Anyone who spends time in the kitchen has a fairly set arsenal of grocery items. For me, one of those food items is whole wheat pastry flour. I find this flour in the bulk bins at Whole Foods for approximately $1.60-$1.70/pound. Unlike whole wheat flour, whole wheat pastry flour is ground from soft wheat, making it the ideal “whole grain” flour for baking. The difference between whole wheat and whole wheat pastry flour are profound, so if you’re looking to add something to your arsenal…I recommend whole wheat pastry flour.

Vegan Zucchini Bread Muffins from Weekly Bite
3 cups whole wheat pastry flour
1 tsp kosher salt
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1 cup sugar
3/4 cup canola oil
1 cup unsweetened applesauce
2 tablespoons vanilla
2 cups grated zucchini
Directions:
Line muffin tin. Preheat oven to 325º F.
Combine flour, salt, baking soda, baking powder, and cinnamon. Set aside.
Mix sugar, canola oil, vanilla, and applesauce until mixed through. Add dry mixture to wet mixture. Mix until combined. Fold in zucchini.
Using an ice cream scooper, drop batter into muffin cups. Muffin cups should be about 3/4 full. Bake for 24 minutes or until tooth pick come out clean. Remove from oven and place muffin tin on cooling rack. Yield: 18 muffins
Nutrition Information (per muffin): 202 calories; 9.7 g. fat; 0 mg. cholesterol; 132 mg. sodium; 28.3 g. carbohydrate; 2.9 g. fiber; 0.3 g. protein
Result: Estela and I are on the same page when it comes to vegan baked goods — they’re so good! I will take the healthy fat, higher calorie muffins any day…they are so satisfying! I’ve been wanting to make zucchini muffins since I had them in Dallas while visiting our friends Jeff and Liz. They’re delicious…and you can’t beat getting in some veggies at breakfast in the form to baked goods 😉

I HATE grocery shopping and have to go today ๐ I think the reason I hate it so much is due to the amount of money I spend there every week. I have two teenage boys so you can just imagine how much they eat!
I love grocery shopping! My poor husband was along with me yesterday while I was at Trader Joe’s. The poor guy! He was very patient, but he doesn’t get how fun it is for me to find new things ๐

Love whole wheat pastry flour. It’s such a healthy swap for white flour. I use it all the time in recipes, typically replacing at least 1/2 of the white flour called for. Those muffins look like a hit!

Your situation reminds me of that commercial where the cartoon woman and cartoon man go on a diet together. She says, “He lost 7 pounds. Me? My boobs shrunk.” I agree: It’s not fair how a man can do less than a woman and drop weight so much easier!
However, if you two would like to supplement your income, he should promote the Little Caesar’s diet. ๐
Most of the time I hate grocery shopping. As a result I do most of it online. I gather that this service is often not available or costs a lot of money in the USA.
If I buy basic food/cleaning products/cat food for a month the amount I spend gets me free delivery.
Also, I have a weekly box delivery of fresh organic fruit and veg, and I usually plan my meals around that.
I rather like the challenge of finding something to cook with what I have got.

Yummy muffins ! I LOVE grocery shopping, and it is even better f in my favorite store. I love reading the labels, comparing prices , and I drag my husband and son with me. Makes for a lot of interesting discusions and there are no fights about how much we are spending
I should try whole wheat pastry flour! I’ve made things with regular ww flour, but yeah, that stuff is DENSE! I don’t mind it, but my husband isn’t crazy about it.

PAstry flour is something Ihave NEVER worked with. Crazy, right? Perhaps I should. I love high fat rather than high sugar too. Any day. Love it.
I used to despise grocery shopping; however, since I’ve started eating healthier and trying new recipes, mostly found on food blogs, I find myself excited (at times, not always!) to go to the grocery store and buy fresh new produce, or a new product!! I bought pearled barley the other day for the first time and was so excited about it…who would have thought I’d be excited about barley:).
The muffins look great – I have never used WW Pastry Flour. I don’t bake a lot though, so I’m not sure it’s worth buying.
I LOVE the grocery store – especially fun markets like Whole Foods and (near me) Plum Market. I could spend hours browsing the aisles ๐

I DO like to grocery shop… I enjoy grocery shopping even more if I just go by myself. I can take the time to look at all the produce and all the labels of everything else in the store. I can look around to try new things and just have a leisurely grocery shopping experience. Sounds goofy, but it’s true!

I LOVE to grocery shop. Well, usually. At the end of a long work day (or week) or when it’s crowded, it’s not quite as fun. But I love going in with my little list and feeling like I actually accomplished something!

Thank you for your yogurt post the other day I was on the fence about getting a yogurt maker and you pushed me over and I’m soooo glad I got it. I calculated how much money I could save and was ecstatic and it tasted awesome!

Love to grocery shop, I think it is fun to meal plan and wander up and down the aisles.
Grocery shopping on Saturdays is the best part of my week! I LOVE it! Well, as long as my boyfriend doesnt come. It always turns into a fight since I refuse to get a buggy when I know full well I can fit everything into a basket. He carries it and then complains about the weight but WONT give it back to me!
He just doesnt come with me anymore.

Now that I’ve been cooking more the last few months I do love to grocery shop – especially at the farmers markets! I look at it as an adventure, to see what new things I can find and come up with to try. Like the avocado zuchinni I found last time that we’re trying tonight! I probably spend too much time shopping, but that’s easy to do here.

Good to know I can get WW pastry flour at WF. Unfortunately there isn’t one in my immediate area but next time I’m around one, I’ll have to remember that! I only recently bought WWPF for the first time, and I could only find it in ONE grocery store, in a small bag for a hefty price ๐
We will have to make these muffins! I have never had zucchini bread or muffins, so I am curious about them. I have also never heard the idea of using an ice cream scoop to put batter in to muffins liners. Funny!
