Raspberry Coconut Pops


Every popsicle recipe I read suggests straining out the seeds and pulp of various fruits, and…I just don’t get why. That’s the beauty of a REAL fruit pop, isn’t it? The health benefits of the soluble and insoluble fibers?

Speaking of fiber. Raspberries rock! Blackberries, too.

While strawberries and blueberries offer 4 grams of fiber per cup, raspberries and blackberries come in at DOUBLE the fiber content – 8 grams per cup! I knew I loved raspberries for a reason…


So, yeah…no straining here. REAL fruit pops. Sweetened with natural sweetness from the fruit, coconut, and agave. Honey or maple syrup would work great, as well. The Greek yogurt helps to make these pops creamy and taste far richer than the nutrition facts would let on. 😉

Raspberry Coconut Pops

2 cups fresh or frozen raspberries
1/2 cup vanilla coconut milk
1/2 cup nonfat plain Greek yogurt
1/4 cup agave, honey, or maple syrup
1/4 cup unsweetened coconut flakes

Directions:

Combine ingredient in a food processor and blend until well combined.

Distribute mixture into popsicle molds or dixie cups and popsicle sticks. Freeze for 6+ hours or until set. Allow to soften slightly at room temperature, about 5 minutes, before removing from molds and serving. Yield: 8 3-ounce pops.

Nutrition Information (per pop): 77 calories; 2.1 g. fat; 0 mg. cholesterol; 7 mg. sodium; 13.6 g. carbohydrate; 3 g. fiber; 1.8 g. protein

Result: These were so refreshing and naturally sweet. The Greek yogurt makes them creamy and the raspberry seeds and coconut flakes give a fun texture, letting you know the ingredients are fresh and natural. Enjoy!

Bonus: These pops confirm the fact that husband does not DETEST coconut. He wolfed these babies down so quickly I was left with the above sub-par photos. Sowwie.

Speaking of Mr. Prevention…he not only made dinner last night (while I got to workout!), but it was excellent! And he did the dishes! He served up a blackened grilled shrimp skewer with a raspberry drizzle over wild rice. It was delicious, and very healthy. WOULDN’T YOU LIKE HIM TO SHARE HIS RECIPE (AND PHOTOS!) WITH US?? 🙂

    haha, I wonder if my dad would notice the coconut. He definitely DETESTS it. Nick, however, loves it. Sometimes I forget who loves it and who hates it… When I was young I didn’t like it one but, now I love it, but I can’t have it on my IBS diet. Such a bummer.

    I am not a big coconut fan, but if the flavor is not too strong, I’ve started to enjoy it. I bet I’d love these!

    I didn’t use to like coconut. But I made a coconut cake for a going away party once because it was the persons favorite and I fell in love that day! SO yes, these popsicles sound great.

    Please tell Mr. P to post! And congrats on getting your zucchini on Tastespotting! I sent the picture to my SIL, and said “would you eat zucchini with goat cheese, raisins and pistachios?” and her response was “yes, yes & yes!” It’s going on our lunch menu next week with grilled chicken on the side. ๐Ÿ˜€

    Looks yummy! Love coconut. And yes, Mr. P needs to share. He needs to write a post directed at husbands on why they should cook for their wives (even if they think they can’t) with clear directions and the importance of doing the dishes. :0) Glad his meal worked out!!

    Ok, thats it. Im buying a popsicle mold online. I have not been able to find one in my grocery store, and its looking like it should be a mandatory item in my kitchen.

    These are in the freezer RIGHT NOW and I can’t wait! The mixture out of the blender was AWESOME.

    that right there is some serious deliciousness! I would have to strain the seeds…not a huge fan of raspberries…and I think it’s the seeds that do it for me. hmmm…I’ve got some peaches…how about peach and coconut? or maybe pineappple…yup…pineapple…oh the possibilities! ๐Ÿ™‚

    I want a husband to make me dinner! lol Saddly, mine is only capable of taking me out…I guess that isn’t that bad!

My husband claims he hates coconut too (I’ve said it before, they sound VERY much alike) but I’m going to try these anyway (when it actually warms up here) and we’ll see how it goes!     I can’t wait to make those! What are your thoughts on vanilla Greek yogurt vs plain plus sweetner? I’m not really concerned calorie wise, I just didn’t care for the cherry vanilla ones. I used plain yogurt and honey and they just had a weird taste to them…

    I think raspberry and coconut sounds awesome and looks pretty. What about blueberry coconut? Have you ever tried that? Does it work?
