Celebrating 1,000,000 views!

I can’t believe I’m even typing “1,000,000”! Yesterday, Prevention RD hit one MILLION views (since transitioning to WordPress.org in January 2011)! I will try not to use too many exclamation points, but it may be a difficult task. I started writing this blog back in June of 2009 as a creative outlet for my newly acquired credential as a Registered Dietitian while searching for my first job as a nutrition professional in a very poor economy. Who was this girl from Chicago looking for a job in Tulsa, Oklahoma?!

I started blogging about my thoughts and opinions on nutrition and health trends, but I quickly learned that you can only talk about fiber or heart disease for so long. But food…who doesn’t love food? And conveniently, we all have to cook or feed ourselves in some capacity several times a day…so why not evolve my cooking skills? Plus, being a newlywed…it seemed to be good timing.

Quickly, a desire to learn more about nutrition in cooking turned into a passion…and maybe even a slight obsession. I now meal plan like it’s my job, search out fresh and local ingredients, and prepare meals I would’ve never thought possible to cross the lips of the ones I love. Namely, Mr. Prevention…among others (ahem…dad!).

While I have slowly developed the roots and foundation of this blog, it remains so appropriately named — Prevention RD. I am a dietitian with a passion for food that can be consumed in a way that strikes that perfect balance between absolutely delicious and perfectly balanced.

My beliefs about food have evolved along with the very young science of nutrition. I know way more now than I did then — about nutrition, health care, disease management and prevention, food, and cooking, too. It’s exciting to think what lies ahead in the future of this blog. Time will tell!

What I know is that celebrating 1,000,000 views is 100% in thanks to you!

Thank you for drinking your morning coffee with me, or sharing my site with a friend or family member seeking weight loss or lower-carb recipes. Thank you for pinnning my content on Pinterest, or Tweeting a link. I appreciate the time it takes to write me a note letting me know about a recipe you loved or a question you have about nutrition or wellness. I love to hear that the food I share appeals to you and your kids. Your significant other, too!

I can’t believe that each day I can wake up and know that no matter what my day brings, my corner of the web may bring inspiration or hope or ideas…or at the very least, a healthy, delicious meal to someone unbeknown to me. I can’t believe that for nearly 3 years, I’ve been writing, almost daily, and haven’t ever been at a loss for words. I could never have imagined that my thoughts, opinions, and goofy stories could be read by millions. Well, I can’t say millions yet…but *a* million people 😉

How cool.

    Congrats on a million views! I guess one of the most inspiring people I’ve met in my teaching career is the teacher next door to me who has been teaching 43 years and still loves it. She’s amazing with the students. She never raises her voice, she never gets angry, and yet she has probably the best class in the school.

    I’d love to win the Bob’s Red Mill White Whole Wheat Flour. I use Bob’s Red Mill flours in my baking often but I’ve never tried the white whole wheat flour but I think it would be perfect for baking bread!

    I am inspired by my friend and neighbor, Cindy. She is a 34 year old mother to 3 young children who has recently been diagnosed with Stage IV Breast Cancer. Cindy is so strong in her faith and fighting her battle with such grace. She’s an inspiration to many!

    Congratulations on reaching a huge milestone! My grandma was one of the most inspiring people I ever knew. She overcame SO much…I really never even fully understood how much until recent years. And as for the flour, well, the whole wheat flour would come in handy around here for some healthy pancakes!

    Wow — 1,000,00 views!!! Congratulations — what an achievement!! My parents have been my inspiration! They instilled strong morals in me and my sister teaching usto do things right, not take the “easy” way out. They walk the “talk” and this advice has proved invaluable through my life.

    One of the people that consistently inspires me is my friend Mariam. Mariam was a gymnast and went to college on gymnastics scholarship. Her sophomore or junior year, she got meningitis. She was in a coma for a month and had to have her feet and several fingers amputated. She also has burns over a lot of her body because the blood did not get to her extremities when she was in the coma.

    That said, she travelled to London maybe a year or after she got sick, met a British guy, married him and has been living there ever since and just got into the LSE for her masters. She walks around as much as any other Londoner (on her prosthetics) and just has a great attitude despite the fact that her life got flipped upside-down and she’s constantly still having health issues because of it.

    One of the most inspiring people I’ve met is a toss-up between my best friend who unselfishly gave a kidney to my mom last year, or some of the children I was able to meet when volunteering at a day camp for kids who are battling kidney disease.

    I’m so glad I stumbled upon your blog a couple weeks ago. I’ve already bookmarked a ton of your recipes and look forward to many more (: Congrats on reaching 1 million hits! I can see why you’ve been so successful.

    All of your prize packages sound incredible and I’d gladly take any of them but I’m a big fan of all Bob’s products and have always wanted to try a recipe using Xanthan Gum. A lot of cookie and sweet recipes use that as part of the egg/sugar replacement and so that’s what I’d like to make. Thanks!

    One of the people that has truly inspired me is a former general I worked for. He *always* *always* treated every person he dealt with or saw with dignity and respect–from the most senior, down to the lowliest individual. Even when he was stressed or dealt with individuals that were trying to destroy him (true!), he gave them the same respect as every other person. He has been inspirational to me both in my professional career and my personal life.

    Congrats on your 1,000,000 views! I’ve met many inspiring people in my life. One that continues to inspire me is my mom. She had a bad experience as tween that lead to a downward spiral. Inspite of everything, she raised 4 kids as a single parent…all who completed college and a few with Masters degrees and one with a doctorate. She even went back to school and completed her bachelor’s degree in education. She completely turned her life around and I think she’s awesome!

    I worked at a Young Life camp in Canada 2 summers ago and met a man named Bob Goff who lived up there. He was the most giving ang loving man I’ve ever met who was willing to do almost anything for a stranger. Hearing his story and what he has done in his life is truly inspiring.

She passed away in June of 2011 and I realize what an amazing amount of knowledge she taught me over the years. What an outstanding woman she was.

    Congratulations Nicole! My mom has always been my inspiration. My dad is a military man, and she was always so composed and handled everything so well. Now that I’m a military wife, I realize how truly amazing she was and how hard it must have been to stay that calm while the military created a whirlwind of mess and uncertainty in her life.

    This probably sounds cheesy but my mom is really amazing. I didn’t appreciate her like I should until I had my own children. She raised me, worked full-time and got her Master’s degree all while taking care of me. She is amazing

    Wow, one million is HUGE! But you consistently come up with fantastic tasting recipes, lend great nutrition tidbits and advice, and have a fabulous writing voice. So really… one million was only a matter of time. 🙂 Congrats!

    One of the most inspiring ladies I’ve met lately is a co-worker named Mieke. She is always positive and encouraging, even when things get stressful. She has chosen to live her life very healthfully and “whole foods centered,” and loves to share, support, and encourage everyone around her to do the same. She got into a bad car crash a few months ago and has had to be home recovering instead of at work, but has continued to show the same positivity and has continued to live her life in a healthy way to help herself heal better… including a two-week juice/smoothie cleanse. Truly an inspiration.

    I have two inspiring people, my grandparents. Because of them I don’t believe in excuses. My grandma had a childhood that I couldn’t even fathom. She went through some pretty horrible stuff, and somehow still became one of most genuinely kind people I’ve ever known. And my grandpa, he was just amazing. He worked so hard, started with less than nothing, and created a fantastic life for his family. He died successful, and highly respected. Even one of his direct competitors spoke at his funeral about what a great man he was. Clearly its still too early in the morning for me, because just thinking about it is getting me teary, but he loved my grandma so much, and I feel really lucky that I got to see that. It’s because of him that I let go of a really bad relationship – I saw what they had and decided I deserved that too. I am SO lucky to have had him in my life, and to still have my grandma. They inspire me every day.

    I need whole wheat pastry flour! I am a big time baker, and I started Weight Watchers recently. So I’m trying to learn new, healthier recipes to bake. It seems like I’ve seen a ton of recipes just in the past few days that call for Bob’s Red Mill whole wheat pastry flour. Hook me up 🙂

    So, I’ve heard from a couple people that they’ve liked the quality and fluffiness of bread when they use hard white whole wheat instead of “regular” whole wheat flour. So I would definitely give that a go!

    I would love to try the Bob’s Red Mill Whole Wheat Pastry flour!! I recently found a recipe for delicous healthier chocolate chip cookies, but it called for whole wheat pastry flour. To my dismay, I couldn’t find it anywhere, so I tried to substitute whole wheat flour instead. The cookies were pretty good, but flat as pancakes since I didn’t use the right kind of flour. I would really like to try making them again with the real thing!

    Congrats, Nicole! The most inspiring person I’ve met is Ekatarina Gordeeva. She was part of the Olympic gold medalist pairs (figure skating) team of Gordeeva & Grinkov. Her husband and partner, Sergei Grinkov, suddenly collapsed on the ice one day during practice and passed away. I got to meet her many years later, and she has been so strong to keep moving on and skating.

    Is it weird that I got a little emotional reading this post?! I am so excited for you and way proud of you. Your dedication to this blog and your passion for your career (and nutrition in general) are inspirational. I want to ask you how you have the motivation and time to manage it all, but I know that’s a silly question. When you love something, when you have a passion for it, *when you’re good at it* – you find the time.

    First of all, congratulations – what a wonderful milestone and accomplishment!! I am constantly inspired by my mother who is an elementary school teacher and was able to raise 3 kids while getting her Master’s degree and smile all along the way and always putting others first. Her positive attitude and never ending faith is truly an inspiration.

    I am lucky enough to have several very inspiring people in my life but the one I am choosing to write about now is my friend Janie. We have been friends since high school (which without giving out my age was a good bit ago!) She seems to have always had a very balanced life when it comes to diet and exercise – something I struggle with greatly. She inspires me to eat better while still having the occasional sweet treat and to exercise whenever I can, however I can.

    The Red Mill flours are most appealing to me. With two young kids and a husband with a major sweet tooth, I do a lot of baking and would love to try making all the baked deliciousness at least a little healthier for us!

    The most inspiring person I’ve met is a co-worker of mine, Greg. He’s recognized his flaws (most seriously with alcohol) and has come through them tremendously. He has gotten me to start working out with him at a local gym (I’m down six inches thanks to him). He looks great too and is now coaching classes in addition to the two other jobs he has to help support his wife and daughter. He’s is such a hard worker and I love seeing all that energy pan out for him in such positive ways.

    I just recently made (and finished 🙂 ) your Carrot Cake. I don’t bake and that came out wonderfully! I would like to make it again and healthy it up in addition to the carrots with the whole wheat flour and flax seed. Plus, I never really get the chance to eat organic (due to availability and price) so I would love to try those “Pa” Newman snacks.

    Super Cool! AND very inspiring

    I really don’t have many friends or family that share my excitement for the healthy eating and fitness habits that I have learned to love over the last year and a half. I’ve lost 30 pounds of unhappiness… While gaining a ton of confidence!

    Hence, most of the inspiration I have received has been thru several food and fitness blogs like this one. I have gained so much knowledge on what is healthy and what is not. I haven’t repeated a recipe in months thanks to blogs like this.

    So thanks and keep up the good work.

    I would love to have any of the Bob’s Red Mill flours including the gluten free. I would love to whip up some Banana Chocolate-Walnut bread. The recipe from your blog is my husband’s favorite out of any recipe I’ve ever tried. I didn’t have any flax seeds the first time so I subbed chia seeds and have been making it that way ever since.

    I could really use a restock of olive oil and balsamic vinegar, so the Newman’s Own products would be wonderful (plus, I love their products). I would whip up a Mediterranean quinoa dish with feta, kalamata olives, basil, grape tomatoes and add olive oil and bv on top.

    This sounds cliche but my mom was the most inspiring person I’ve ever met. She was born with cp and my grandparents were told she would never walk or talk – well she did! She became a.
    Special Ed teacher (whose specialty was behavioral issues) she had a 70% main stream rate! When she was diagnosed with cancer she NEVER had a pity party her first comment when it was confirmed was “well it’s a lot scarier to THINK about having cancer than it is to actually have cancer” her other comment was to me she said “joy, I’ll fight as long and hard as you want me to – because in the end you’re the one who will be devastated”

    She will forever be my hero

    I would say for inspiring people….its my grandparents- all 4 of them. They’re so unique and amazing in their own way!! I owe so much of who I am today because of them!!!

    As for the baked goodies…I’ve always wanted to try gluten free flower!!! I use whole wheat flour for all my baked goods, so it would be neat to see the difference. My fave thing about trying a new recipe is getting to share it with my (usually) lucky friends if it turns out alright!

    My inspiring person is my fantastic lactation consultant, Judy – she has been practicing for 35+ years and is an angel! She has helped our girls get off to a great start, nutrition-wise!
