Low-Fat Baked Jalapenos Poppers

Happy Tuesday! I hope everyone’s weeks are starting out swell.

Mr. Prevention got me a pretty Valentine’s Day bouquet for Valentine’s Day :-D. I love fresh flowers – they make me so happy! These were a bit wilted after sitting out in the Ohio winter all day long :(, but I think I’ve revived them a bit!

Now that I’m thinking of it and looking at these jalapeno popper photos, it’s ironic Green Bay won — the colors of these jalapeno poppers closely resembles those of the Cheeseheads. Go figure.

This week is INSANELY busy and I can’t believe I am behind enough to have not shared the last of our Super Bowl snackies. Glad I was going through my camera and the photos otherwise these would’ve been forgotten! Shame on me. But here we go!

…And a Corona Light is the perfect way to cool down from these jalapeno poppers…these much lightened-up jalapeno poppers! 😀

Low-Fat Baked Jalapeno Poppers slightly adapted from Gina’s Weight Watcher Recipes

10 jalapeno peppers, sliced in half lengthwise
5 oz light cream cheese
5 medium scallions, green part only, sliced
2 oz shredded low fat (2%) sharp cheddar
1/2 cup egg beaters or egg whites, beaten
3/4 cup panko crumbs
1/8 tsp paprika
1/8 tsp garlic powder
1/8 tsp chili powder
salt and fresh pepper
non-stick cooking spray

Directions:

Preheat oven to 350 F. Cut peppers in half lengthwise and scoop out the seeds and membrane.

Combine cream cheese, cheddar and scallions in a medium bowl.

Combine panko, paprika, chili powder, garlic powder, salt and pepper in another bowl.

Fill peppers with cheese filling with a small spoon or spatula.

Dip peppers in egg beaters. Place pepper in panko mixture, using a spoon to make sure all the seasoning doesn’t fall to the bottom of the bowl.

Spray a baking pan with oil spray. I lined my pan with parchment for easier cleanup. Lightly spray the peppers with a little more oil spray.

Bake in the oven for about 20-25 minutes, until golden and cheese oozes out. Remove from oven and serve immediately. Yield: 20 jalapeno poppers.

Nutrition Information (per popper): 41 calories; 2.3 g. fat; 4 mg. cholesterol; 103 mg. sodium; 2.8 g. carbohydrate; 0.4 g. fiber; 2.5 g. protein

Result: Not for the weak! These are a fun addition to any appetizer spread and ideal for game day. We enjoyed these healthy jalapeno poppers on Super Bowl Sunday and they reheated beautifully as leftovers. Mr. P dipped them in marinara (not sure about that one, myself…), but I enjoyed them just as the are – yum! Perfect with an icy cold beer! 😀

I am sooo looking forward to my workout today…and my weigh-in! It’s been a good week. I’ve exercised extreme MODERATION with the Red Velvet Cake with Cream Cheese Frosting and all of the other V-day goodies that have been floating around! 😀

    I didn’t have chocolate yesterday! How lame is that??? The cookie in my free lunch at work was cranberry walnut (fruit in cookies makes me gag), so there went that… ugh!

    Oh well- it’s not like I don’t have chocolate every other day of the week… 🙂

    Oh I’m glad to see you had such a fun V Day! I wish I had exercised more moderation…oh well. Today is a new day!

    Oh, I should make these for my husband. He loves spicy stuff. And bar type food. I didn’t eat any straight up chocolate but I ate a brownie yesterday.

    No chocolate for me yesterday, which is a minor miracle. Those poppers look great. I used to think using the entire jalepeno would be too hot but I saw on The Food Network that as long as you remove the seeds it’s mild enough. Who knew?!

    That was sweet of Mr p to get you some flowers. Jacob would love these poppers! I’d definitely need a beer to help combat spice. I can’t handle the heat!

    I had a tiny bit of chocolate on the dessert that I had last night. I am impressed you are able to have such self control around red velvet! I have no self control when it comes to red velvet anything!!!

    Hi! I made the jalapeño poppers today… I have not cooked them yet tho…. I’m sure they’ll be great! I’m wondering though – the Panko would not stick to the underside (skin) of the jalapeño. Any suggestions?

      @Melanie bread crumbs stick to both sides if you dip the poppers in all purpose flour before bread crumbs.
