Prevention RD Cookbook Giveaway!

It’s Saturday…the start of a long, holiday weekend and the start of college football. (Illini win today – woo!).

As I experiment today with recipes for my second cookbook, a gluten-free cookbook, it seems overdue and only appropriate that I host a giveaway of my first cookbook, Prevention RD’s Everyday Healthy Cooking, which came out less than 4 weeks ago. Eeeeep! It still doesn’t feel real…what the heck!

For those of you who ordered the book already, or who take the time to come to this little corner of the web sometimes – my sincere thanks. The cookbook would’ve never come to be without you. If you have the cookbook, I hope you love it. If you don’t have the cookbook, I hope you enter this giveaway and win one…I’ll be giving away 3 cookbooks! I’ll even sign them before I send! 😉

    I had a wonderful meal at Blue Coast in Bethany Beach, DE the other night. It was jumbo roasted shrimp over grits. It was just delicious.

    I already have this but am hoping to win this for my MIL so she will see that delicious food can be healthy too.

    Your chicken Gyros with Taziki Sauce is one of our favorites! Ir is on our rotation about every other week. And sometimes we eat the sauce on pita chips without the chicken! Your book is on my wish list but what a great back to school item it would be to win it! I both teach and am going back to school myself so quick and healthy meals are a challenge!

    WOOHOO Cookbook giveaway! Facebook liked: CHECK!
    The last meal that wowed me was my own version of New Mexico Green Chili Stew made with fresh green chilies straight from Hatch, New Mexico and roasted in my backyard! Because I loved it so much, I have to give you the recipe..which you are free to use, anytime!

    GREEN CHILE STEW

    2 tablespoons olive oil
    2 pounds boneless pork loin, cut into 1-inch cubes—brown in Dutch oven first with some flour
    1/2 large chopped onion
    2 clove garlic, minced
    1-2 fresh jalapeno chopped
    2 cups roasted, peeled and chopped fresh green chilies, mild or hot
    2-3 red skin potatoes , cut into 1 inch squares โ€“ I prefer to leave the skin on
    1 can spicy ( or not) chopped tomatoes- drained and rinsed so itโ€™s not too tomat-ey tasting
    1 teaspoon salt
    1/2 teaspoon freshly ground black pepper
    2 cups beef broth

    If not spicy enoughโ€ฆadd 1/2 tsp cumin, 1/2 tsp coriander, and a dash of chipotle chile pepper

    Let simmer in Dutch oven for about 3 hrs ( I put it in the oven at 325)

    I serve this with my husbandโ€™s home-made steamed tortillas

    I have made the Black Bean &Quinoa Burgers several times. As well as the grilled Beet salad with feta cheese. Yummm! Being that I am embracing a healtheir life style. And I am on a strict budget. I like that your meals are budget friendly and easy to make. Thank you for that

    Thanks for having this giveaway! I feel like I’m wowed by food all the time (I love food!). The last meal that wowed me was out a a local restaurant. I had barbecue tempeh with steamed kale, polenta and cashew cheese. It was the best tempeh I’ve ever eaten!!

    How exciting….a Prevention RD Cookbook giveaway! Count me in, I would love to be one of the winners!! A recipe that last wow-ed me was your Tomato-Serrano Salsa (with some garlic added). So delicious and refreshing and being diabetic, I love that it is low carb, low calorie and low fat. Pair it with some multigrain chips and it’s the perfect snack!

    I love your recipes I try a new one at least every week. The last one of yours I tried and Loved was Athenian Orzo. My husband loves it too.

    Tonight I made a wonderful seafood Cobb salad with a lemon citronette and spicy r’emoulade for dipping the shrimp and crab in. Yumm.

    The last food that wowed me was homemade Pico de Gallo. I have a hard time making things without a recipe, but one day decided to try to make it. It was so successful and my friends and family loved it! It’s now one of my favorite things to make! I also liked your page on Facebook!!!!

    A baked fish recipe. It mayonnaise mixed with a little lime juice, onion powder and black pepper. Spread that over the fish such as cod or tilapia, Sprinkle panko bread crumbs and parmesan cheese, Melted butter and dried parsley, oregano and paprika. Baked for 20 to 25 minutes in a 425 degree oven. Yum! We tried catfish this way but not quite as good as the above fish.

    Last recipe that “wowed” me… My fiance made fresh pasta and then made his famous peppered shrimp alfredo sauce to go with it. Definitely not healthy, but totally worth the calories ๐Ÿ˜‰

    Hmm last meal that wow’ed me…a burger place in downtown Louisville called Sidebar. It was an angus cheeseburger with guacamole, bacon, and special aioli sauce, along with fabulous zucchini and sweet potato fries!! I left feeling stuffed ๐Ÿ™‚

    I made your Korean-style beef tacos this week for my husband- big hit! I will admit I made a small change because he is trying to cut down his carbs, so instead of the tortilla I wrapped the beef in some lettuce- we both loved it. And I was grateful because the beef was so easy to prepare (I love finding new and easy dinners for work week nights!) and the flavor was great as well as fun since it is unlike anything else I cook.

    I’ve been wanting to get my hands on a copy of your cookbook, so thanks for this opportunity. Last night, I threw together a quick salad of tomatoes, peppers, cucumbers, and a few chopped herbs from the garden tossed with olive oil, balsamic vinegar, salt, and pepper.     The meal that last (and pretty much always wows me) is from a local healthy fast food joint. They always use organic, local, and low calorie ingredients. I am in love with their sweet potato fries, but since it’s not necessarily well balanced to order multiple orders of those fries, I get teriyaki chicken strip. DELICIOUS.

    BUT…there is a recipe from PreventionRD that really means a lot to me. During the week of the Boston Marathon, I was living in Boston. The only way I got through the lockdown was by cooking your Athenian orzo. Though, I only had quinoa and couldn’t really go out to the store and get orzo. The quinoa really worked well, and I’ve remembered the meal since. It’s going to be the meal I eat every April 15th as a sort of memorial.

    My lunch today more than wowed me. I enjoyed various kinds of tofu, sushi and then ended my meal with tofu ice cream in Kyoto…followed by an equally wow dinner in Osaka with takoyaki and crab from the world famous Kani Doraku. Needless to say I am stuffed and off to bed! Congrats again on your cookbook. I know the feeling…it is amazing…enjoy it! You deserve it!

    Hi there,
    I like you on Facebook.. and, my favorite recipe as of late is a simple fish taco thing with a creamy siracha/mayo/sesame oil/agave sauce (it is fish, slaw mix, feta, mango salsa and this amazing concoction of sauce in corn tacos… or, if I’m feeling lazy simply as a salad).

    I have to say my favorite recipe of yours was the Parmesan Gremolata Smashed Potatoes! Not only did they sound delicious but they tasted even better. When I made these for some guests they really enjoyed them, as did I!

    Hi Nicole! Oh, my! Where to start! As I have mentioned before, I fell into your blog by a friend who picked one of your recipes for our supper club (drunken pasta recipe). Since then, which was about 6 weeks ago, I have made and LOVED the Chicken Soulvaki (twice), the Homemade Hamburger Helper, Creamy Onion Dip, Best Beef and Brocolli, and the Peaches and Cream Popcicles.     I already like you on Facebook. Last meal that wowed – some little ham and swiss sandwiches that have a butter/mustard/Worchestire and something else stuff poured over the top and baked. Simple, but it was really good. That and I found a to die for peanut butter frosting recipe.

    I would love to win your cookbook. I am gluten free and soy free but have been cooking gluten free for over 25 years for my Celiac children. I never sat for my RD exam, but have the Foods and Nutrition degree. I appreciate your outlook, your common sense, and your good advice about how to cook foods. I respect the fact that you are an RD.
