It’s hard to believe 2 years ago today I was marrying the love of my life.
It was in Chicago, the weather was 72 and sunny and everything went right. Everything. Literally. Flawless. Of course a 2-year engagement and a bride as organized as myself (though, that trait seems to have expired), was sure to come up with somewhat of an acceptable event. Sigh. Good job, self.
Last year for our first anniversary, we were living in Tulsa. My parents had driven from Chicago to Tulsa with the top layer of our wedding cake. Somehow, some way…it arrived. Somewhat in one piece. But very tasty. A little soggy from a long defrost, but hey…it’s tradition.
And last year’s anniversary dinner was much unlike this year’s. It was refined, and expensive, and…my choice. 😉 So this year, I opted for something on the simple side…and something that was more in line with husband’s favorite foods.
Pepperoni Pizza Puffs adapted from Noble Pig, as seen on Gimme Some Oven
3/4 cup flour
3/4 tsp. baking powder
1/2 tsp. dried oregano
3/4 cup fat-free milk
1 egg, lightly beaten
4 oz. part-skim mozzarella cheese, shredded (about 1 cup)
4 oz. turkey pepperoni, quartered (about 1 cup)
1/2 cup pizza sauce (homemade or store-bought)
2 Tbsp. fresh basil, finely diced.
Directions:
Preheat oven to 375 F. Grease a 24-cup mini muffin pan. In a large bowl, whisk together the flour, baking powder and oregano; whisk in the milk and egg. Stir in the mozzarella and pepperoni; let stand for 10 minutes.
Stir the batter and divide among the mini-muffin cups. Bake until puffed and golden, 20 to 25 minutes.
Warm the pizza sauce, then stir in 1 tablespoon basil. Sprinkle the puffs with the remaining 1 tablespoon basil. Serve the puffs with the pizza sauce for dipping. Yield: 24 pizza puffs.
Nutrition Information (per pizza puff): 44 calories; 1.5 g. fat; 18 mg. cholesterol; 159 mg. sodium; 3.7 g. carbohydrate; 0.1 g. fiber; 3.8 g. protein
Result: Happy husband! Not that I’m surprised, I mean…pepperoni pizza puffs? 44 calories each? A splurge on the sodium, but worth it! Fun finger food, and cute as could be 🙂 Great as an appetizer or light entree that can be paired with something else, if desired. Easy, too! Enjoy!

As disappointing as Monday mornings are, this weekend was wonderful. The weather couldn’t have been more perfect, I got to play hockey, and go to the farmer’s market for opening week…eat meals outside, grade papers in the sun, plant flowers, and herbs and vegetables! And today, brings the stormy weather again, so it makes it a lot easier to be indoors all day and night, that’s for sure.

I’m laughing in regards to; “Not that you’ll read this”. Nick never reads my blog either, so I feel free to post pictures of him and talk about him, muahaha.
Our 5 year anniversary is next Friday and I have decoded the fact that he’s taking me to Bravo. I found a note with a phone number that said, “27th, 8pm”. I looked up the number and it was Bravo. That’s where we had our first “date”. I don’t really want to go there so I’m sort of hinting to him that I’m pretty sure we went there LAST year. I could be wrong….. oh well, it’ll still be nice!

Last year we did a triathlon on our anniversary and had friends over for hamburgers/hot dogs afterwards. This year our anniversary falls on a Monday, so we’ll probably celebrate over the weekend.

Happy Anniversary! To answer your question, if it were always my choice, I say dine out! Our 2nd year anniversary is quickly approaching too and we have no plans as of yet. I think I’ll be trying this recipe this week because I was out of fresh ideas and had no desire to browse for new stuff – I was planning for cereal, frozen turkey burgers and grilled cheese, for real this week!! ๐ This seems simple enough and looks amazing! I think couples just settle into a routine and comfort and just one another is enough…whether it be cereal for dinner and a night on the couch, or an extravagent meal out. I do think you should give these a whirl, though…so simple!

Definitely dine in – we usually do steak and lobster tails, at a fraction of the cost of going out and we don’t feel like we are being rushed – especially since our anniversary is just before Christmas. ๐

Yum yum yum!! I just made these as a quick/easy freezer meal lunch for a new mom friend. Of course hubby and I had to taste test them first and I basically had to pry them away from him so that he wouldn’t eat the whole batch! He said he didn’t think our friends would like them and asked why we had to give them away haha :).
