In Midwest news, where the heck did spring run off to? I do believe we had frost last night and I about froze my buns off walking to my car after teaching last night. I’m guessing the leggings and springy dress weren’t the right attire, even with a comfy grannie sweater on over top (it worked, trust me).
I believe I am willing warm weather this way in the way of dill (and dresses). I associate dill with warm summer months because I grew up eating tomatoes with dill, salt, and pepper. My dad is a dill fanatic and I’ll bet he would love this recipe. If you can get fresh dill for this recipe, you’ll be thankful that you did.
Until this recipe, I was unaware canned (wild) salmon even existed. I lead a sheltered life, I suppose. I found this salmon at Trader Joe’s for $2.99/6 ounces. While that isn’t a steal, it’s a fair price and it’s nice to have healthy, non-perishables in stock.
Potato Salmon Patties adapted from All Recipes
12 oz canned wild salmon, drained and flaked
1/2 cup egg substitute
1/4 cup dry bread crumbs
1/4 cup dry potato flakes (I used instant mashed potatoes)
1/4 medium onion, minced
1 clove garlic, minced
1/4 tsp dried dill weed or 1 tsp fresh dill, chopped
1/4 tsp celery salt
salt and pepper, to taste
2 Tbsp olive oil
In a medium bowl, mix salmon, eggs, garlic and herb seasoned dry bread crumbs, dry potato flakes, onion, garlic, dill weed, celery salt, salt, and pepper. Form the mixture into 2 inch balls, and flatten into patties about 1/2 inch thick.
Heat olive oil in a medium skillet over medium heat. In batches, cook patties about 5 minutes on each side, until lightly browned. Yield: 4 servings, 2 patties each.
Nutrition Information (per serving): 275 calories; 11.5 g. fat; 91 mg. cholesterol; 557 mg. sodium; 11 g. carbohydrate; 0.8 g. fiber; 30.3 g. protein
Results: These were VERY easy & another 15-minute meal from start to finish. For those that aren’t fond of “fishy” fish dishes, this would be an excellent choice. I topped each salmon patty with a dollop of light mayonnaise that had been mixed with a bit of dijon mustard and a few capers. Mmmm! Enjoy![/print_this]
I am all packed up and ready to head to work and then to Chicago! This weekend is Easter (obviously), but Sunday is also my dad’s birthday 🙂 My mom and I are going to make him a German Chocolate Cake — his favorite 🙂
I’m anxious to see my family and my brother who I haven’t seen in quite some time! And my Grannie who just got out of the hospital. Today can’t go fast enough! 😀
