Confession: I love my popsicle mold as much as my doughnut pan.
I know, it’s hard to believe! Kitchen gadgets make me the happiest little cook…and dietitian, I’m tellin’ ya! The ice cream/popsicle aisle {{swoon}}…is one that I avoid. While it is clear across the store from everything else, it’s not that I’m too lazy to go. It’s the fact that I lack willpower and words like “Almond Joy” and “Heath” tend to float around labels in that aisle.
In addition to never having much freezer space to accommodate half gallons of ice cream.
In order to not cheat myself the glory that is color treats, these kiwi pops were the second popsicle recipe I made…from the cookbook Pops! And they were awesome! The perfect balance of sweet and tart! And that color…kiddos and husbands alike go nuts over such funness! And at a harmless 68 calories each, these are quite the treat without all the calories and (saturated) fat.
[print_this]Kiwi Pops slightly adapted from Pops!
1/2 cup sugar
1 1/2 cups kiwi, peeled and sliced
1/4 cup + 2 Tbsp fresh lime juice
Directions:
In a small sauce pan, combine 1/2 cup water and sugar. Stir over low heat until sugar dissolves. Allow to cool to temperature.
Meanwhile, combine the kiwi and lime juice in a food processor and process until smooth. Add the sugar water and re-process to combine.
Pour the mixture into popsicle molds. Insert sticks. Freeze for at least 6 hours.
Remove from freezer and allow to stand at room temperature for about 5 minutes before removing from molds. Yield: 9 3-ounce pops.
Nutrition Information (per popsicle): 68 calories; 0.2 g. fat; o mg. cholesterol; 0 mg. sodium; 17.7 g. carbohydrate; 1.2 g. fiber; 0.6 g. protein
Result: Tart, refreshing, and so fun! Just check out that color! These are sure to be a hit with kids of all ages…and a great idea for entertaining! If you are one to use stevia, liquid stevia (or won some in last week’s giveaway!), or other non-caloric sweeteners, you can lower the calories by subbing out the sugar. Enjoy!

I have 18 mouths to feed (off the grill) and a not-so-hot weather forecast. Reason #2981 I HATE rain! I hope the weather can hold off until later this evening (God, if you’re reading…6pm, please?)! Off to clean, cook…the whole bit! I love entertaining 🙂

I need to pick up popsicle molds for Summer or else I’m going to miss out on all these awesome popsicle recipes.
Yesterday, my daughters cut up fruit, put the chunks in the popsicle mold, pureed the rest and added it to make their own fruit pops! I thought they were brilliant!

Ok – a popsicle mold has officially been added to my list of things to buy today. Along with dog food and a water gun (for my dog who cannot behave). I’m pretty sure the cashier at the grocery store is going to think I’m crazy. ๐
