Alright, so I don’t know how I got wrapped into writing a 2nd blog post. At least the 1st one was about 5 hour energy.
So this blog post resulted from our weekly routine which revolves around Prevention RD asking me what I want to eat for the week right before she goes to the grocery store every weekend.
The conversation follows the same general pattern and goes as follows:
Me: What about Biggest Loser Fried Chicken or Fried (really baked) pickles? How about fajitas or homemade pizza? Pretty much anything with buffalo sauce or pizza involved and I am good.
Prevention RD: Ummm…how about Koos Koos salad, or wheat germ berry muffins, or cold green avocado soup?
Me: How about something good? Why do you always ask me what I want if we always end up having to have something new that I have never heard of?
Prevention RD: It’s good for the blog. Nobody wants to read about something we have had before.
Me: Well I am looking at the Meijer website right now and it has a recipe for Well Pict Blackened Shrimp with Raspberry Sauce…
Prevention RD: No, I don’t want that.
Me: Why not? It has shrimp, rice, and raspberry sauce. It looks healthy and it’s not something we have had before?
Prevention RD: Why don’t you make it?
Me: If you buy the ingredients I will make it.
Ok so that’s how this who deal got started. Prevention RD ends up buying me rice that requires an hour to freaking cook! There is like half an aisle in Meijer that has 84 different kinds of instant rice to choose from!!! Come on really???? You buy me the one packet of rice that has to cook for an hour?
Anyway, I followed the instructions for the recipe but I grilled the shrimp on skewers instead of sauteing them on the stove. Other than that the recipe was easy peasy.
I would rate the overall recipe a 7.5 on taste and a 8.5 on ease of making. The rice was not so great, but I mixed in some of the raspberry sauce with the rice and the combination was more than edible.
I do, however, recommend the blackened shrimp using skewers on the grill. The shrimp alone were easy to make, tasted good, and are low in calories. Just thaw the frozen raw shrimp under warm water in the bag in the sink, remove the shells, and stick them in a zip lock bag with the blackened powder, toss, skewer, and grill. As a side, I would substitute out the wild rice with fried (baked) pickles or something with a little more pizzazz.
Well Pict Blackened Shrimp with Raspberry Sauce adapted from Meijer
1 lb. peeled & deveined raw shrimp
1 cup raspberries
1/2 cup sugar-free raspberry jam
1/4 cup orange juice
1 oz. blackened seasoning
1 oz. olive oil
1/2 box long grain wild rice
Mix fresh berries, jam and orange juice in blender, mix until smooth.
Rice: Follow direction on box and set aside.
Put shrimp and blackened seasoning in a 1-gallon plastic bag and toss until shrimp are coated evenly. Heat grill to medium heat. Grill shrimp on skewers until lightly brown (5-7 minutes).
Spoon rice on plate and arrange shrimp on top of the rice. Drizzle sauce over the shrimp and serve. Yield: 3 servings.[/print_this]

Way to go Mark!!!! This actually look, really good! It’s funny because just last week Nick made the third meal he’s ever made for us, and that was shrimp tacos. So men LOVE their shrimp! I will post that soon, Nick would never in a million years write a blog post, so good for Mark, Oh, and Nick would definitely spell “koos koos” just like that! HA!

Best post ever! I read this aloud to my husband and we were both laughing so hard. It does look great. I also ask my husband what he wants for dinner and have this same problem. As least my blog is baked things and not dinner items!
