It’s hard to believe 2 years ago today I was marrying the love of my life.
It was in Chicago, the weather was 72 and sunny and everything went right. Everything. Literally. Flawless. Of course a 2-year engagement and a bride as organized as myself (though, that trait seems to have expired), was sure to come up with somewhat of an acceptable event. Sigh. Good job, self.
Last year for our first anniversary, we were living in Tulsa. My parents had driven from Chicago to Tulsa with the top layer of our wedding cake. Somehow, some way…it arrived. Somewhat in one piece. But very tasty. A little soggy from a long defrost, but hey…it’s tradition.
And last year’s anniversary dinner was much unlike this year’s. It was refined, and expensive, and…my choice. 😉 So this year, I opted for something on the simple side…and something that was more in line with husband’s favorite foods.
Pepperoni Pizza Puffs adapted from Noble Pig, as seen on Gimme Some Oven
3/4 cup flour
3/4 tsp. baking powder
1/2 tsp. dried oregano
3/4 cup fat-free milk
1 egg, lightly beaten
4 oz. part-skim mozzarella cheese, shredded (about 1 cup)
4 oz. turkey pepperoni, quartered (about 1 cup)
1/2 cup pizza sauce (homemade or store-bought)
2 Tbsp. fresh basil, finely diced.
Preheat oven to 375 F. Grease a 24-cup mini muffin pan. In a large bowl, whisk together the flour, baking powder and oregano; whisk in the milk and egg. Stir in the mozzarella and pepperoni; let stand for 10 minutes.
Stir the batter and divide among the mini-muffin cups. Bake until puffed and golden, 20 to 25 minutes.
Warm the pizza sauce, then stir in 1 tablespoon basil. Sprinkle the puffs with the remaining 1 tablespoon basil. Serve the puffs with the pizza sauce for dipping. Yield: 24 pizza puffs.

Result: Happy husband! Not that I’m surprised, I mean…pepperoni pizza puffs? 44 calories each? A splurge on the sodium, but worth it! Fun finger food, and cute as could be 🙂 Great as an appetizer or light entree that can be paired with something else, if desired. Easy, too! Enjoy![/print_this]
Thank you, StumbleUpon for leading me to amazing finds such as these! 😀
As disappointing as Monday mornings are, this weekend was wonderful. The weather couldn’t have been more perfect, I got to play hockey, and go to the farmer’s market for opening week…eat meals outside, grade papers in the sun, plant flowers, and herbs and vegetables! And today, brings the stormy weather again, so it makes it a lot easier to be indoors all day and night, that’s for sure.
Happy Anniversary, Mr. Prevention. Not that you’ll read this, but just know you mean the world to me! 😀
Question: Anniversary meal — dine in or dine out?
Have a great week! Look out for a killer menu! 😀
Happy Anniversary! This year will be our first anniversary and I think we’ll eat out, but after that I’m sure we’ll be eating at home:-)
Sounds perfect to me 🙂
simply amazing in my opinion. nice photography also
For your anniversary dinner, I am ordering myself some KFC delivery. 😉 I clearly lean toward Mr. P’s tendencies. Haven’t had my own anniversary meal in quite some time….
Yeah, you two are very much so alike in your food preferences! P.S. Got your email and I am so pumped! 🙂
Aww, happy anniversary!!!
I’m laughing in regards to; “Not that you’ll read this”. Nick never reads my blog either, so I feel free to post pictures of him and talk about him, muahaha.
Our 5 year anniversary is next Friday and I have decoded the fact that he’s taking me to Bravo. I found a note with a phone number that said, “27th, 8pm”. I looked up the number and it was Bravo. That’s where we had our first “date”. I don’t really want to go there so I’m sort of hinting to him that I’m pretty sure we went there LAST year. I could be wrong….. oh well, it’ll still be nice!
The pizza puffs sound fabulous, by the way.
I’ve heard great things about Bravo, and it has that sentimental meaning for you guys…always 🙂 Hey, at least he plans. I think I’ll be happy IF I get a card. Which after dropping the ball last year, he better have taken note!!!
Happy anniversary Nicole!
Thank ya! 🙂
Happy Anniversary!! For our first anniversary we were stuck in the airport and for our second I was due to have a baby any minute so we definitely went out! Who knows what we
Your wedding anniversaries keep you on your toes!!
You’re gorgeous in your wedding photos- love them!
And those puffs look sinfully delicious- like a perfect crown pleaser!
Thank you!! 🙂
Happy anniversary! 🙂
Last year we did a triathlon on our anniversary and had friends over for hamburgers/hot dogs afterwards. This year our anniversary falls on a Monday, so we’ll probably celebrate over the weekend.
I think celebrating with friends sounds like a blast! And BOO to Monday anniversaries!!
AWWWWWWWWHappy anniversary you gorgeous bride! LOve the wedding pics..thanks for sharing!
I can’t wait to make these pizza puffs! Going on the menu THIS week!!
Thank you! I hope you like them 🙂
awe… happy anniversary Nicole. It will be 20 years for myself and hubby next month…no plans for celebration…lol But that’s how it goes. I think on year 25 we should take a trip someplace! 🙂
those pizza puffs look wonderful! Going to give them a try sometime!
20 years, aww 🙂 I’m just a huge mushy mess today!! I imagine you’ll whip up something decadent for home in honor of your anniversary! 🙂
Happy Anniversary! Wow, two years – time does fly! And those pizza puffs, my kids are going to love those.
Thanks, Lisa! I’ve been meaning to email you — I hope all is well! And yes, I think any kid (of any age!) would adore these…they reheated well, too!
Happy Anniversary! To answer your question, if it were always my choice, I say dine out! Our 2nd year anniversary is quickly approaching too and we have no plans as of yet. I think I’ll be trying this recipe this week because I was out of fresh ideas and had no desire to browse for new stuff – I was planning for cereal, frozen turkey burgers and grilled cheese, for real this week!! 🙂 This seems simple enough and looks amazing! Thanks for the great meals, Nicole!
I think couples just settle into a routine and comfort and just one another is enough…whether it be cereal for dinner and a night on the couch, or an extravagent meal out. I do think you should give these a whirl, though…so simple!
Happy anniversary! Beautiful photos. So far we’ve gone out for our anniversary but this year we’re staying in. I might have to make those pizza puffs. They’re just the kind of thing my husband would love.
Husband-approved food they are!
Have a great week, Tracey 🙂
Happy anniversary! You were such a beautiful bride!
Happy Anniversary! Your wedding pictures are GORGEOUS!!!
Thank you, Katie!!
Happy Anniversary Nicole! You were such a beautiful bride!
Definitely dine in – we usually do steak and lobster tails, at a fraction of the cost of going out and we don’t feel like we are being rushed – especially since our anniversary is just before Christmas. 😀
Love the pepperoni pizza puffs!
Happy Anniversary! I love your wedding pictures – you look so beautiful and happy.
I think I could go either way for an anniversary dinner. I like going out, but I also really love staying in and making something delicious. Those pizza puffs sound really, really good. I think if it meant having those, I’d stay in. 🙂
This is so cute! Happy Anniversary, I love all the cute pics. Those pepperoni puffs look amazing 🙂
What a treat! I know I just have to make these for a weekend treat at the cabin this weekend! I’ll probably add cooked Italian chicken sausage instead as the may. Happy anniversary to you guys!
You must have won the award for best wife ever with those puffs!
Happy anniversary love. it makes me happy that you’re so happy.
I need to make these – maybe with mushrooms instead of the pepperoni. I love anything pizza related.
Happy Belated Anniversary.
My husband and I have a tradition where we have our anniversary dinner – can’t believe it will be 3 years in July!
We are eating out this year as we are celebrating both our anniversary and paying off a HUGE debt! Whoo hoo! 🙂
I love your pics by the way. We live in Chicagoland and used to take the Ridgeland stop! 🙂 I miss Oak Park!
A belated happy anniversary to you! Love the way you chose to celebrate. So far we haven’t kept up with a tradition for dining in or out on our anniversary, it’s just been whatever we feel like.
Yum yum yum!! I just made these as a quick/easy freezer meal lunch for a new mom friend. Of course hubby and I had to taste test them first and I basically had to pry them away from him so that he wouldn’t eat the whole batch! He said he didn’t think our friends would like them and asked why we had to give them away haha :).
Haha! Too cute! Your hubby and mine must have similar taste buds 😉
Made these last night, as well as some Carmelized Onion Dip. Both were wonderful, but THESE….THESE are going to be made again tomorrow!!
These are so cute AND they look super delicious! Thanks for sharing, this looks like a great recipe.
