I'm a scrub

Thank goodness today is the last day to my work week…yesterday was SOOOO busy! I had a packed schedule of patients and our docs kept coming in with walk-ins, it was crazy busy! My busiest day as an RD yet, believe it or not! And of course, I felt like poo. But, alas, I AM finally feeling better. 😀 I even managed to get in some weeding and a short 2-mile run last night. While I didn’t want to run at all whatsoever…I did anyways. I don’t want to get behind on my 101 Days of Summer challenge goal to run at least 70 of the 101 days of summer. And it’s never a bad deal to catch up with The Hills while jogging 😀

I typically don’t “crave” certain meals because I meal plan through the week. Last night, however, I was craving waffles! And since I am yet to grocery shop (it’s been nearly 2 weeks!), I threw together Cinnamon Apple Waffles!

Cinnamon Apple Topping

2 apples, red variety
2 Tbsp cinnamon
3 Tbsp pure maple syrup

Directions:

Peel and dice apples. Mix apples, cinnamon, and syrup in a sauce pan over medium heat for 10-15 minutes or until softened and caramelized. Serve over waffles or pancakes. Serves 2.

Nutrition Information (per 1/2 of recipe): 150 calories; 0 g. fat; 0 mg. cholesterol; 0 mg. sodium; 41.5 g. carbohydrate; 5 g. fiber

The actual waffle was made from Bob’s Red Mill Buttermilk Pancake and Waffle Mix. Bob’s sent me this mix a few months back and finally got around to trying it. Good thing it stays good for a long time! It was wonderful! 🙂 And the nutrition stats weren’t bad, either! The HUGE Belgian waffle was 400 calories; 20 grams of fat; 200 mg. cholesterol; 525 mg. sodium; 42 g. carbohydrate; 6 g. fiber; and 15 g. protein. While the meal was delicious, I was over my carbohydrates for that meal.

…It was worth it.

I have to show off my garden a bit more today…it’s growing SO fast! Oklahoma = awesome gardening weather!

Random Question #1: What is your workplace attire? Are you okay with it, or do you wish it were something else?

Random Question #2: Pancakes or waffles? Tough one, I know!

I currently wear scrubs and love it! However, I know that won’t always be the case 🙁 RD’s typically wear business casual with a lab coat, and it’s fine…but not as great as scrubs!

    I’m glad you are feeling alright now. Cinnamon apple topping sounds great! Seeing that I really have a mood for waffle tonight. I love eating waffle more, but I love cooking pancake more. Have a nice day!

    I didn’t know you wore scrubs!!! Well, I’ll admit I love having to wear a uniform (or at least I love that I will be wearing one soon). I’ll have to buy some nice pants, but I get to wear a typical RD lab coat, which means that I will not really have to think about what I wear underneath πŸ™‚ Nice.

    Glad you survived your tough day at work. Also, I love your running challenge. Maybe I’ll join you when you come to C-bus??

    I choose pancakes, although I do love a good waffle. I just prefer the ol’ pancake!

    Waffles! I don’t have a waffle maker though. That is a good thing πŸ™‚ Lucky you get to wear scrubs, so comfy. Great job on the run. I am started a yoga challenge next week. 50 days of yoga (out of 94), which is about 4 times per week.

    The waffle looks awesome! But I have to say that for some reason I think I like pancakes a lot more. They’re just so homey and comforting (and easier to make, at least with my crappy waffle iron ;)).

    And I never thought about moving to Oklahoma before this post but if that’s what it took to have a nice garden, I’d probably do it. πŸ˜›

    Workplace attire for me is teeshirt, sweats or shorts. I am a stay at home homeschooling mom and I dress more for shat will hide the stains best and allow me free movement to dig behind furniture for missing toys, is fireproof and so forth ( don’t laugh – homeschool labs can get a little exciting and flammable sometimes). Pancakes or waffles ? I make pancakes because they take less time when cooking for the three of us but I really like waffles. For some reason they strike me as “posh”. Silly but true ! And WOO HOO on the baby squash ! Gardens can be very exciting – and the tomatoes make my mouth water

    The whole pancake/waffle thing changes for me… right now I’d hands down pick waffles. But if you’d asked me that 6 months ago I might have said pancakes. I need a waffle press! Right now, eggos are filling in quite nicely!! πŸ™‚

    I used to work at a boutique law firm on Michigan Avenue and had to dress to the max. Where I work now is casual – even get to wear jeans on Fridays!

    If I had a waffle maker, it would be waffles, but for now pancakes!

    I’m so jealous. I would love to wear scrubs to work. Comfortable. Easy. It would make getting ready in the morning so simple and fast. I have to wear dress pants and a nice shirt. On Friday we get to wear jeans, which is like going to Disney World.

    I am so jealous that you wear scrubs! Nice and comfy, I’m sure. I wear business casual since I work in an office. I keep saying for my next job that I want a ‘jeans job.’ I hate getting dressed up. Tough call, I love waffles and pancakes equally πŸ™‚

    That is one good-looking waffle! The apple topping sounds especially delicious.

    Choosing between pancakes and waffles…that’s a toughie. I guess it just depends on what kind of mood I’m in. Most mornings I’d choose oatmeal (hot or overnight) over both pancakes and waffles ;).

    I work at a school without a faculty (or student) dress code, so it’s pretty casual. I couldn’t imagine wearing a suit everyday!

    I wish I got to wear scrubs during my internship! I asked repeatedly and was denied–haha! So much easier and more comfortable! Since my move is underway, I dress in casual, super easy attire lol–tshirts and shorts, flip-flops… … and LOVE it! And, I have to say, I 100% vote Waffles all the way! YUM!

    I’ve always been a pancake girl. Waffles are good, but I’ve always preferred pancakes.
    I can pretty much wear whatever I want to work as long as I look presentable. Basically that means jeans and a clean top. I love being able to wear jeans to work!

    Scrubs sound so comfortable! My attire is normally business casual, but when we are working outdoors its boots and jeans all the way. My first year of teaching I would wear nice clothes/shoes outdoors for labs and I have since learned because I have ruined way to many pairs of pants! It’s waffles all the way for me!!!

    I work from home so I wear yoga pants or running clothes. πŸ™‚ When I go into my PT running store job, I wear….running clothes. Jeans feel like dressing up to me these days. πŸ™‚

    I currently dress business casual for work and it suits me just fine. I work at a university and the students aren’t much younger than me, so the slightly more dressed up look helps keep me from being mistaken for a student. πŸ™‚

    And as much as I love waffles, pancakes always win in my book. Especially blueberry pancakes. πŸ™‚

    Scrubs sounds comfy! Not currently working but it was anything I wanted when I was. I taught college drama so jeans and t-shirts most of the time, the people who taught the boring classes (dramatic literature) dressed up but those of us who taught the fun stuff got to be casual, after all never know when you might have to climb a ladder or carry sheets of plywood πŸ˜› I could never work somewhere I couldn’t wear jeans and sneakers…

    Pancakes when I want stuff in them and waffles for when I want to top it. πŸ˜›

    I’m so glad you are feeling better! And DANG those waffles look amazing. I don’t have a waffle maker, so the last time I had fresh waffles was maybe…..at a hotel for breakfast? πŸ™‚

    I SO wish I could wear scrubs. Or a uniform of some kind! Our dress code is business casual. It would be made perfect if they would only allow us to wear jeans and yoga pants. And tennis shoes.

    I’m going to actually have to go with pancakes! I think I just like the smooth texture of pancakes. And I can spread almond or peanut butter more easily right on top. πŸ™‚

    I think waffles and pancakes taste so similar…but I choose pancakes because you can stack them up and eat it high and mighty. πŸ™‚

    In Singapore, they sell fresh-griddled waffles on the streets or in roadside stalls or in bakeries, flavored with pandan and stuffed with different fillings like blueberries, peanut butter, butter, kaya jam, cheese, etc.
