Blueberry Coconut Bread & Cookbook is OUT!

 Hi friends!

I’ve been absolutely giddy with joy over your sweet Facebook comments, emails, and blog comments. Prevention RD’s Everyday Healthy Cooking is arriving on people’s doorsteps and it is such a surreal and exciting experience. I couldn’t be happier. I hope you all enjoy the cookbook as much as I enjoyed putting it together.

In creating recipes for my next cookbook, a gluten-free cookbook, I’ve been experimenting with a lot of gluten-free flours. One of the flours I love most, almond flour, is actually the star of the cookbook. I’ve had the opportunity to use some great almond flour products…and some not so great almond flour products. Quality really does make a huge difference when it comes to gluten-free goods. The kind people of Honeyville create a stellar product and I am excited to have this delicious Blueberry Coconut Bread featured on their blog today. Please head on over for the recipe! 🙂
