Whole Wheat Oatmeal Raisin Cookies + Weekly Menu

It’s extremely possible, almost likely, that the above photo is blurry. Apologies. Your photog and wannabe chef is still a bit blurry. However, I am in a lot less pain after being refitted for a lens last night. Good job, self. Way to know something was really wrong and you didn’t listen to horror stories on the Internet telling you that that’s “just how it feels…”

I am feeling 90% better physically and officially off the pain meds. Those can zonk a girl out for days, I’m tellin’ ya. I was feeling tip-top last night and even made DINNER! A dinner from last week’s menu: Crispy Shrimp Tacos with homemade Mexican Rice. More on that tomorrow. But man, it felt good to make a mess in the kitchen after the better part of a week. Sadly, I was still a one-man show as far as clean-up duty is concerned. Figures.

These cookies just couldn’t be passed up. I made them yesterday afternoon when I just couldn’t nap another second. I had seen the recipe late last week and they have been calling for my attention ever since. Make me…make me…

Oh trust me, cookies. I wanted to. From the moment I laid eyes on you and your ingredient list. Game on. Glad our stars have aligned and you have brought joy to my taste buds, tummy, and waistline. How ever do you do it??

Whole Wheat Oatmeal Raisin Cookies adapted from A Bicycle Built for Two via Cathy’s Kitchen Journey

1 cup whole wheat flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/2 cup packed brown sugar
1/2 cup granulated sugar
1/2 cup solid coconut oil (if liquified, just refrigerate for awhile)
1 large egg at room temperature
1 tsp vanilla extract
1 Tbsp coconut milk
1 cup old fashioned or rolled oats
1 cup raisins

Directions:

Preheat oven to 350 F.

In a bowl, mix the whole-wheat flour, baking soda, baking powder and salt. Set aside.

In the bowl of your stand mixer, mix the brown sugar and granulated sugar together.

Next, cream the sugar with the coconut oil until light and fluffy. Add in the egg, vanilla and milk and mix until smooth.

Mix the dry mixture into the wet until blended well. Once smooth, stir in the oats and the raisins.

Grease a cooking sheet or line with parchment paper. Using a tablespoon size cookie scoop, scoop the dough onto the sheet and place 2 inches apart.

Bake in preheated oven for about 11-13 minutes or until edges are golden brown. Yield: ~ 3 dozen (I got 34 cookies).

Nutrition Information (per cookie): 87 calories; 3.7 g. fat; 6 mg. cholesterol; 62 mg. sodium; 13.4 g. carbohydrate; 0.8 g. fiber; 1.1 g. protein

Result: Thumbs up from the peanut gallery & company! Mr. P says, “For healthy cookies they’re good.” I would like to argue that statement as he doesn’t seem to recall telling me they were really good before the nutrition stats were calculated. Because let’s be honest, nutritional make-up is a far secondary concern when sugar and flour are concerned. Though these cookies do omit butter and substitute in coconut oil, and have a fabulous end result that is both chewy and crunchy with lots of oat and raisin goodness!

If you haven’t heard the news, my friend & fellow RD/blogger, Erica of The Healthy Junky, recently got engaged. Congrats, Erica!!

I am working on a weekly menu right now and this is what I’m thinking. We are in DIRE need of a grocery shopping trip (no milk or coconut milk!? EMERGENCY!!!). I am in use-up-what’s-in-the-freezer mode, so we have most of this week’s ingredients on hand.

Weekly Menu: March 21st-24th

Question: Have you ever baked with coconut oil in place of butter, etc.?

I look forward to catching up with everyone and blogging this week…in small doses for my weary eyes 😉 I feel as though I’ve been in a coma (well, pretty close!) for far too long and I want to see what’s going on 😀

    Glad you’re doing better Nicole.
    The cookies sound delicious. Nick would love them too (and yes, I think I would wait until DAYS after to tell them they were “healthier”). That word automatically makes him subtract several points (men!). I’ve actually never used coconut oil, not for anything. It just weirds me out that we sell it in our supplement section at work. I can’t imagine cooking with it. Although, I need to try it one time.

    So good to hear that you are doing better! The pain and boredom of the surgery recovery must have been the pits for you. I’m always sympathetic to surgical patients because I have no idea what it would feel like to recover from any surgery (particularly eyes! that must be kind of weird) but I imagine it’s not fun.

    Yum. I love the idea of putting coconut oil in these. I bet that adds a wonderful touch of flavor. Oatmeal raisins are almost always the healthier option, but they taste so good too. Win. Glad you’re feeling better. The photo’s not blurry, and even if it were, that stack is impressive!

    Mmm, I need to make these! I’ve been going with my typical Banana Oatmeal Chocolate Chip the past few times so I need to change it up a bit.

    I’m intrigued with Crispy Tofu Pad Thai… sounds amazing!

    I’ve super low on coconut oil but probably have engough for a 1/4 batch. These look so tasty and ever since my husband was okay eating raisins in bagels I want to see what else he’ll eat them in.

    I am glad to hear you are getting better and were refitted for a lens. So there was something really wrong? But easily fixable? The cookies look awesome.

    I would love to hear your thoughts on coconut oil. Everything I still read on RD list serves still say bad, so I am trying to see what other RDs have to say about it and the research.
