If making cupcakes for your furbaby isn’t love enough, check out my Discover card bill this month. Pups are expensive. With Mr. Prevention traveling last week and my insane work schedule, Lily was not only at daycare on her birthday (Wednesday), but also on Monday and Friday. I believe spoiled is the understatement of the week if we’re talking about Lil Lil.
I have a mug at work that reads, “The best children have four legs.” And while that might be true, I think my first born is out an ivy league education. You know, assuming we were to give birth to a prodigy 😉 But we could’ve had a few nice trips to Hawaii…maybe even Europe…once or twice. The things we do for love…
So if you’re into spoiling your 4-legger, have at it. This recipe made 48 mini cupcakes, so bake for a bunch, halve the recipe, or freeze them for lots of future treats! Hope your favorite pup enjoys!
Peanut Butter Pupcakes from Bake Space
2 ripe bananas
2 cups water
1/2 tsp double strength vanilla
3 cups whole wheat flour
1 Tbsp baking powder
2 Tbsp honey
1/2 cup peanut butter
Preheat oven to 350 F. Spray cupcakes or mini cupcake pan with non-stick cooking spray, or line with cupcake liners.
In a large bowl, mash bananas with a fork. Add all ingredients and combine well.
Fill muffin tins to the top of the well. Bake mini pupcakes for 15 minutes or until toothpick inserted in center comes out clean. Bake larger pupcakes for 25 minutes or until toothpick inserted in center comes out clean. Allow to cool for 3-5 minutes in pan before inverting onto cooling rack. Allow pupcakes to cool completely before feeding them to your dog. Yield: 48 mini pupcakes.
