Already week 2 of the chili contest has come and gone. After last week’s unique Italian-esque chili, I went with something more traditional.
Lynsey’s Chili from Lynsey Lou’s
1 lb ground beef (I used 92% lean)
1 lb sausage (I used TJ’s Spicy Jalapeno Chicken Sausage)
1 medium bell pepper, chopped
1 medium onion, chopped
2 cans kidney beans, drained
1 can black beans
2 cans stewed tomatoes
1 can Rotel
1 can tomato paste
1 tsp red pepper flakes
1 tsp garlic salt
1 1/2 tsp chili powder
Pepper, to taste
1/4 cup hot sauce (I used Louisiana Hot Sauce)
1 Tbs butter 50/50 Smart Balance Butter Blend
1/2 cup water
Directions:
In a large skillet brown the ground beef and sausage. Once cooked drain the meat and set aside.
In the same skillet add onions, bell pepper, and butter. Saute the veggies until onions begin to turn clear. Remove from heat.
Place meat and onions in crock pot or large pot and mix. Add the beans, tomatoes, rotel, red pepper flakes, garlic salt, pepper, chili powder, water, hot sauce and tomato paste and mix together. Once ingredients are incorporated turn crock pot on high (Or stove on low-medium) and let cook.
If you are using a crock pot; cook on high for about 1 1/2 -2 hours stirring occasionally. For stove top, cook on low-medium heat for about 45 minutes, stirring occasionally. Serves 8.
Nutrition Information (per serving): 374 calories; 10.6 g. fat; 66 mg. cholesterol; 1427 mg. sodium; 39.6 g. carbohydrate; 13 g. fiber; 29.8 g. protein
Result: Mr. P and I agreed that this chili was really good. It’s very thick, hearty, and filling — 13 grams of fiber per serving, friends!! I’ve never made chili with hot sauce before, and I’m a HUGE fan of that flavor! Had I used regular sausage I think it would’ve tasted better, but it would’ve wreaked havoc on the nutrition status. I used low-sodium canned tomatoes, and drained the kidney beans…and the sodium is still outrageously high 🙁 This is an issue with chili and all the canned goods…not the recipe. Again, the high sodium can fit into a healthy diet with some finesse during the other meals in the day. All-in-all, a great traditional chili! 😀
For the Illini game last night, Mr. P got MORE Buffalo Chicken Dip. Is there a 12-step program for this addiction? I’m not kidding, people…he’s already talking about next weekend and buffalo chicken dip!

Kidney beans for sure! Sounds like a super hardy chili. That’s hilarious how addicted your hubs is to the dip. I made it for mine last superbowl and I know he loved it too!
I am a big fan of black beans in my chili. For some reason I am not the biggest fan of kidney beans…!

Growing up, my mom never put beans into the chili but now when I make mine I either put kidney or chili beans–yay for fiber!! ๐

Another great chili! My favorite beans in chili are kidney, but if I’m feeling adventerous, I like to do a mix of kidney and either navy or cannellini. ๐

We just made this tonight, with a couple of substitutions for things we had on-hand and it was delicious! For me it was the perfect amount of spicy. I already can’t wait to have some leftovers for lunch tomorrow ๐
