Grilled Peanut Butter Chicken

I like peanut butter…a lot. But I think you, dear readers, love it more. It seems like everyone that comes around this nook of the blogosphere loves nut butters.

And grilling.

My friend Tiffany (Hey, Tiff!) and her hubby are GRILL MASTERS. When we lived in Tulsa I always looked forward to meals at their place. Just last week Tiffany commented on my blog saying something along the lines of, “Girl, I’m disappointed in you! Where’s the grilling recipes!?”

Here’s one! Here’s one!

Admittedly, however, the grill has been underutilized this summer due to heat. And potential heat stroke with standing outside in the inferno and over open flames. So typically I have been grilling after a workout, while I’m already sweaty and gross.

Summer 2011 + grilling = hot mess…i you weren’t already.

Seeing as August 1st is MONDAY (whoa, baby…where did summer go?), it’s crunch time. Fire up those grills and slap on your favorites, folks. Add this recipe to the list, too…especially all you nut butter lovers! 😉

Grilled Peanut Butter Chicken adapted from Smuckers Peanut Butter Jar Lid, as seen on Alida’s Kitchen

1/2 cup natural peanut butter
2 Tbsp reduced sodium soy sauce
2 Tbsp lemon juice
2 Tbsp white wine vinegar
4 cloves garlic, minced
1 tsp red pepper flakes
1 tsp ginger, grated or finely chopped
1 lb chicken breast tenders

Directions:

In a bowl, prepare the marinade by mixing all of the ingredients except the chicken.

Put chicken in a Ziploc bag and pour marinade over chicken. Make sure chicken gets completely coated. Set in refrigerator for at least 2 hours.

Lightly oil grates on grill OR use a foil tray to cook chicken.

Place chicken on grill (or foil tray) and cook for 3-5 minutes per side, until chicken is cooked thoroughly. Yield: 4 servings (about 2 chicken tenders).

Nutrition Information (per serving): 248 calories; 11.8 g. fat; 55 mg. cholesterol; 314 mg. sodium; 6 g. carbohydrate; 1.3 g. fiber; 31 g. protein

Result: Tender & peanut buttery good! I don’t know that you can go wrong with marinaded and grilled chicken. Try this for something different and very flavorful! Simple, healthy, and grilled…win, win, win! Enjoy!

    I love chicken with peanut dipping sauce. So tasty! I agree with you. It has been much to hot to grill. I think fall will be our new grilling season!

    I just bought a huge box of green and red peppers and zucchini at Caputo’s for $2 – just grilled them all up to make your zucchini goat cheese dish – can’t wait!
