My friend Cara recommended this recipe when I was looking to feed 16 hungry mouths by way of grilling. She said her family loved how moist the meat turned out. And that is key. Untreated chicken plopped on the grill usually results in one of two things 1) rubbery and/or 2) dry. And tasteless…always tasteless.
I knew this chicken was good when nearly all 16 guests grabbed for the chicken over burgers. Huh, I would’ve never guessed. Smart cookies. And they all loved it. Plates cleared, praising my Grill Master skills.

Tandoori Grilled Chicken adapted from Confections of a Foodie Bride, as seen on Cara’s Cravings
1/2 cup nonfat plain Greek yogurt
1/3 cup packed cilantro
1 heaping tablespoon fresh ginger, grated
2 cloves of garlic
1/4 tsp salt
1/2 tsp cumin
1/2 tsp ground coriander
6 boneless, skinless chicken breasts, about 5 oz each
Directions:
In a blender, combine all ingredients except for the chicken. Process until smooth. Trim the chicken breasts of any remaining fat and place in a large bowl. Pour in the yogurt mixture and stir to coat completely. Refrigerate for several hours, or overnight (the longer, the better.)
Preheat grill to medium-low heat and oil the grates or mist with nonstick cooking spray. Grill the chicken for about 20 minutes, or until cooked through, turning only once. Remove from the grill and tent with foil until ready to serve. Serves 6.
Nutrition Information (per serving): 165 calories; 1.7 g. fat; 69 mg. cholesterol; 154 mg. sodium; 1.8 g. carbohydrate; 0 g. fiber; 34.3 g. protein
Result: The perfect piece of grilled chicken? One of the best pieces I’ve ever had, anyways…delicious! Moist, juicy, and full of flavor. A definite crowd-pleaser! Simple, too! Enjoy!
