Crock Pot Steel Cut Oats w/ Peaches…and Pineapple!

I want to start today’s post off with a little bit of excitement. Well, it excited me anyways.

Pineapples!

Kroger had pineapples on sale 10 for $10! Be still, my heart!! I called Mr. Prevention on my way out of the parking lot. He probably thought I’d won the lotto with the excitement in my voice. Nope, just $1 pineapples! Woot! 😀

I enjoyed last week’s pre-made breakfast, Quiche Cornbread, so much that I wanted to make another pre-made breakfast this week! With little time on Sunday after a late night hockey game, I settled on a really quick crock pot breakfast.

Crock Pot Steel Cut Oats with Peaches adapted from My Kitchen Adventures & Friends for Weight Loss

2 cups steel cut oats
2 cups coconut milk
1 cup skim milk
3 1/2 cups water
2 cinnamon sticks
1 lb frozen peaches
1/4 tsp salt

Directions:

Spray crock pot with non-stick cooking spray. Combine all of the ingredients in the crock pot and stir well. Cook on low 7-10 hours. Sweeten with your choice of sweetener (I used 1 packet of Truvia). Serves 5 (1 1/3 cup per serving).

Nutrition Information (per serving): 323 calories; 5.4 g. fat; 1 mg. cholesterol; 122 mg. sodium; 55.4 g. carbohydrate; 7.8 g. fiber; 9.2 g. protein

Result: This was good and very filling! It’s not THE BEST oatmeal ever, but you can add in any goodies to make it THE BEST oatmeal ever 😉 I would suggest ground cinnamon, honey or agave, fresh fruit, nuts, seeds, etc. I love that it’s low in fat and sodium and high in fiber. While most breakfasts don’t tide me over for longer than 4-5 hours, this kept me satisfied from 6:30am to 12pm. Enjoy!

    Your reaction to the pineapples is TOO funny! FIVE pineapples! That really is like winning the lottery, isn’t it? 😉 I like pineapple best raw, but I’ve also had it cooked into oatmeal with peanut butter, or stir-fried with chicken, or pureed into baked goods (sooo good!). I can’t wait to see what you come up with – I need ideas, too! 🙂

    Your blog does look gorgeous, Nicole! Congrats!! And congrats on scoring $1 pineapples…I’m more than a little jealous! 😉 The oats look fantastic…one of my favs with pineapple is teriyaki chicken with grilled pineapple…if you have an indoor grill pan it might be worth trying! 🙂

    Steel cut oats in the crock pot are awesome – cleaning the crock pot, not so much! I’ve found that I can set my crock pot on warm and the oats will be good to go in 5ish hours. Bananas, apples, maple syrup, cinnamon and raisins is a good combo.

    I missed a great sale on pineapple at my grocery store last week – your blog just reminded me of that! Bummer.

    I agree…I added in some honey, cinnamon and some ff creamer to mine….but it was really easy and nice to wake to a warm breakfast already done…plus it makes a ton, so you can heat and eat all week long1 lol

    OMG…what a deal on those pineapple!!! maybe I can find a deal like that around here today, as my fruit bowl is officially empty and I need to refill it pronto!

    I got the same pineapple!! 10 for $10 is insane! Made me wonder about them hahahaha. I love just eating pineapple cold OR on the grill and then put in salads! Really rbings out the sweetness!!

    There must be a bumper crop of pineapple somewhere – it was on sale here too! I bought some and have been mixing it with yogurt and putting it on pizza (with ham of course….yum!)

    Crockpot recipes would never be judged by looks alone… They always turn out so tasty! I’ve never actually made oats in my crockpot but am all about time saving breakfast recipes. Love ygr blog look girl!

    Yes, your blog DOES look great Nicole!! I love it.
    One of these days I will start spending more time on my blog, and give it a makeover. Right now I am swamped at work, plus I have so many side projects, I’m slightly overwhelmed (but in a good way!).
    I don’t eat pineapple because of FODMAPs. Sad, right?! I love it. Same with peaches, which makes me even more sad.
    I do need a crock pot though, as I Would love to wake up to freshly made steel cut oats!

    I made this overnight for breakfast this morning, using the frozen fruit I had on hand. I halved it and used my small crockpot. It came out great (sprinkled a little Splenda on top), and saved me the extra few minutes it takes to make in the morning. Even my husband said he’ll have a bowl today!

    A question.. perhaps it’s really naive of me, but when you say “coconut milk,” are you talking the stuff that comes in the carton (by the soy milk, almond milk, etc) or the stuff that comes in cans? Is it the same? I have no idea.. I’ve got all other ingredients on hand for an overnight breakfast for when the baby is here! Steel cut oats are great for nursing mommies!!

      Not naive at all! I should’ve specified. This is talking about the coconut milk in the cartons – I usually buy the SO Delicious brand (vanilla). The type in the cans is much, much thicker and higher in calories/fat and used in various creams and sauces, usually. Hope that helps – I love this recipe!
