Did everyone survive Friday the 13th unscathed? Hoping so!

We are in Vegas this weekend…having a blast! This old woman (at heart) stayed up til 4am EST (that’s 1am in Vegas) on Thursday night! I was up for nearly 24 hours straight after a work day and long flight…I was rather impressed with myself! I think my body may need a solid 3 weeks to recover.

We ate at the always amazing Hash House A Go Go and went to see Jabbawockeez last night. For any America’s Best Dance Crew fans…you can understand my excitement. I was only able to convince Mr. Prevention to go to *my* show because Carrot Top was sold out, but…I’ll take it 😀

I think we’ve walked every square inch of the strip and my pups are barking. Vegas and plantar faciitis are not compatible – it was actually last year after being in Vegas I found out I had PF. No idea what’s on the agenda for today!

    You’re in Vegas?!?! I’m jealous!! Nick goes there in May. Ugh. Trying not to think about that…..
    I can’t wait for our dinner date! I’m feeling deprived of Mark and Nicole.
    I’m not entering your giveaway because NuNAturals is sending me samples already (and of course I’m NOT allowed to do a giveaway because we don’t sell the product. SO LAME). BUT, I do want to try the coconut oil! I used it for the first time to make my carrot cake bites. They were AWESOME.

    My Friday the 13th was very hectic at school-I think it really messes with the kids. My favorite citrus flavor is lemon-I can’t get enough of baking with it-it’s just so fresh and delicious!

    Have fun in Vegas!! I think I’d use the coconut oil to substitute for desserts with oil and see if the sweetness is any different

    I just subscribed to the newsletter. To be honest, I’ve never used Coconut oil but after finding so many recipes lately I definitely want to give it a try.

    I actually love coconut oil the most on my popcorn. I use it for a lot of things but on popcorn is my favorite(even my hubby says he likes it more than butter, which is really amazing, lol!)

    I love the idea of the citrus stevia. I love the vanilla liquid stevia – so good! I think lime has to be my favorite citrus flavor – although I do a lot more with lemons!

    I have to agree with the other lisa….I would use the coconut oil to make peanut butter cups. I was at the store yesterday and saw some coconut oil….wow it’s pricey!

    I would prefer the lemon flavour…not a big fan of orange. I like eating them but I don’t like them in sauces or mixed with chocolate…ewww. BTW Vegas sounded like fun! My husband and I are going in a week and I have a feeling I’ll be like you and need a long recovery afterwards!

    My favorite citrus flavor is definitely grapefruit – freshly squeezed grapefruit with some club soda is the most refreshing summer drink! Lime is a close second.

    Creamy pumpkin coconut oats (with apple, or pear) for two

    1/3 cup rolled oats
    1 2/3 cups water
    1/4 cup pumpkin puree
    1 tablespoon coconut oil
    1 tablespoon honey
    1 apple or pear, diced
    Dash of cinnamon

    Mix the oats and water in a medium saucepan over high heat. Cover. Bring to a boil, and then reduce heat to simmer and cook oats for 5 or 6 minutes, or until desired consistency. Remove from heat and let sit for another 3 or 4 minutes so they thicken up some more

    Remove lid and stir in pumpkin, coconut oil, and honey. Spoon oats into serving bowls.

    Cut apple or pear into small chunks and divide between 2 bowls of oats and then sprinkle each with cinnamon.

    This is not exactly a recipe but we use coconut oil in our whirly popper to make popcorn. It’s great!
