Christmas is 5 days away – whoa. I’m forever grateful for the beauty of Amazon and how (almost) painless shopping has become. I know I’m not alone in my passionate adoration of Amazon.com. I haven’t been to a mall in a year and I am absolutely, positively okay with that. Though, that doesn’t keep me from shopping. Along with Amazon.com love, I know I’m not the only one who enjoys spoiling themselves during the holidays…along with their friends and family.

I definitely have a thing for purses and shoes which makes my online shopping habits all the more dangerous. (Second to Amazon.com is Zappos.com, right? Totally.) I know I didn’t get the shopping bug from my mom, so it had to have come from my Grannie. She was a shop-til-you-drop, avid shopper. Of course, she didn’t bat an eye at dropping 4 digits on a designer piece of clothing “because it was classic and could go with so many different tops/bottoms.” Plus, she maintained her petite 101 pound figure for her entire adulthood.
My Grannie defines classy. Her outfit to my wedding cost 8x what my WEDDING dress cost. Now, my wedding dress was very reasonably priced, but that’s besides the point. More memorable were the magenta 3-inch heels she donned with her walker on the dance floor. I dare say she almost stole the show from the bride! 😉
While most Grannies spent time perfecting their culinary delights, mine was out perusing Nordstrom for her next big purchase. However, there were a few things she made that were her “specialties”. According to my mom, Grannie made the best strawberry margaritas. That I believe. My dad loved her Chop Suey and requested it for his birthday every year. Me? These Potato Chip Cookies. Every Christmas, I had to have them.
I remember thinking, “potato chips…in cookies?” But it just works…dangerously well. In fact, thanks to the deliciousness of the potato chips, this cookie recipe uses less sugar than most other cookie recipes. As for the butter…well, it’s still got plenty of that. These cookies remind me through and through of Christmas growing up and all the fond memories I have of my Grannie.
- 1 cup unsalted butter, softened
- ½ cup sugar
- 1½ cups all-purpose flour
- ½ cup crushed potato chips
- ½ cup walnuts, finely chopped
- ⅓ cup powdered sugar
- Preheat oven to 350 F. Line 2 baking sheets with parchment paper and set aside.
- Cream butter and sugar in the bowl of a stand mixer fitted with the paddle attachment or in a large bowl with an electric hand mixer; beat until whipped and light in color.
- Add flour and mix until absorbed into butter. Add potato chips and nuts and mix well.
- Roll dough into 1-inch balls, arrange 2 inches apart on the baking sheets, and flatten slightly. Bake for 14-15 minutes or until slightly browned. Sprinkle with powdered sugar

Curious…are these make the same day kind of cookies or can the dough be frozen, then thawed and baked if you’re trying to save time? I’m thinking it probably couldn’t be frozen due to texture of the chips but if you’d done it before with success, then I would add it to my “pre-make” list. ๐
