Wednesday already!? Always a good thing 😀 With no class on Monday thanks to Martin Luther King Jr. Day, this week has been easy breezy compared to the last few. And tonight, even better…my students are taking their first exam. I do hope they’ve been preparing…whomp whomp!
Thanks for all of your pineapple suggestions! I agree, fresh pineapple is probably my favorite way to enjoy the stuff, but I may have to try my hand at Hawaiian pizza this weekend. I know Mr. Prevention won’t be first in line for a slice, but maybe I can convert him? 😉 He’s never been a fan of ham, but there’s just nothing like Hawaiian pizza in my book…especially homemade!
So I mentioned that Mama Prevention had planned to try a few healthy, Taste of Home recipes while I was in Chicago last weekend. We actually made this recipe on Saturday night but I enjoyed it SO much that I had to make it this week. Delicious, and quick, easy, and healthy. Win…win…win!
Hearty Chipotle Chicken Soup from Taste of Home
1 large onion, chopped
1 Tbsp canola oil
4 garlic cloves, minced
4 cups reduced-sodium chicken broth
2 cans (15 ounces each) pinto beans, rinsed and drained
2 cans (14-1/2 ounces each) fire-roasted diced tomatoes, undrained
3 cups frozen corn
2 chipotle peppers in adobo sauce, seeded and minced
2 tsp adobo sauce
1 tsp ground cumin
1/4 tsp pepper
2 cups cubed cooked chicken breast
1/2 cup (8 Tbsp) fat-free light sour cream
1/4 cup minced fresh cilantro
In a Dutch oven, saute onion in oil until tender. Add garlic; cook 1 minute longer. Add the broth, beans, tomatoes, corn, chipotle peppers, adobo sauce, cumin and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes.
Stir in chicken; heat through. Garnish with sour cream; sprinkle with cilantro. Yield: 8 servings (about 1 2/3 cup each w/ 1 Tbsp sour cream).
Nutrition Information (per serving): 281 calories; 5.8 g. fat; 33 mg. cholesterol; 450 mg. sodium; 30 g. carbohydrate; 7.6 g. fiber; 23 g. protein
Result: Delicious! I recommend a bit more adobo sauce if you like it spicy, but this soup is packed with flavor regardless. It is low in calories and high in fiber and protein so it is comes with a lot of staying power. Mr. P said it reminded him of tortilla soup, and I see some similarities, too. Enjoy!
In weight-loss news, I am down 4.6 pounds in the past 2 weeks! I am very pleased! I have been VERY aware of portion sizes, increasing my exercise, and getting in plenty of water. I hope the downward trend continues! Thanks again for all of your support!

My favorite day is probably Thursday. I have that mentality of “I can stay up later since there’s only one more work day to get through”, and I also love Thursday night TV. Grey’s Anatomy, Private Practice, and Jersey Shore, anyone?
