This Saturday I took a mini vacation from baked doughnuts and spoiled myself with these Whole Wheat Sour Cream Blueberry Pancakes. Admittedly, I was also 1) trying to use up sour cream before it went bad and 2) intrigued by the whole sour cream ordeal to begin with.
Since they were incredible, I’m planning to make them again and try Greek yogurt in place of the sour cream. Bump up the protein, right? 😉
I’m not very wise when it comes to the chemistry of recipes (so what if I have a minor in chemistry?!), so while the purpose of the sour cream is unbeknown to me, I do know that these pancakes were really, really fluffy and light.
Sometimes, especially after reheating, pancakes are so dense and heavy they get caught in the back of your throat and only a big’ol gulp of milk makes the movement from mouth to stomach a possibility (please tell me I’m not alone here…). But not these. They were perrrfect and reheated very nicely so I could spoil myself for a few mornings to follow 😀
Whole Wheat Sour Cream Blueberry Pancakes adapted from So Tasty, So Yummy
1 cup whole wheat pastry flour + 1/2 cup all-purpose flour
3 Tbsp sugar
2 tsp baking powder
1/2 tsp salt
1/2 cup reduced-fat sour cream
3/4 cup fat-free milk
2 large eggs
1 tsp pure vanilla extract
2/3 cup blueberries (fresh or frozen)
non-stick cooking spray
Whisk together the flour, sugar, baking powder and salt in a bowl. In another bowl combine sour cream, milk, eggs, vanilla extract.
Add the wet ingredients to the dry ones and mix only until combined. Gently fold in the blueberries.
Pre-heat a skillet over medium heat (don’t get the skillet too hot, but it needs to be hot enough). Pour the pancake batter into the skillet and cook until bubbles appear on top and the bottom is nicely browned. Flip the pancakes over and cook for another minute or so until its browned. Serve warm with toppings of choice (I used fat-free Reddi Whip)! Yield: 16 pancakes (4 servings, 4 pancakes each).
Nutrition Information (per serving): 298 calories; 5.3 g. fat; 119 mg. cholesterol; 607 mg. sodium; 50.3 g. carbohydrate; 3.8 g. fiber; 8.3 g. protein
Result: These were awesome! So thick and fluffy and the berries explode in your mouth as you take bites. The batter came together in 5 minutes and the pancakes cooked quickly in batches of 4. I will definitely be making these again![/print_this]
I was a week ahead of the game – my hockey drills and skills wasn’t until NEXT Tuesday so last night ended up being a run outside. After an effortless 5-miler on Saturday and a great 4-miler on Monday, I was pumped to hit the road with my iPod yesterday. Alas, my running streak ended and the 90 degree heat and blaring sun made for a very difficult endeavor.
I made it 2 miles before pausing to walk. At which point I ran into Mr. Prevention who had gotten home from work and started his run. As I kissed him farewell and continued on my way, I was relying on my music 100% to just get me home. You know a run BLOWS when the slight incline in the sidewalk crossings makes your thighs feel as if they’re climbing Mount Everest. 3 miles…35 minutes. Ugh.

You have a minor in chemistry?! MY goodness. Well, to make you feel better I doubt that knowing the purpose of sour cream would be a chemistry thing, maybe a food chemistry thing though…right?! I know they are similar, but at the same time, very different. I think the sour cream probably took place of the buttermilk and was meant to mimic the flavors of buttermilk, just in a creamier way, perhaps. But of course the Greek yogurt sounds much better to me!
Biathalon on Sunday. Are you going to do it?? It’s the Giant Eagle Multisports festival.
Ah! No! It’s LONG!! I did look it up right after we talked about it and I got scared! I would do the relay and do either the bike or the run, though!
I laughed because I used sour cream in baking this week and am clueless as to what I’ll do with the rest of it- as good as it is, it doesn’t go fast around here…

So fluffy! I love it…and I bet they’d be just as good with Greek yogurt. 🙂 I withdrew from Chemistry in college….I’m a math girl, so I took Physics instead. Chemistry person or not, these look so delicious! 😉
The irony is…I hated chemistry 🙂 I have always much preferred physics! And I will for sure be trying them with Greek yogurt…the gorgeous blueberries are still popping up everywhere!

I believe the sour cream reacts with the baking powder and that is what makes the pancakes so fluffy. I think yogurt would work too. I might give this a try over the weekend with some strawberries (if they last that long!).
I’m impressed you run outside in this weather! Your pancakes look delicious, by the way. As you said, it would be interesting to see if Greek yogurt would make them as tasty.

I dont know why, but sour cream just makes things better. Sour cream donuts from Tim Hortons are my all time favorite. Sour cream pancakes would be incredible.

Mmm these pancakes look great! I almost always substitute greek yogurt in for sour cream since I always have yogurt and never have sour cream…and everything always turns out well!
Whole wheat pancakes rock. We ditched the pancake mixes a few years ago, and started making them from scratch (really, it’s not as freakin’ difficult as I had thought). Blueberries just make them even better. 🙂
I like the idea of adding in the Greek yogurt in the mix to help make them fluffy, and less dense.
