I am feeling 90% better physically and officially off the pain meds. Those can zonk a girl out for days, I’m tellin’ ya. I was feeling tip-top last night and even made DINNER! A dinner from last week’s menu: Crispy Shrimp Tacos with homemade Mexican Rice. More on that tomorrow. But man, it felt good to make a mess in the kitchen after the better part of a week. Sadly, I was still a one-man show as far as clean-up duty is concerned. Figures.
These cookies just couldn’t be passed up. I made them yesterday afternoon when I just couldn’t nap another second. I had seen the recipe late last week and they have been calling for my attention ever since. Make me…make me…
Oh trust me, cookies. I wanted to. From the moment I laid eyes on you and your ingredient list. Game on. Glad our stars have aligned and you have brought joy to my taste buds, tummy, and waistline. How ever do you do it??
1 cup whole wheat flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/2 cup packed brown sugar
1/2 cup granulated sugar
1/2 cup solid coconut oil (if liquified, just refrigerate for awhile)
1 large egg at room temperature
1 tsp vanilla extract
1 Tbsp coconut milk
1 cup old fashioned or rolled oats
1 cup raisins
Preheat oven to 350 F.
In a bowl, mix the whole-wheat flour, baking soda, baking powder and salt. Set aside.
In the bowl of your stand mixer, mix the brown sugar and granulated sugar together.
Next, cream the sugar with the coconut oil until light and fluffy. Add in the egg, vanilla and milk and mix until smooth.
Mix the dry mixture into the wet until blended well. Once smooth, stir in the oats and the raisins.
Grease a cooking sheet or line with parchment paper. Using a tablespoon size cookie scoop, scoop the dough onto the sheet and place 2 inches apart.
Bake in preheated oven for about 11-13 minutes or until edges are golden brown. Yield: ~ 3 dozen (I got 34 cookies).
Nutrition Information (per cookie): 87 calories; 3.7 g. fat; 6 mg. cholesterol; 62 mg. sodium; 13.4 g. carbohydrate; 0.8 g. fiber; 1.1 g. protein
Result: Thumbs up from the peanut gallery & company! Mr. P says, “For healthy cookies they’re good.” I would like to argue that statement as he doesn’t seem to recall telling me they were really good before the nutrition stats were calculated. Because let’s be honest, nutritional make-up is a far secondary concern when sugar and flour are concerned. Though these cookies do omit butter and substitute in coconut oil, and have a fabulous end result that is both chewy and crunchy with lots of oat and raisin goodness!
