Every popsicle recipe I read suggests straining out the seeds and pulp of various fruits, and…I just don’t get why. That’s the beauty of a REAL fruit pop, isn’t it? The health benefits of the soluble and insoluble fibers?
Speaking of fiber. Raspberries rock! Blackberries, too.
While strawberries and blueberries offer 4 grams of fiber per cup, raspberries and blackberries come in at DOUBLE the fiber content – 8 grams per cup! I knew I loved raspberries for a reason…
So, yeah…no straining here. REAL fruit pops. Sweetened with natural sweetness from the fruit, coconut, and agave. Honey or maple syrup would work great, as well. The Greek yogurt helps to make these pops creamy and taste far richer than the nutrition facts would let on. 😉
Raspberry Coconut Pops
2 cups fresh or frozen raspberries
1/2 cup vanilla coconut milk
1/2 cup nonfat plain Greek yogurt
1/4 cup agave, honey, or maple syrup
1/4 cup unsweetened coconut flakes
Combine ingredient in a food processor and blend until well combined.
Distribute mixture into popsicle molds or dixie cups and popsicle sticks. Freeze for 6+ hours or until set. Allow to soften slightly at room temperature, about 5 minutes, before removing from molds and serving. Yield: 8 3-ounce pops.
Nutrition Information (per pop): 77 calories; 2.1 g. fat; 0 mg. cholesterol; 7 mg. sodium; 13.6 g. carbohydrate; 3 g. fiber; 1.8 g. protein
Result: These were so refreshing and naturally sweet. The Greek yogurt makes them creamy and the raspberry seeds and coconut flakes give a fun texture, letting you know the ingredients are fresh and natural. Enjoy!
Bonus: These pops confirm the fact that husband does not DETEST coconut. He wolfed these babies down so quickly I was left with the above sub-par photos. Sowwie.
Speaking of Mr. Prevention…he not only made dinner last night (while I got to workout!), but it was excellent! And he did the dishes!
