 194 calories; 8.7 g. fat; 26 mg cholesterol; 131 mg. sodium; 26 g. carbohydrate; 2 g. fiber; 2.3 g. protein
Result: Holy YUM! These are divine! Very happy I made the switch from walnuts to pistachios, too. They are a cross between a muffin and a cupcake. They are not overly sweet (I mean, those nutrition stats are shabby at all!), but they’re also a bit cake-like for a muffin. Whatever they are, they are delicious! 😀
I have a date with the treadmill as the 95º Oklahoma heat doesn’t sound appealing for running. However, we are off to the pool after a good sweat session! 😀

I love baklava!! Theres this awesome little greek restaurant practically right across the street from my parents house. We go there all the time, their baklava is amazing. They actually sent some home with my mom when my dad was having his cancer surgery. Pretty sure we inhaled it in record time.
I just recently had it for the first time at this wonderful Greek restaurant in the Lakeview neighborhood of Chicago! Wonderful!!!!

Been to Greece and it was amazing!! I survived on greek salad and local white wine. Fun, crazy times. We did Athens, western Crete and Santorini in late May. It was perfect timing. ๐
I lack a sweet tooth unless it’s Lindt’s Chili Dark Chocolate. I’ve had baklava a couple times but I’m more likely to hit up the chips & dip for a second round then have dessert. I’ve never been to Greece but can’t wait till I get the chance!

I am NOT a big fan of nuts, especially walnuts, and I only like honey when it’s been cooked/baked for some reason, but there’s a restaurant in town called the Greek Taverna which serves a baklava that’s to DIE for, and it’s filled to the brim with walnuts and raw honey. Don’t understand it but it’s delicious so I don’t need to. ๐ The muffins look fantastic!
Oh my goodness, I love baklava!! There’s a jewish bakery near us that sells the most amazing pistachio baklava… these muffins look great and I’m sure they’re much healthier!!
I’ve never been to Greece, but would love to one day. It’s funny b/c just yesterday my husband said that he’s really in the mood to go to a greek restaurant. So we agreed that the next time we go out it will be for greek food. Can’t wait!! ๐

Never been to Greece but I’m from the Palestine and we do Baklava that’s just a little different than the Greek… I like it but it’s sweet for me so I can’t live off it!!!!
I prefer Lebanese baklava to the Greek version because the Lebanese one usually has less honey so it’s not overly sweet.
…but then again, I’m Lebanese.
