Happy Tuesday! I hope everyone’s weeks are starting out swell.
Mr. Prevention got me a pretty Valentine’s Day bouquet for Valentine’s Day :-D. I love fresh flowers – they make me so happy! These were a bit wilted after sitting out in the Ohio winter all day long :(, but I think I’ve revived them a bit!
Now that I’m thinking of it and looking at these jalapeno popper photos, it’s ironic Green Bay won — the colors of these jalapeno poppers closely resembles those of the Cheeseheads. Go figure.
This week is INSANELY busy and I can’t believe I am behind enough to have not shared the last of our Super Bowl snackies. Glad I was going through my camera and the photos otherwise these would’ve been forgotten! Shame on me. But here we go!
…And a Corona Light is the perfect way to cool down from these jalapeno poppers…these much lightened-up jalapeno poppers! 😀
Low-Fat Baked Jalapeno Poppers slightly adapted from Gina’s Weight Watcher Recipes
10 jalapeno peppers, sliced in half lengthwise
5 oz light cream cheese
5 medium scallions, green part only, sliced
2 oz shredded low fat (2%) sharp cheddar
1/2 cup egg beaters or egg whites, beaten
3/4 cup panko crumbs
1/8 tsp paprika
1/8 tsp garlic powder
1/8 tsp chili powder
salt and fresh pepper
non-stick cooking spray
Preheat oven to 350 F. Cut peppers in half lengthwise and scoop out the seeds and membrane.
Combine cream cheese, cheddar and scallions in a medium bowl.
Combine panko, paprika, chili powder, garlic powder, salt and pepper in another bowl.
Fill peppers with cheese filling with a small spoon or spatula.
Dip peppers in egg beaters. Place pepper in panko mixture, using a spoon to make sure all the seasoning doesn’t fall to the bottom of the bowl.
Spray a baking pan with oil spray. I lined my pan with parchment for easier cleanup. Lightly spray the peppers with a little more oil spray.
Bake in the oven for about 20-25 minutes, until golden and cheese oozes out. Remove from oven and serve immediately. Yield: 20 jalapeno poppers.
Nutrition Information (per popper): 41 calories; 2.3 g. fat; 4 mg. cholesterol; 103 mg. sodium; 2.8 g. carbohydrate; 0.4 g. fiber; 2.5 g. protein
Result: Not for the weak! These are a fun addition to any appetizer spread and ideal for game day. We enjoyed these healthy jalapeno poppers on Super Bowl Sunday and they reheated beautifully as leftovers. Mr. P dipped them in marinara (not sure about that one, myself…), but I enjoyed them just as the are – yum! Perfect with an icy cold beer! 😀
I am sooo looking forward to my workout today…and my weigh-in! It’s been a good week. I’ve exercised extreme MODERATION with the Red Velvet Cake with Cream Cheese Frosting and all of the other V-day goodies that have been floating around! 😀
