Quick & Easy Holiday Dessert #2: Peanut Butter Fudge

I baked ALL DAY yesterday. From 10am to 4pm. In my PJ’s and apron ๐Ÿ˜€ …only to be followed by Mr. Prevention’s request for Gruyere fondue. Can a girl catch a break, or at least a foot massage? We tried a gruyere fondue recipe from Epicurious and it was excellent! Caramelized shallots, white wine, and cheese…what’s not to adore? I exercised portion control, but I was HUNGRY! I barely broke for a tiny bowl of chili amongst the baking insanity that was my kitchen yesterday, and let me tell you…sweets are not appealing to me at all right now, and I only “quality control” taste tested 2 cookies! I guess it’s true…when you’re around something all the time, it loses its appeal.

Good thing. It’s cookie MADNESS over here! At least they’re all mostly all packaged up and ready to be given as gifts ๐Ÿ™‚

This is another recipe from my mother-in-law. She and my mom have something in common: the love for effortless sweets recipes! But really, who doesn’t?

Personally, I am a fan of all things chocolate. Not that I don’t love peanut butter, too…but chocolate always trumps peanut butter in my heart belly. But I must say that peanut butter fudge is truly delicious.

Peanut Butter Fudge from my mother-in-law

2 cups sugar
1/2 cup low-fat milk
1 1/3 cups all-natural, creamy peanut butter
1 jar (7 ounces) marshmallow creme

Directions:

In a sauce pan, bring sugar and milk to a boil; boil for 3 minutes. Add peanut butter and marshmallow creme; mix well. Quickly pour into a buttered 8-inch square pan; chill until set. Cut into squares. Yield: 72 small pieces

Nutrition Information (per piece): 47 calories; 2.6 g. fat; 0 mg. cholesterol; 20 mg. sodium; 6.8 g. carbohydrate; 0.3 g. fiber; 1.1 g. protein

Result: Mmmmmm! A little bit goes a long way! Keep the pieces nice and small so people can enjoy this small treat without loads of calories! It is creamy and very rich! Best part: it’s cheap and takes all of 15 minutes, TOPS, to make! Enjoy!

Up this week: holiday sweets galore with plenty of time to do some baking of your own! ๐Ÿ˜‰

Question: Chocolate or peanut butter? And you can’t choose both!!

    It must be nice to bake whole day… and stay home and eat comfort food! I love peanut butter but not more than chocolate though ๐Ÿ™‚ Those fudges make me drool!

    Wow! That is an easy recipe! Looks great:)) Choosing between chocolate and peanut butter is too hard for me, but if I had to choose, it would be chocolate.

    Just curious…how are you keeping all these goodies “fresh” until time to give them away? I’ve been wanting to make things ahead, but wasn’t sure what to do with them so I wasn’t giving away stale cookies/treats! Plus, it would be great if I could make them and wrap them up out of sight, since I suck at portion control ๐Ÿ™‚

    Mmmmm peanut butter fudge… looks fantastic! I’d have to go with peanut butter over chocolate. I have peanut butter nearly every single day, and I would miss it terribly.

    Definitely chocolate. I’m not a big peanut butter fan. My husband is, though. I’d rather have that Gruyere fondue than peanut butter fudge. That sounds so good, by the way!

    Sounds like alot of blog friends had baking Sunday’s! I wish I did–I was studying instead! My baking day will be tomorrow. Love the sounds of this fudge too!

    I totally agree…chocolate trumps pb in my book, every time! And the only way to make pb even better, would be to add chocolate! haha Fudge looks really delicious! So did you get ALL your holiday baking done then? good for you!!! It has been snowing up here since the middle of last week, and it is really putting me in the mood to bake! ๐Ÿ™‚

    This fudge looks great. I will say chocolate, but my favorite combo of all time is PB and choc, and I like this with some banana. In fact, my favorite desert ever is banana ice cream with chocolate chips and peanut butter.
