the cookies that caused me mindless eating!

I’m probably one of the lucky ones — I rarely eat mindlessly. That is, until these cookies. I came home from work and enjoyed 2 of these babies…and another one after my run! Oops!

Cooking Light featured these cookies after discussing the recently proposed not-as-bad-as-we-once-thought take on saturated fat, specifically in the form of coconut and dark chocolate. While my verdict on that matter is yet to be determined, I do know 2 things: I LOVE coconut, and dark chocolate isn’t so bad either 😉

I’ve never toasted coconut before, but it really does make a difference in the flavor of the coconut. Plus, it looks really pretty!

And the coconut makes wonderful, chewy, delicious cookies! I am hoping they’re not all gone by the time my in-laws visit this weekend — my mother-in-law loves coconut, too! 😀

Toasted Coconut Chocolate Chunk Cookies adapted from Cooking Light

1 cup flaked sweetened coconut
4.5 ounces all-purpose flour (~1 cup) 1/2 cup all-purpose flour + 1/2 cup whole wheat pastry flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/8 teaspoon salt
3/4 cup packed brown sugar
1/4 cup unsalted butter 50/50 Smart Balance Butter Blend, softened
1 teaspoon vanilla extract
1 large egg
2 ounces  dark chocolate (70% cacao), chopped
Cooking spray

Directions:

Preheat oven to 350°.

Arrange coconut in a single layer in a small baking pan. Bake at 350° for 7 minutes or until lightly toasted, stirring once. Set aside to cool.

Weigh or lightly spoon flour into a dry measuring cup; level with a knife. Combine flour, baking powder, baking soda, and salt in a medium bowl; stir with a whisk until blended. Place sugar and butter in a large bowl; beat with a mixer at medium speed until well blended. Beat in vanilla and egg. Add flour mixture, beating at low speed just until combined. Stir in toasted coconut and chocolate.

Drop by level tablespoons 2 inches apart onto baking sheets coated with cooking spray. Bake at 350° for 10 minutes or until bottoms of cookies just begin to brown. Remove from pan, and cool completely on wire racks. Yield: 24 cookies.

Nutrition Information (per cookie): 96 calories; 4.7 g. fat; 11.5 g. cholesterol; 31 mg. sodium; 12.5 g. carbohydrate; 0.8 g. fiber; 1 g. protein

Result: Wow! If you are a coconut lover, these are a must-make! Mr. Prevention hates coconut, but even agreed that they’re pretty good. Mmm mmm mmmm!

Day one in the clinic went really well! I met most of the Monday-Wednesday-Friday dialysis patients and today is rounds with the Tuesday-Thursday-Saturday folks! I am learning a ton and I love it! 😀 Thanks for all your kind words on my new job, I really appreciate them!

A brief update on the 101 days of summer challenge: June definitely set me back in meeting my goal to run 70 out of 101 days of summer, but with some serious consistency in the next 5 weeks, I’ll meet me goal! The month of July I worked really hard (despite the move!) and ran 24 out of 31 days and averaged over 20 miles a week. I can take off 6 days between now and Labor Day — not many, but doable!

    Luck you not being a mindless eater! That’s great. I bet I could finish off a few of those cookies too. They sound delicious! My favorite cookie is probably a triple chocolate cookie. Although, sometimes just a really good chocolate chip cookie is best.

    My favorite cookie is a basic chocolate chip. Something so satisfying in the classic. Although I’m not opposed to trying cookies like the above either.

    Ooohh those cookies sound divine (I love the super tall tower of ’em). I used to hate coconut, but now I absolutely love it! In terms of my favorite type of cookie, hmmm… I love just about every kind of cookie out there, but it’s tough to beat a freshly baked, high quality peanut butter chocolate chip cookie. That flavor combination is just so classic and tasty!

    And that’s exactly why I can’t make these. I’d eat the whole batch. They do look so good though. My favorite is the classic chocolate chip. But, really, I love any cookie.

    I love coconut, but with dark chocolate…sold! I can see how these can be addicting. I am a plain jane when it it comes to cookies. I love a good old fashion chocolate chip. Gooey and hot out of the oven.

    Mindless eating is the reason I rarely make cookies. I’ll eat one, then another, then another…
    They look fantastic, though! ๐Ÿ™‚ And my dad hates coconut so I have to wonder how he’d like them if Mr. Prevention didn’t die of disgust. ๐Ÿ˜‰

    Mmm, I just discovered that I love coconut! How about trying that recipe with some oats thrown in? My sister makes the most wonderful oatmeal-coconut cookies with dark chocolate chips. They’re fabulously chewy and flavorful! I’ll have to suggest toasting the coconut next time, because she doesn’t do that. ๐Ÿ˜‰

    I have trouble stopping at a few cookies even when I’m eating them mindfully – I just love them so much! But I’m actually not a huge fan of coconut…shocking, I know! But the Hubby loves it, so I’ll probably be making these. ๐Ÿ™‚

    Hello Nicole! Sorry I’ve been MIA ๐Ÿ™ I don’t have one overall favourite cookie. More like 4….chocolate chip,peanut butter, haystacks and ginger?/cinnimon…drawing a blank on the name of the last one. But I could eat all 4 of these forever. Well I was till I banned them this year. Haven’t had a cookie all year!

    As for both my blogs, I started the other one to post about local things so people moving to the base can find out what there is to do around here. The assignment here lasts 2 years and it can take just 1 to find out about things. When we were moving here we hated that we could not find info when we googled it. It was not because it did not exist but rather it was in Portuguese so we could not find it if we did not google in Portuguese. So this was my answer. If you can’t keep up with that one, no worries, but I know you have an interest in foods from around the world, this on just focuses on local to the island.

    YUM! These cookies look great! I’m not much of a sweet eater, but I made lots of cookies this weekend too. In one batch I totally eliminated the shortening and added banana instead. They turned out awesome!

    Ah I’m a terrible mindless eater! I found myself doing it today with almond butter. No bueno!

    Your cookies look amazing! and yes, they are sooooo good. I think I could have made my coconut darker like yours though. did you taste the dough before it baked? OMG…it was to DIE FOR! lol ( the coconut was crunchy! lol )
