With the warmer weather approaching, I seized the opportunity to add a kitchen gadget to the collection: a popsicle mold! Gina’s always makes me very jealous, and Estela is always whipping up colorful, healthy, and fresh popsicles for her cutie daughter.
Amazon, being both wonderful and a smart money-maker, offered up (at a discounted price, of course) a cookbook of Pops. I thumbed through it over a glass of wine Friday evening, and dog-eared nearly every recipe. They have alcohol pops…and lots of them!
I resisted the margaritas pops and vodka tonic pops and settled on Bing Cherry and Vanilla Pops. I almost always have frozen, unsweetened bing cherries on hand, as well as plain yogurt and honey. The only downside to making pops at home is the wait time, but seeing as they’re better than anything Kroger, Trader Joes, or other grocery can offer up, wait I did. Just not so patiently.
Bing Cherry and Vanilla Pops slightly adapted from Pops
2 cups bing cherries, fresh and pitted or unsweetened, frozen
2/3 cup plain fat-free Greek yogurt
2/3 cup cherry juice (I used POM Wonderful)
2 Tbsp honey
Blend or process in a food processor all ingredients. Divide into popsicle molds, ice cube trays, dixie cups, etc. Freeze for at least 8 hours, or until set. Remove from freezer 5 minutes before serving. Yield: 9 pops (3 oz each)
Nutrition Information (per pop): 55 calories; 0.1 g. fat; 0 mg. cholesterol; 9 mg. sodium; 12.6 g. carbohydrate; 0.4 g. fiber; 2 g. protein
Result: These are divine…creamy and rich, any yet, so, so healthy 🙂 The honey is the perfect touch to sweeten up the yogurt! Very easy to make, too![/print_this]
The Cubs game last night was a ton of fun – very wet & cold, but lots of fun. I got home just after 1am and I am…very tired. And in true Cubs fashion they blew their lead and ended the game with FOUR errors…and a loss. Ahhh! Is it Friday yet? My body is feeling abused after a late night hockey game on Sunday and a very late night last night. Glad there’s the weekend to recuperate!
Question: Popsicle or ice cream?
