Strawberry Doughnuts

Happy Saturday!

The breakfast and/or buffalo chicken theme continues with today’s post — more baked doughnuts! People, I’m telling you…doughnut pan. Best $6.99 I’ve spent in a LONG time.

I think I need a second doughnut pan, even. Thank goodness I only have two mouths to feed…

I whipped these up on Monday morning as I had a later start to my day. Not only are they whole wheat, but strawberries can be currently be found for $1/lb at my local grocer. Score!

Now, I can’t say these are my favorite doughnut, but I think that’s because they’re more of a muffin in doughnut form. Nothing wrong with that, though. 😀 Just don’t plan to have a comparison to Dunkin Donuts, that’s all I’m saying.

Of course you could always add a glaze to unhealthify (not a word, go with it) and jazz things up. More sugar = jazz. Mmmm…love jazz.

Or keep ’em clean. Whole wheat, healthy, and sinless. I mean 87 calories and 1.3 grams of fat for a doughnut? It’s hard to pass up.

Strawberry Doughnuts slightly adapted from Stetted and Stephanie Cooks

1 cup whole wheat flour
1/3 cup sugar
1 tsp baking powder
1/4 tsp cinnamon
1/2 tsp salt
1/3 cup skim milk
1/4 cup egg substitute
1 Tbsp unsalted butter, melted
1/3 cup diced strawberries
1 Tbsp pure maple syrup

Directions:

Preheat oven to 425 F and spray a doughnut pan with non-stick cooking spray.

In a small bowl, stir together strawberries and syrup. In a large bowl, mix together dry ingredients. In a small bowl, mix milk, egg, and butter, stirring until just combined. Combine wet ingredients into dry and add berries.

Fill each doughnuts well about 2/3 full. Bake for 7-9 minutes, until tops spring back. Yield: 10 doughnuts.

Nutrition Information (per doughnut): 87 calories; 1.3 g. fat; 0 mg. cholesterol; 179 mg. sodium; 17.2 g. carbohydrate; 1.4 g. fiber; 2.5 g. protein

Result: Good, but probably not our favorite. These are best when fresh & warm and don’t do as well as leftovers like some of the other doughnut recipes I’ve tried. I think using half whole wheat and half all-purpose or a whole wheat pastry flour would help to lighten the density of the doughnut — they have that very whole wheat feel and taste. I am going to play with this recipe some and see if I can’t come up with a fluffier, less dense strawberry doughnut!

Last night was spent crying over Illinois’ loss in the Big Ten Quarterfinals watching basketball and making Biz’s New York-Style Bagels – so good! And a much needed beer after another long week. I am very much so looking forward to day light savings! Bring on the SUN!

    Seriously?! Under 100 calories?! I need to share these with my co-workers at MD! They are all telling me it’s so hard to pass up the bakery donuts. I wonder what they would say about these. I should seriously make them one day. They look delicious!!

    Haha! I just posted another mini baked donut recipe too! I love my pan! I’m thinking about buying a full size one too ๐Ÿ™‚ Probably not a good idea. Your pics look great!

    Given how much money I spend on ridiculous foodie things, I really should just go ahead and purchase a donut pan. Way more useful than most of the things I purchase!

    These donuts look mega delish. What a great way to add a fruity twist to breakfast! And at only 87 cals a pop – a HEALTHY fruity twist!

    Those are beautiful! I could see why they’d be dense. I don’t think I’ve ever had a fully whole wheat doughnut. I want a doughnut pan now!

    I really think I need a donut pan. These look great but I can see why it’s more like a muffin. We don’t really have anything planned this weekend, but we found a tuna performance last night that was cool. A tuna is a university musical group (I guess tunas can form anywhere but it is most common with Universities) that sings and plays various guitars and percussion. I will get videos up soon on my blog.
