If my blog had a “theme” it would be breakfast and/or buffalo chicken. Do you, my dear readers, concur? 😉
I do apologize if I bore you at time, but there’s no denying my love for all things breakfast & buffalo saucy. If those were food groups, I would have a very well balanced diet 😉 I kid. My breakfast this week has been smoothies — frozen bananas (the most “popular” US fruit, by the way!), berries, and pineapple blended with 0% Fage, Silk vanilla coconut milk, and a splash of Crystal Light. And before my spinach turned slimy, a big handful of spinach! YUM! Sipping on a fresh fruit smoothie makes my drive to work much more enjoyable, along with the accusations being made about Ohio State head coach, Jim Tressel, on my morning radio station. Here in Columbus, the man is a God who can do no wrong. *eye roll*
But let’s talk about the flapjacks. And let’s not base your review on these photos. Unlike other bloggers, I find pancakes to be quite non-photogenic. They’re the problem, not me.
I love protein in the morning. Without it, I’m grumbly by 10am and that’s just no way to live. Hungry me is not a nice me, that much I know. I also know that I’ll be finding something (likely unhealthy) to eat in the break room before I grumble my way through the morning. So, satiety is good and these pancakes certainly do the trick.
They’re also really, really easy. Easier than even your standard flapjack, I’d say. And it makes one hearty portion that comes in at a mere 300 calories and a whopping 29 grams of protein and 5 grams of fiber! I’m lovin’ it.
The fact that they’re amazing is just the icing on the cake. Quick & easy, healthy, and good? Yes please, thankyouverymuch!
Protein Pancakes from Meals & Moves, as seen on Loser for Life
1/2 cup old fashioned oats
1/2 cup low-fat (2%) cottage cheese
1/2 cup egg substitute
1/2 tsp vanilla extract
1/2 tsp baking powder
1/2 tsp cinnamon
dash of salt
Place ingredients in blender or food processor. Process until smooth. Let batter rest for about 5 minutes. Heat large nonstick skillet over medium high heat. Coat with cooking spray, then pour batter into skillet making pancakes about 6 inches in diameter. Cook until golden and flip. Yield: 1 serving (4 pancakes).
Nutrition Information (per recipe/serving): 300 calories; 5 g. fat; 15 mg. cholesterol; 930 mg. sodium; 34 g. carbohydrate; 5 g. fiber; 29 g. protein
Result: I think what I love most about these pancakes is the fact that they have a flavor similar to French toast because of the egg content. I was skeptical about these, but I am so glad I braved the unknown and discovered a protein-rich, low-calorie breakfast for one! Of course you could also double the recipe, or quadruple it for a crowd 😀 Enjoy![/print_this]
And…Friday! Finally! TGIF! I wish it were just this week that has been brutal, but I’m ready to move on from March and welcome April into my life. Did I mention it snowed last night? Well, it did. But I’m still planning on starting my “garden” seeds indoors this weekend!! 😀
Mr. Prevention has ruled out a garden because of a much smaller backyard than our house in Tulsa, so I am planning to use several planters as my “garden” this year. I am also toying with the idea of joining a CSA. Decisions, decisions…

5 planters? So hard to decide! Bell peppers, plum tomatoes, zucchini, sweet peas, and cayenne or jalapeno peppers. Ok, maybe not toooo hard to decide, LOL. I don’t belong to a CSA but would love to!
I’m with you on the protein in the morning! I’m finally learning that about myself 🙂 Eggs or my usual yogurt bowl get kinda boring, so I’m glad that I have these pancakes to go to! I just made them with toasted oat bran instead of ground oats the other day and they were delicious! Very hearty!
I don’t belong to a CSA, but I’d love to! I’ve done planter gardens before and find that tomatoes, small cucumbers, peppers, string beans and herbs seem to do the best!

My favorite things to grow are tomatoes, cucumbers (I love the little round ones!), lettuce, and lots of herbs. That’s really all I have room for. Enjoy your planter boxes!
I’ve belonged to a CSA for over a year, and I really like it. We are of course spoiled in California with year-round produce. While I love my CSA, I have to say that not every box is “great.” For me it’s more that it all evens itself out… Plus, I love supporting local farmers and that’s a big reason I joined. Finally, the produce is always very dirty (which is normal as it grows in dirt!). I always tell people to be prepared to wash everything very well (which you should do anyway with all produce) to really get all the dirt off…

We did belong to a CSA last Spring – LOVED IT. Except for all the kale/chard we got – there was a lot of it and we were not fans. You can only eat kale chips so many nights of the week!
I think we might give it a go again this year, but find someone who likes the stuff we don’t and split it. Or, we will just continue with our trips to the farmers markets.

Thanks for the protein pancake recipe. I see them on so many blogs, I MUST try them soon. As for the planters….I’d have basil in one, other herbs in the second, tomatoes in the third, spinach lettuce and arugula in the fourth so I’d always have fresh salad greens and finally carrots, because NOTHING tastes as good as a just picked carrot (complete with a bit of dirt! 🙂 ) Have a great day.
I just started my seeds inside this week too! I don’t belong to a CSA but I get a weekly local, organic delivery for fruits and veggies. I think it’s cheaper and I can pick out what I want! Have a great weekend!
well….I think I know what I am making for my breakfast today! 🙂 I have about a 1/2 cup of ff cottage cheese I need to use up anyway!!
I usually do container gardens because our yard is so shady and we have a lot of clay in our ground. Tomatoes are a MUST both bigger and grape. Herbs are a must as well. ( I have chives and oregano and parsley in the ground, but put mint in one container and usually put rosemary, basil and thyme in another) peppers grow pretty decent in this climate too…jalapenos and bell.

I saw those pancakes on Marisa’s site too – I have them on my menu for next week, except I am adding blueberries and lemon zest to my batter – I love that combo!
I tried to garden for several years – I have an acre lot. What I didn’t count on was all the vermin that would eat my veggies before I got to them – even though the garden was surrounded by chicken wire!
I loved growing green and red peppers, jalapenos and tomatoes. Now I just do herbs in planters – the animals don’t eat those. 😀
We can’t have a garden either, and we are moving soon anyway so that would not be good to have started and then have to leave it. Sorry you got snow. I would plant tomatoes, cucumbers, peppers, and if I could have a peach tree I would want one of those. I think I would rather grow as many fruits as I could, like I might need an orchard or something. I like the addition of the cottage cheese to the pancakes.

Last time I made protein pancakes (um…only time, I guess?) I didn’t blend it enough because I could definitely taste the cottage cheese. 🙁 I need to get a food processor and attempt it again, because I LOVE pancakes but they don’t fill me up without protein!

Gosh i’ve been slacking on even thinking about my garden this year. I need to clean up from last year still. But My top 5 picks would be tomatoes, cucumber, kale, Swiss Chard and sugar snap peas.

I would plant eggplant and more eggplant, because I have to cook eggplant nearly every day when it’s in season and the fact that it won’t grow in my Georgia clay backyard makes me yearn to grow it even more… I’m probably a wee bit obsessed. 🙂 I don’t currently belong to a CSA but I’m hoping there will be one in our area when we move to Ohio!! And hopefully I’ll be able to grow eggplant too! 🙂

My husband loved these pancakes. I didn’t love them but thought they were super filling. I am not a huge fan of French toast and these definitely had a similar flavor. I’m going to try freezing a batch so they can be reheated for a quick breakfast.

I’ve frozen pancakes before and had good results – I’ll let you know if I have any issues. These will definitely be in my husband’s regular breakfast rotation!
