Salmon Baked in a Foil Parcel with Green Beans and Pesto

Sounds fancy, doesn’t it? How does 3 minutes and no dishes sound? Not fancy, but fabulous. The fact that this meal was phenomenal, and incredibly healthy, is just the cherry on the cake. This recipe is for all the busy moms, or people who work long days. For the people who hate to do dishes, or want a quick meal that’s also very healthy.

Look, it’s as easy as this:

Layer.

Seal.

Bake. Voila!

Salmon Baked in a Foil Parcel with Green Beans and Pesto adapted from Jamie Oliver’s Food Revolution

3 cups fresh green beans
1 lemon
2 (6 oz) wild salmon fillets, skin on
2 Tbsp pesto (I used homemade, but prepared is fine, too!)
2 tsp olive oil
sea salt and freshly ground black pepper, to taste

Directions:

Preheat your oven to 400. Rinse and trim beans. Halve both of the lemons.

Pull out a sheet of aluminum foil, about a yard long, and fold it in half to give two layers. Put a handful of green beans in the middle of the foil. Lay a salmon fillet, skin side down, across the beans and spoon over pesto. Drizzle each filet with 1 tsp olive oil. Squeeze over juice from one of the lemons, and season with salt and pepper. Pull the aluminum foil edges together and scrunch them up to seal the parcel. Repeat these steps to make the second parcel. Place both foil parcels on a sheet pan.

Put the baking sheet into your oven and cook for 15-17 minutes. Remove the pan from the oven and let it stand for a minute before carefully unwrapping it. Either serve the parcels on plates as they are or carefully unwrap them before serving. Yield: 2 servings.

Nutrition Information (per serving): 431 calories; 24 g. fat; 108 mg. cholesterol; 410 mg. sodium; 8.5 g. carbohydrate; 4 g. fiber; 38.5 g. protein

Result: Simple, quick, light, flavorful, and very healthy! I can’t wait to make this again. Note to self: a dinner doesn’t always have to be complex and with a ton of ingredients to be divine! Enjoy!

Mr. Prevention got an emergency call from work at 3am and showered and went in. Maybe tonight will be my evening of sound rest! At least I got in a killer run (first 2 miles were torture, and it was effortless from there on out) and made this delicious meal! Because there was no clean-up and the meal was a quick one, I was settling in for the evening by 7pm. That almost never happens. Reason #294380 I love this recipe 😉

    All week you’ve been making recipes that are right up my hubby’s alley…. chocolate donuts, coffee smoothie, pretzel rolls, but this is perfect for both of us! I’ve cooked fish using this mehtod before – it is one of our go to meals in the summer. I’ve never used salmon or thought to add pesto or green beans. I think this will be on the menu next week!!!

    Have fun tonight with Gina! Your meal looks so simple, easy, and tasty! I love it! I wanted salmon so bad last night but we opted for shrimp instead (not my fave).

    Thanks for your comments on my site! You’re right, it IS hard to help others when I also struggle myself. BUT I also think it makes me a better dietitian. I deal with many people who have the same struggles and I think it makes it easier toempathize and give advice that has helped me. I also feel like I can demonstrate how I’m trying my best and while I still regress, it IS getting easier to pull through my moments self-defeat. It only shows I’m human. ๐Ÿ™‚

    No dishes? That’s my favorite! I love making homemade pizza with store bought dough because there are hardly any dishes to clean up. Hope you have a great weekend!

    Quesadillas… they’re my go to easy, simple clean up meal. I usually stir together a black bean/corn salsa to up the veggie quota & just use later in a veggie wrap.
