Comforting Chicken Noodle Soup

It’s been 8 years since Mr. Prevention and I first met, almost to the day. Eight blissful years…aww. And in all eight years of love, Mr. Prevention has spoken of Comforting Chicken Noodle Soup on many occasions. It’s a soup he grew up with and adores.

The first time I mentioned that I need to try Comforting Chicken Noodle Soup, I distinctly recall my mother-in-law telling me that it’s an embarrassingly easy recipe and certainly not blog-worthy. Well, here it is! In all its blog-worthy glory!

Sure, the ingredient list and nutrition information are far from “optimal”, but when Mr. Prevention came down with a virus this weekend his one request was happily fulfilled. He’s so pathetic and cute when he’s sick…

Comforting Chicken Noodle Soup slightly adapted from Taste of Home

2 quarts water
8 5 chicken bouillon cubes
6-1/2 cups uncooked wide egg noodles
2 cans (10-3/4 ounces each) condensed cream of chicken soup, undiluted
3 cups cubed cooked chicken
1 cup (8 ounces) light sour cream
Minced fresh parsley

Directions:

In a large saucepan, bring water and bouillon to a boil. Add noodles; cook, uncovered, until tender, about 10 minutes. Do not drain. Add soup and chicken; heat through.

Remove from the heat; stir in the sour cream. Sprinkle with minced parsley. Yield: about 15 cups.

Nutrition Facts (per cup): 199 calories; 5.3 g. fat; 61 mg. cholesterol; 596 mg. sodium;  21.8 g. carbohydrate; 4.6 g. fiber; 15.9 g. protein

Result: This dish showcases comfort food and I can certainly see why Mr. P requests this soup when sick. It’s certainly not fancy or “healthy”, but it is good…and good for the soul! Enjoy!

Now I am selfishly hoping the virus doesn’t get passed along to me! I hate being sick!

I got everything crossed off my to-do list yesterday, except lesson planning. I did my meal planning for the week, grocery shopping, long-run (5.75 miles), and online traffic school all while being lazy watching movies with Mr. P all day (I think I’ve had enough Rambo for a lifetime, however)! 😀

    Hope Mr. P is feeling better! There is nothing better than comfort food from childhood to make you feel better! Oh, and Mr. P is very lucky to have such a nice wife to make his childhood soup! 🙂

    Ooo I’ve never thought of making a chicken noodle soup into a creamy version. I am actually more of a creamy fan vs broth! Hope your weekend is going great!

    Aww, sorry to hear Mr. P is not feeling well, but at least he has a wonderful wife to make him soup 🙂 There’s really nothing like a hot bowl of soup when you’re sick, and chicken soup will fit the bill! I always request massages when I’m sick – although I haven’t had a cold in 2 years, so I think I’m getting gypped! 😉

    Also, it’s been nearly 8 years since Peter and I first met, too. Wow, time flies! Hope Mr. P feels better soon!

    Sorry the hubs is sick! Sometimes the simple soups taste the best. I am making two soups today – Italian wedding and a cauliflower cheese for my lunches this week.

    It’s rare that I am sick, but I always want Campbell’s tomato soup and grilled cheese. Tony cannot stand tomato soup, so he does his best not to throw up when fixing it for me!

    I have to admit, since I started eating healthier and making sure I got a flu shot each year, I am rarely sick…and can often, if I feel a cold or virus coming on, fight it off….(now let’s hope I didn’t jinx myself my making that statement…what were you asking about superstitions the other day? lol ) I guess my number one request would be hot tea and maybe gingerale and saltines.

    Simple and easy, those are the recipes I love best~! My number one request when I’m sick is Daddy’s special tea-we’ve all tried to replicate it but only my dad can make his hot tea when I’m sick!

    That soup seriously looks comforting and super creamy! I could just cuddle up with a bowl of that on a rainy, cold night.

    When I don’t feel well I just want oatmeal. My husband always, always, always wants condensed chicken noodle soup. I allow 🙂

    Yum Nicole! Anything with sour cream is a winner in my eyes! Wish I had the ingredients on hand to make this tomorrow. Expecting lots of ice and snow in St. Louis. I would run to the store to get all the ingredients, but after 3 stops to the store in less than 2 days, I will have to save this one till next week. Hope he feels better 🙂

    In my family the favorite comfort food is tuna casserole. Also not blog-worthy or optimal nutrition.. I believe there’s a can of cream of mushroom soup, can of tuna… but oh-so-good. 🙂 P.S. love the food photos here.
