Chili Contest: Entry #4 – Three Bean and Beef Chili (Crock Pot)

I’m really excited for this weekend. This weekend will include chili, football, and most importantly, no work (and no work DURING the Illini game).

I have my priorities very, very straight. College football season is my very favorite time of year and between travel and working weekends, this weekend can’t come soon enough. College football and I have not bonded in far too long.

The entries into this year’s chili contest have been thoroughly enjoyed…on football Saturdays 😉 This particular recipe was hearty with lots and lots of beans. Black beans, kidney beans, and pinto beans, creating a fiber-packed chili offering 9.8 grams of fiber per cup! I also loved that this chili was lower in sodium (Remember, draining and rinsing the beans reduces the sodium in the beans by 40%!) and low in fat — only 3.2 grams per cup!

With the cayenne in this recipe, there is a kick. However, the heat hits you right away and diminishes very quickly. I love the addition of celery for a special crunch that makes this chili very unique.

Three Bean and Beef Chili (Crock Pot) adapted from A Foodie Stays Fit

1 lb ground beef, 96% lean
1 can black beans, drained & rinsed
2 cans kidney beans, drained & rinsed
1 can pinto beans, drained & rinsed
1 (28 oz) can no salt added diced tomatoes with juice
1 (6 oz) can tomato paste
1 (8 oz) can tomato sauce
1 large yellow onion, chopped
3 stalks celery, chopped
1/4 cup chili powder
1 Tbsp Worcestershire sauce
4 garlic cloves, minced
1 Tbsp dried oregano
1 tsp cayenne pepper

Directions:

Brown ground beef in a frying pan until nearly cooked through.

Add all ingredients to the crock pot, mix well and cook on low for 8 hours. Yield: 12 cups.

Nutrition Information (per serving): 226 calories; 3.2 g. fat; 20 mg. cholesterol; 535 mg. sodium; 29.7 g. carbohydrate; 9.8 g. fiber; 18.6 g. protein

Result: Healthy, spicy, and simple to make! If you love beans and heat, this is the chili for you! Between the lean protein and loads of fiber, this chili provides lots of staying power! Enjoy!

For this weekend’s Illini game, I am making a vegetarian chili entry! Our weekend guests are vegetarians (well, one is and the other by default most of the time 😉 ) and I’ve been saving that chili entry for their visit. 😀

But…it’s only Thursday. Off to teach, workout, and make a delicious dinner!

    OH I should submit my pumpkin chili recipe to your contest!! Is it too late???
    I’ll admit, I do not like vegetarian chili. I need some meat in my chili, always. Although, tempeh in a chili doesn’t sound so bad. I bet I could eat it with that. Anyway, enjoy the game this weekend. Ours is late (8pm) and Nick and I are getting lobster from MD ($10 each!!!!). I can’t wait.

      I read that about your lobster and I am so jealous! And I do think you should serve it with potatoes of some kind ๐Ÿ˜‰ As for the contest, entries were due in mid-August, pre-season…but I’d love to try your chili anyways! ๐Ÿ™‚

    I’m a big fan of using the variety of beans in chili. And I usually use more black beans than any other- they’re my favorite. ๐Ÿ™‚

    I’m doing a chili variety myself this weekend. Because I’m craving it and because I assume I’ll feel lazy for most of Sunday. ๐Ÿ™‚

    I am posting vegetarian chili tonight…I hope you check it out! I love the hearty meaty chili too but the vegetarian is just a great alternative to the traditional! Chili….the best thing about this time of year!! Have a super fball weekend!

    Oooh, chili is one of my favorite foods and while I have my go to recipe, I love trying new varieties for when I feel like shaking it up!
